The Weekly Meal Plan for October 15 is a mixed bag of dishes from all over the world. We kick off with an Indian inspired Vegetarian Curry with roasted Cauliflower and Eggplant which is packed full of flavor. Good news is there will likely be leftovers! So, you guessed it, we’ll use the Curry to make a tasty and simple Vegetable Curry Naan Wrap for Lunch!

Our Healthy Meal for the week is a lovely Creamy Kale Salad. Very few ingredients required to make this amazing salad which can be whipped up on a weeknight with no hassles. Finally, our Fun Meal is a dish inspired by our trip to Fiji, their famous Fish Kokoda dish. A raw Salmon preparation with lots of lime and finished with Coconut Milk for a creamy, delicious meal. Epic Cook Up – Cauliflower and Eggplant Curry

This Cauliflower and Eggplant curry is a great, warming dish for a weekend cook up. It’s not a traditional curry as such, however, draws influence from those classic curries such as Tikka Masala and Korma. This is a vegetarian dish too, with so much flavor coming from the Roasted Cauliflower and Eggplant

We’re amping up the classic Kale salad significantly with this dish here by adding a creamy finish by using Japanese Kewpie Mayonnaise. It’s a great combination we cannot wait for you to try. Oh, the dish also uses Anchovies which add such a depth of salty flavor

This is a super fun twist on the traditional Ceviche dishes we’re used to these days. It is inspired by a Fijian fish dish known as Kokoda. The preparation is similar to Ceviche however the addition of Coconut Milk adds a unique and delicious twist

Weekly Meal Plan October 15 2023

Full list of Ingredients

  • 1 Whole Cauliflower, cut into bite sized florets
  • 1 Whole Eggplant, cut into bite sized pieces
  • 1.5 lbs. Atlantic Salmon, skin and bones removed
  • 2 Large Red Onions
  • ½ bunch of Kale, Chopped
  • Juice of ½ a Lemon
  • Zest of ½ a Lemon
  • 3 Limes
  • 1 Bell Pepper, diced
  • 4 Ripe Tomatoes, diced and de-seeded
  • ½ Cucumber, diced and de-seeded
  • 1 Jalapeno, de-seeded and sliced
  • 2 Cloves Garlic, finely chopped
  • 2 tbsp. Ghee (you can use Butter or Oil as an alternative)
  • 1 tbsp. Turmeric
  • 1 tbsp. Coriander Powder
  • 1 tbsp. Cumin
  • 1 tbsp. Garam Masala
  • 3 tbsp. Tomato Paste
  • 28 oz / 800g Canned Crushed Tomatoes
  • ½ cup Heavy Cream
  • ½ cup Greek Yoghurt
  • 400ml (14 fl. oz) Coconut Milk
  • 1 cup Cilantro, Chopped
  • 2 Red Anchovies, chopped
  • 2 tbsp. Japanese Kewpie Mayonnaise
  • 6 tbsp. Olive Oil
  • 1 tbsp. Red Wine Vinegar
  • 2 large Naan Breads
  • Salt and Pepper
