This recipe may very well be the best Poached Chicken Noodle Soup you will ever eat. The flavors are so pronounced and delicious, and the technique required to make this dish is so easy. Good Chicken Noodle Soup is warming and comforting, and this recipe absolutely delivers on those qualities. A rich and warming Chicken Broth that’s loaded with healthy Vegetables that’s used to Poach the Chicken until tender gives out so much flavor. Finish with some fresh Noodles and you’ve got the perfect healthy and delicious meal to enjoy

How to make Poached Chicken Noodle Soup

There are a few techniques involved in making this dish and they all ladder up to the most amazing tasting broth for this Soup. The dish does require the use of homemade Chicken Broth for the ultimate flavor, and we highly recommend making yours from scratch. If you use store bought Broth it’s not going to have anywhere near the same level of flavor or texture, and will likely be highly salty

The homemade Chicken Broth is then used to poach your Chicken Breasts until they are pull-apart tender. This technique is a fantastic way to cook Chicken, ensuring it’s nice and tender and not dry. It may very well be the easiest way to cook Chicken, and one we use at lot at Dinnertime Somewhere

Making Poached Chicken Noodle Soup
To make this wonderful Poached Chicken Noodle Soup you need to prepare each of the components separately

Once that’s done, you’re left to cook up some nice chewy noodles and add them to the dish. We don’t mind using store-bought Noodles, and you can use any kind you like. They add robustness to the dish, rounding out the Soup into a full meal worthy of a hearty lunch or dinner

Begin by making homemade Chicken Broth

You will need about the equivalent of 2 whole Chicken carcasses to make the volume of Broth we need for this dish. I recommend getting into the habit of storing your leftover Chicken bones in a Ziploc bag in the freezer so you can make Stock whenever you need

Otherwise, you can buy some from your local butcher or grocery store. Hey, even just buy a few of those delicious Roast Chickens you can get at the supermarket and keep the bones, they’ll work great. Then, you’ll need to add the bones along with some roughly chopped vegetables (Carrots, Celery, and Onion are recommended) into a large stock pot or Instant Pot with enough water to cover everything

Cook that all down for a few hours over a medium heat until you’ve got a beautiful, luscious Chicken Stock. Remove the bones and strain the liquid and you’re ready to go. We use the Gordon Ramsay method for Poaching the Chicken

I recently heard that the famous chef Gordon Ramsay enjoys a simple lunch of Poached Chicken in Broth with Vegetables on many occasions. Figured I’d try it for this recipe and wow it came out so good. So, add 4 cups of Chicken Broth to a Saucepan along with some sliced vegetables

We used a combination of Carrots, Celery, and some Potatoes cut into small cubes to add some starchiness to the broth. Bring that all to the boil then add 2 Chicken Breasts. Remove it from the heat, cover, and leave it alone for about 25 – 30 minutes

The residual heat in the pot will slowly poach / cook the Chicken. Not only that, but the liquid will also infuse all those delicious flavors into the Chicken, and similarly, you’ll get an even more pronounced Chicken flavor in the broth which we’ll ultimately use for the Soup

Once cooked (internal temperature of the Chicken reads 160F), remove it from the pot and allow it to cool before shredding into strips with your hands or using two forks. I like to put the Broth back on the stovetop for about 10 minutes to continue to cook the Vegetables and intensify the flavor of the broth

The final step of adding Noodles

The last step is so easy, and with all the Broth and Chicken components done you can simply reheat them all when it’s time to eat, along with the Noodles. For the Noodles, you can use any kind you like. We opted for some delicious Egg Noodles which were luscious and chewy and tastes so good in the Soup

Other nice noodles to try would be Flat Noodles, Soba Noodles, or Udon Noodles. Each will add their own unique flavor and texture to the Poached Chicken Noodle Soup, so I recommend just using the ones you like

Cook the Noodles as per their instructions and then strain and run under cold water. This will stop them ‘cooking’ once they’ve been removed from the Water, which is important as we want to reheat everything when it’s time for serving

Serving the Soup

I love that you can prepare the Broth, the Chicken, and the Noodles all in advance and refrigerate them until you’re ready to eat. When it’s time to eat, all you need to do is bring that Broth to a boil in a large saucepan and then drop in the Noodles and Chicken

Remove it from the heat and stir through to warm everything through then it’s time to serve! I recommend finishing off the Chicken Noodles Soup with a garnish. We opted for some freshly chopped Scallions which were a great addition, adding freshness and some crunch to the Soup

Poached Chicken Noodle Soup Recipe

Ingredients

  • 4 cups of Chicken Broth (recipe here)
  • 2 Carrots, finely diced
  • 1 Celery Stalk, finely diced
  • 1 large Potato, peeled and finely diced
  • 2 Chicken Breasts
  • 2 Servings of dried Egg Noodles
  • 2 Scallion Stalks, finely diced
  • Salt

Instructions

  1. Combine the Chicken Stock, Carrots, Celery, and Potatoes into a Saucepan and bring to a boil. Add the Chicken then cover and remove from heat
  2. Allow the Chicken to Poach for 25 – 30 minutes until completely cooked (internal temperature of 160F). Once cooked, remove Chicken and set aside to cool before shredding it into strips
  3. Continue to boil the Broth for 15 – 20 minutes to cook the Vegetables and intensify the flavor. Taste for seasoning and add some Salt if needed
  4. Cook the Noodles as per the packaging instructions (usually involving boiling for a few minutes then running under cold water)
  5. When you’re ready to serve, bring the Soup back to a boil and add the Poached Chicken and Noodles. Serve in individual bowls and garnish with Scallions

Recipe Notes

  • You can prepare all components of the recipe in advance and refrigerate for 24 hours prior to serving. Simply reheat the Broth then add the other ingredients until warmed and serve
  • Use any Noodles you like. Different Noodles will provide unique flavors and textures to the Soup
  • We highly recommend making your own Chicken Stock for this recipe
