Thailand produces some legitimately stunning food. We’ve been lucky enough to travel to Thailand several times over our lives and we just absolutely love their cuisine. Their globally famous dishes such as Pad Thai and the Red and Green Curries have put Thai cuisine on the global culinary map. However, perhaps lesser known worldwide but equally as amazing are their brilliantly vibrant and flavorful salads. A favorite of ours being this wonderful Thai Mango Salad with Peanut Dressing

This dish uses one of the all-time best fruits in our opinion, the hearty Mango. Not always the easiest ingredient to get, particularly around the wintertime in the Northeast of the USA but if you can get yourself a ripe, juicy Mango this dish is a perfect way to utilize it. Paired with some other brilliant vegetables such as Red Cabbage and Snap Peas and finished with a beautifully silky Peanut dressing this is a great healthy dish to kick off your week

Create a beautiful sauce for this Thai Mango Salad using Peanut Butter

That’s right! Dust off the Peanut Butter from the pantry because it’s the secret ingredient in this delicious Salad. Adding 2 tbsp. of Smooth Peanut Butter alongside some Lemon Juice, Olive Oil, and Salt creates the most delicious Dressing

What’s best of all, it couldn’t be easier to make. Using household ingredients that everyone has, you can transform a regular old salad into this amazing salad which brings a truly authentic flavor of Southeast Asia

If you want to get even fancier then why not also add some fresh Peanuts to the Salad right before serving. Just grab a handful of Peanuts and give them a rough chop on your chopping board. Sprinkle them over the top of the Salad just before serving and you’ll be rewarded with a lovely crunchy texture and even more delicious peanut flavor in the salad

You don’t have to be super fussy about which vegetables to include in this recipe

This recipe is called a Thai Mango Salad, so we’d suggest that Mango gets used in the dish. Other than that, there’s no need to be fussy about other ingredients to add in there. We like the addition of fresh Carrots, Snap Peas, and Cabbage because they all bring a beautiful texture and flavor to the dish. These ingredients remind us of warm days in tropical environments, so they’re naturally ingredients that fit well with this dish

Some suitable alternatives or additions to the salad would be using Green Papaya. You can shred the Papaya into long strands and add them to the salad. Bean Sprouts are another great addition, as are fresh fruits such as Oranges and Apple. The goal for this salad is light and fresh ingredients. So really, any ingredients that fit that profile work great!

Add a bit of Chili to spice up the dish

While we haven’t included any Chili in the recipe below, if you want to add a bit of heat to the dish we highly recommend adding some fresh Chilis. What Chilis you choose really depends on your heat preference. For a milder spice you can add some Jalapenos with the seeds removed. Of course, keep some of the seeds if you are looking to dial up the heat

To go all out with authentic spices from Thailand – you can use those lethal Thai Red Chilis. They are super-hot however, so we’d only recommend using these if you’ve had them before. Even then, we recommend using the Chili sparingly

It is a subtle Salad, so too much Chili will tend to overpower the dish. However, a little bit of spice does work well to contrast with the sweetness that the Mango and Peanut Butter brings to the dish

Thai Mango Salad with Peanut Dressing

Ingredients

  • ½ Mango, sliced
  • ½ Red Cabbage, sliced
  • 1 cup Snap Peas, sliced
  • 1 Carrot, sliced
  • 1 cup Cilantro, chopped
  • 2 tbsp. Smooth Peanut Butter
  • 3 tbsp. Olive Oil
  • Juice of 1 Lemon
  • ½ cup Peanuts, chopped
  • 2 tsp. Salt

Instructions

  1. Begin by combining the Peanut Butter, Olive Oil, Lemon Juice and Salt into a large salad bowl. Whisk thoroughly until all the ingredients have been fully incorporated and have formed a sauce light in consistency. If too thick, add a little more Oil and Lemon Juice
  2. Now to prepare our salad ingredients. The trick to this lovely salad is we want all the ingredients to be sliced lengthways, so we have some lovely long strands of beautiful Carrots, Mangos, and Snap Peas. You could use a Mandoline, but it may be a bit tricky for the Mango so just use a knife and take your time to create some lovely thin slices
  3. Add the sliced fruit & veg to the salad bowl with the peanut sauce, along with the Red Cabbage and Cilantro. Mix thoroughly together then check the seasoning, adjusting if necessary
  4. Finally, serve either in the salad bowl or on individual plates with a handful of chopped Peanuts sprinkled over the top
