The Weekly Meal Plan for October 29 has a definite European theme to it. With beautiful and simple to create dishes inspired from those classic cuisines from Europe. Yes, even English food is making it into this week, so let’s dive in!
The Epic Cook Up for this week is a classic English pub dish. Smoked Fish Pie! This recipe is actually super simple to create, as we’re not suggesting you smoke the Fish yourself. You totally can, however smoked fish is plentiful and delicious from the supermarket. It also pairs extremely well with Cheddar and Mashed Potatoes which is what this dish is about
Taking those lovely leftovers from the Fish Pie we’ll be making some delicious Croquettes. The combination of the smoked fish, cheese and potatoes is the perfect combination for some golden, crunchy Croquettes. The Meal plan is rounded out with a perfectly seasonal Butternut Squash Risotto with Mushrooms. Finally, a beautiful Caesar salad with a few tasty twists!

Epic Cook Up – Smoked Trout Pie
This is a perfect recipe for a cold night in. A classic English pub style Smoked Fish Pie (using Trout) with some delicious Cheesy Mashed Potatoes and Caramelized Onions. Serve up a big bowl of this in front of the fire or TV and relax

The Smoked Trout pie is definitely on the heavier side so you will very likely have leftovers. If so, these Fish Croquettes are a must try! They’re like fancy, sophisticated Tater Tots and taste delicious! Fun to eat on their own or with some greens for a fun and tasty lunch

- 1 whole smoked Fish (Trout, Cod, Salmon etc.)
- ½ cup All-Purpose Flour
- 1 cup Breadcrumbs
- 2 slices White Bread
- 1.5 cups Arborio Rice
- 2 Eggs, beaten
- ½ bunch of Kale
- ½ cup Cilantro
- 1 ½ cups Parsley
- 5 Red Onions
- 1 Lemon
- 1 Butternut Squash
- 2 cup Cremini Mushrooms
- ½ a Leek
- 3 large Potatoes
- 2 Carrots
- 1 Stick of Celery
- ½ cup Frozen Peas
- 7 Cloves of Garlic
- 1 cup White Wine
- 8 White Anchovies
- 1 cup Heavy Cream
- 6 tbsp. Unsalted Butter
- 2 cups Sharp Cheddar cheese
- 1 tbsp. Red Wine Vinegar
- 2 tbsp. Japanese Kewpie Mayonnaise
- 1 ½ cup of Parmesan Cheese
- 5 tbsp. Olive Oil
- 4-5 cups of Frying Oil (eg: Canola or Vegetable Oil)
- Salt and Pepper
