There is somewhat of a decadence to Steak with Eggs for breakfast though isn’t there? It does seem a little bit indulgent. That you only really ‘need’ one protein, but you’re being greedy and want two! Well, in our opinion this dish tastes so good, and the pairing of Steak and Eggs is so great that you’ll never want to eat them separately again!

The key to a great breakfast in our opinion is making the dish simple. It’s breakfast after all! No need to be spending more than 20 minutes in the kitchen preparing a meal is our mantra. You’re hungry, you want food – so a recipe needs to be very straight forward. So, when it comes to Steak, the best cuts are really those that are simple to cook and take little time. This is why we recommend using Skirt Steak with Eggs for this recipe

Skirt Steak is a wonderful cut of meat, packed full of flavor and nutrients. Perfect for a hearty breakfast or brunch. It is one of the most flavorsome cuts of Beef you can find and is relatively inexpensive when compared to some more popular cuts such as Ribeye or Filet. It carries a marinade exceptionally well, so if you’ve made some delicious Skirt Steak the night before for dinner – try keeping a little bit extra in the fridge for the morning

No time to marinade? No problem!

This recipe does require a marinade and ideally one that you prepare the day before. However, we do completely understand that you may just want to whip something up immediately. So, no need to worry! Give the Steak a good 5 minutes in the beautiful marinade and we assure you those flavors will still come through. Of course, the longer the marinade the better so if you do have the time, prepare the night before!

Best way to prepare Eggs for a great Steak and Eggs Breakfast

Deciding what way to prepare your Eggs is really a personal preference. Most folk I know tend to stick to only one way to eat their Eggs, and they’ve been like that forever! Well, we totally understand that so can assure you that whichever way you like your Eggs, they’ll taste amazing with the Skirt Steak in this recipe. For this dish we will be Scrambling Eggs

The main reason I like Scrambled Eggs with Steak for breakfast is you can pack a few more Eggs into the dish without it overwhelming the plate. They cook a lot dense than other types, so you’ll get more Eggs on a plate if you scramble them. Perfect for a hearty breakfast

Skirt Steak with Eggs Recipe

Ingredients

  • 1 lb. Skirt Steak, trimmed of excess fat and silver skin
  • 8 Eggs
  • 2 thick cut pieces of Toast (or your favorite bread for toasting)
  • 1 tsp. Vegetable Oil
  • 2 tbsp. Unsalted Butter
  • Salt

For the Steak Marinade

  • 1 tsp. Cumin
  • 1 tsp. Paprika
  • ½ tsp. Garlic Powder
  • 1 tsp. Olive Oil
  • ½ tbsp. Dijon Mustard
  • 1 tsp. Honey

Optional: Chimichurri Sauce

  • 1 cup Parsley
  • ½ cup Fresh Oregano (alternatively 2 tsp. of Dried Oregano)
  • 1 Shallot, peeled and quartered
  • 1 Jalapeno
  • 4 Garlic Cloves, peeled
  • 2 tbsp. Olive Oil
  • 1 tsp. Red Wine Vinegar
  • 2 tsp. Salt

Instructions

  1. Create a simple marinade by combining the Cumin, Paprika, Garlic Powder, Olive Oil, Dijon Mustard, and Honey in a medium sized bowl. Mix well then add the Skirt Steak. Leave to marinade for 10 minutes, and up to overnight if you have time
  2. Heat a large frying pan or Cast Iron Skillet over high heat on the stovetop with the Vegetable Oil. Once the Oil is smoking hot add the Skirt Steak. Cook for 2 minutes, then flip over and cook for a further 1-2 minutes until the internal temperature reads 110 degrees. Remove from heat and set aside to rest
  3. While the Steak is resting you can prepare your Scrambled Eggs. Whisk the Eggs in a small bowl. Add the Butter to a saucepan over medium / low heat. Once melted, add the whisked Eggs
  4. Stir the Eggs constantly with a wooden spoon until the Eggs are slightly under cooked. The Eggs will be forming the consistency of Scrambled Eggs but will still be slightly runny. Remove from heat, as they will continue to cook in their residual heat. Season with ½ tsp of Salt, mix through then serve immediately
  5. Slice the Skirt Steak on an angle against the grain (so it is easier to eat) and serve alongside the Scrambled Eggs and the buttered Toast

Optional Chimichurri Sauce

  1. Combine the Parsley, Oregano, Jalapeno, Garlic Cloves, Red Wine Vinegar, Shallot, Olive Oil, and Salt in the blender. Blend on high for 1-2 minutes until a smooth texture is formed
  2. Check for seasoning and consistency. If the sauce is too thick, add a little more Olive Oil and mix through until you reach your desired consistency
  3. Serve alongside the Skirt Steak and Eggs and enjoy!
