For this weeks meal plan we’re celebrating the Easter Long Weekend with an amazing spread of delicious dishes. Easter is a unique holiday experience when it comes to food. Depending on your upbringing and traditions, many households don’t typically eat any meat over this holiday. On the flip side, Easter is also a holiday weekend where Roast Lamb is consumed heavily!
For our Easter Meal Plan we will be sharing some of our favorite holiday dishes that are Seafood and Vegetable heavy. From easy to prepare dishes best suited for a lazy breakfast or lunch, to an Epic Cook Up Holiday Spread that is a true centerpiece at any dinner table. We’ve got it all here in our Easter Meal Plan

We’ve got a beautiful Risotto recipe lined up this week which is vegetarian, with the primary flavors coming from Lemon and Dill. This classic combination of flavors packs a mighty punch and tastes great
It’s quite a cost-efficient meal to make too, especially if you are using your own Homemade Stock. Which, by now, you should know we are huge fans of. All good home cooks should always have some Stock in the freezer ready to go. It gives this Risotto dish so much body and flavor

Save some of that Risotto for a fun Lunching on Leftovers Dish
We guarantee you’ll have leftover Risotto the next day if you’re making this dish. It produces an abundance of this wonderful meal! No need to simply throw the leftovers in the microwave the next day when you can create one of my favorite dishes – Rice Balls!
We experimented a bit with this dish and found that adding some Canned Salmon to the Risotto creates the most wonderful flavor. We then add some Breadcrumbs for texture and then the Risotto is shaped into balls, breaded, and fried. What you’re left with are the most amazing Salmon and Dill Rice Balls. Great for lunch the next day
Lunching on Leftovers – Salmon and Dill Rice Balls
Save some of that Risotto for the next day to make these amazing Salmon and Dill Rice Balls. This recipe uses canned Salmon, and it tastes phenomenal. They’re fun, easy, and delicious!

Full List of Ingredients
- ½ lb. Raw Shrimp
- 8 Scallops, preferably with Shell
- 12 Fresh Oysters
- 1 lb. Sashimi Grade Tuna / Ahi Tuna
- 2 lbs. Salmon
- 1 ¾ cups All Purpose Flour
- 3 cups of Chicken Stock (recipe here) or Vegetable Broth (recipe here)
- 1 cup of Arborio Rice
- 2 cups Fine Breadcrumbs
- 1 cup Cherry Tomatoes
- ½ Jalapeno
- ½ cup Scallions
- 2 Red Onions
- Juice of 11 Lemons
- Zest of 2 Lemons
- ½ cup Cucumber
- ½ cup Fresh Dill
- 4 Garlic Cloves
- 1 tsp. Soy Sauce
- 1 tsp. Ponzu Sauce
- ¼ tsp. Chili Crisp
- ½ cup Ketchup
- 4 tsp. Horseradish
- 1 tsp. Worcestershire Sauce
- 1 tbsp. White Sugar
- 1 tbsp. Olive Oil
- 4 cups frying Oil (eg: Vegetable Oil or Canola Oil)
- 1 cup Parmesan Cheese
- 1 ½ cups White Wine
- 4 Eggs
- 1 ½ cup Whole Milk
- 2 tbsp. Crème Fraiche
- 2 tbsp. Unsalted Butter
- Salt and Pepper
- Optional: ½ tsp. Ground Cinnamon
- Optional: 20g Sturgeon Caviar
