This weeks meal plan is inspired by a mix of European and Middle Eastern cuisines. Kicking off the week is a mouth watering Roasted Lamb Shoulder, which will provide enough leftovers for not only our Lunching on Leftovers, but likely a few other lovely dishes too. Some traditional dishes round out the week – Tabbouleh Salad and the classic Chicken Kiev with a bit of a twist. So time to dig into our Weekly Meal Plan October 8, 2023. Enjoy!

Epic Cook Up – Roasted Lamb Shoulder
Our Roasted Lamb Shoulder is a perfect Sunday Roast for the cool Fall weather. Simple to prepare, but so delicious. This Lamb Shoulder is packed with flavor and when paired with some simple roasted vegetables is the ultimate Sunday family dinner
Healthy Meal – Tabbouleh Salad with Couscous
The classic Middle Eastern Tabbouleh Salad, paired with some hearty Pearl Couscous provides a healthy, yet extremely robust salad to kick off the week. What’s more, save some of that Lamb Shoulder and slice it up with this Salad for a true match made in heaven
Fun and Interesting Meal – Chicken Kiev Bites
The classics are classics for a reason – they never truly go out of style. Who doesn’t love a Chicken Kiev? Beautifully fried and oozing with Garlic Butter. Our recipe puts a little twist on the classic and served with our amazing Mashed Potatoes it’s a winning dish
Lunching on Leftovers – Lamb and Tabbouleh Wrap
A simple utilization of leftovers from two of this weeks tasty dishes. Just grab yourself some Pita bread, Tortillas will also work, whip up a lovely yoghurt sauce and you’ve got an amazing lunch (or two, or three!)
Weekly Meal Plan October 8 2023
Full list of Ingredients
- 4 lb. Lamb Shoulder (approx. 1.8 kg)
- 2 lbs. of Boneless Chicken Thighs
- 1 Full Garlic Bulb
- 4 Sprigs Rosemary
- 1 ½ cups Parsley, chopped
- 1 cup Cilantro, chopped
- 1 cup Mint, chopped
- 1 Cucumber, deseeded and diced
- 2 Large Tomatoes, deseeded and diced
- ½ Red Onion, finely diced
- Zest of ½ a Lemon
- Juice of 1 and ½ Lemons
- Optional: 1 lb. Roasting Vegetables
- 1 cup Flour
- 2 Eggs, beaten
- ½ cup Greek Yoghurt
- 1 cup Breadcrumbs
- 1 ½ cups of Water
- 6 tbsp. Olive Oil
- 3 cups of frying oil such as Vegetable or Canola Oil
- 2 Sticks of unsalted butter (approx. 1 cup)
- 2 tbsp. Salt
- 1 cup Pearl Couscous
- 2 large Pita Bread pieces
- 1 tsp Red Chili Flakes
- Salt and Pepper
