If you’ve read any of our Stock recipes then forgive me for repeating myself. Here we go anyway: Stock is a critical part of any home kitchen! Any home cooking you are doing will be significantly improved if you make and use your own Stock! This recipe is for a delicious and Simple Mushroom Stock

When you think of Stock the classics of Chicken, Beef and Veal Stock come to mind – of which we have listed on our Stocks page here. With good reason. They are used in so many dishes and cuisines from all over the world. However perhaps an overlooked Stock that is equally as valuable in ramping up a dish is the humble Mushroom Stock

Mushroom Stock can be used in a multitude of ways, any time you’re cooking with Mushrooms really. We love adding Mushroom stock to Sauces and Soups to really highlight the Mushroom as the star ingredient. That’s what a good Mushroom stock does – it brings out the Mushroom flavor in a dish

So, for some beautiful Mushroom dishes such as our delicious Creamy Mushroom Sauce, why not whip up a batch of Simple Mushroom Stock and store it in the freezer?

The simplicity of this Stock is there is no long roasting period, then long boiling periods like other stock recipes. Our Simple Mushroom Stock is made by extracting the beautiful flavor from dried mushrooms

We recommend using Forest Mushroom Mixes of dried Mushrooms. A combination of beautiful dried Porcini, Morell, and Chanterelle Mushrooms are great to use. If you cannot get your hands on these Mushroom types, that’s ok. Any dried Mushrooms will work so whatever you have available is totally fine

How to make this Simple Mushroom Stock

This recipe is great for anyone who is short on time, but big on flavors! You can prepare this delicious Mushroom Stock in under 20 minutes and have a beautifully flavored broth ready for cooking. The beauty of this recipe is you simply need to add boiling hot water to the dried Mushrooms and let them sit for about 15 minutes

The boiling hot water will immediately begin to extract that wonderful, earthy flavor of the dried Mushrooms. You’ll notice it as the water will almost immediately begin to change color to a light brown color. Over time, and the longer the Mushrooms sit in the hot water, more flavor will be extracted from the Mushrooms

After about 15 minutes the water will be a dark brown color, almost black as all of those beautiful Mushroom flavor has been extracted from the Mushrooms and transported into the broth. If you’re multi-tasking you can simply leave the Mushrooms in hot water to do their thing, however we’ve found that it’s best to move the Mushrooms around to extract more flavor

Every couple of minutes we recommend smooshing the Mushrooms with the back of a spoon while swimming in the water. This will help to push out even more of that delicious Mushroom flavor

How to use Mushroom Stock in your home cooking

Consider Mushroom Stock just as you would other popular stocks and broths like Chicken, Vegetable, and Beef. It should primarily be used as a replacement in dishes that require water to add more flavor. Adding Stock to a dish will always provide a more flavorful alternative to simply adding water. So whether it’s Soups, Sauces, or even heartier meals such as Risottos – using Stock is a great way to get more flavor into a dish

Stock is one of those secrets that chefs have to get more flavor in their dishes. Whenever you eat a wonderful meal at a restaurant that has way more flavor than what you’re able to replicate at home, chances are a big reason for that additional flavor is that they’re using good quality, homemade Stocks and Broths

Here are a few recipes we’ve got on our website that you can make using this Simple Mushroom Stock recipe as a base for flavor:

Make a large batch of Mushroom Stock and freeze it for later use

We highly recommend making a big batch of this stock. Use whatever you need for your immediate cooking needs, and place the remainder in the freezer for later use. Because making Stock is an investment in your cooking, it’s definitely worth batch making it

What you can do is measure out the Stock in 1 cup increments and pour them into their own individual Ziploc bags. Label the bags accordingly and then place them in the freezer. Stock can freeze for months and it will still be good to use, so whenever you’re inspired to make a recipe that requires Mushroom Stock, you’ll have plenty of it ready to go

We do this a lot with all of our Stocks and Broths. The only challenge is we’re running out of room in our freezer! It’s a good thing though, because making way for more freezer space usually means I’ll be cooking up some yummy dishes using some of the existing stock that’s in there. It’s win win!

Simple Mushroom Stock Recipe

Ingredients

  • 30 grams / 1 oz. Dried Mushroom mix (eg: Porcini, Morell, Chanterelle)
  • 2 cups of Boiling Water

Instructions

  1. Place the Dried Mushroom Mix into a medium sized bowl
  2. Boil the Water then immediately, and carefully, pour the Water over the Mushrooms into the bowl
  3. While the Water is still hot, mix the Mushrooms well throughout the water. You will immediately see the Dried Mushrooms release their flavor as the water will begin to go dark
  4. Every couple of minutes or so continue to mix the Mushrooms to ensure as much flavor is extracted. After 20 minutes strain the liquid into a bowl. You’ve now got yourself some delicious Mushroom Stock!

This recipe is for a batch that will produce about 1 cup of Stock. If you want more, just double the quantities of Mushroom and Water to achieve the volume you need

Keep those hydrated mushrooms for your cooking!

Also, don’t throw away those re-hydrated Mushrooms. Depending on what you are using the Stock for, there’s likely no harm in adding those beautiful Mushrooms into your dish. It’ll just add more delicious, earthy, mushroomy flavor!
