A Greek Salad is such a simple dish to make yet is universally loved. The reason for this is the pure simplicity of its ingredients. The combination of flavors works magically together, and they are a joy to eat
Good quality, ripe Tomatoes form the foundation of a great Greek Salad dish
Unlike many salads, a traditional Greek Salad does not have any leafy lettuce in it. The main component of a Greek Salad is instead Tomatoes. Tomatoes form the basis for a great Greek Salad, so make sure you chose the Tomatoes that are the ripest and packed with the most flavor
For this recipe we’ve used Truss Tomatoes, which come on the vine. They have a lovely, sweet texture and flavor when at their ripest, and taste great in this Greek Salad with Chicken recipe. We recommend preparing the Tomatoes by removing the seeds and watery insides. This will make for a much better overall texture and avoids the Salad becoming watery
To remove the Tomato seeds, cut the Tomato into quarters, then carefully remove the seeds with a sharp knife from each quarter. You can then slice the Tomatoes into bite sized chunks. It is good to slice them lengthwise so each forkful will be an ample amount of delicious Tomato
It can’t be Greek Salad without Feta Cheese!
The hallmark characteristics of a great Greek Salad is some great quality Feta Cheese. The kind of cheese that has a beautiful, crumbly texture – yet is so smooth that it melts in the mouth. We recommend splashing out a little bit of extra cash to get the good quality Feta when making this Salad. It will make so much difference to the final result
Good quality Feta Cheese is what separates an ok Greek Salad from a great Greek Salad. Get the good stuff, please! It will give the salad a lovely salty, slightly sweet flavor along with that famous texture
Olives or no Olives? Our controversial take!
We’re not fans of Olives. Therefore, for our Greek Salad with Chicken recipe we’re not recommending you add Olives. If you’re a die-hard Olive fan then by all means, add them to your salad. We’re just not big fans, therefore, are excluding it from the dish. We find they have such a powerful flavor that they tend to dominate in a Greek Salad. As such, the other flavors get dwarfed, and the overall balance of flavors is lost
We do, however, advocate excessively for another type of Olive. That is, of course, Olive Oil! Along with Lemon Juice, good quality Olive Oil will be the primary ingredient in creating a wonderfully vibrant vinaigrette. The vinaigrette is critical in the Greek Salad and brings a beautiful freshness to the dish. Good quality Olive Oil will have its own unique flavor profiles too
Like wine, there are simply thousands of different types of Olive Oils to try. We recommend giving a bunch a sample and once you’ve found ‘your’ Olive Oil, use it sparingly, and only when you’re making wonderful salads that warrant the best. You can have everyday Olive Oil for general cooking, but that good quality stuff should be savored for special meals
Spruce up the flavors of the Chicken by adding some delicious Lemon Pepper Seasoning
Add some Lemon Pepper seasoning to your Chicken before it goes into the pan. The Seasoning adds a wonderful flavor of Lemon and Pepper which are so at home in a Greek Salad. The brightness of the seasoning will only enhance the overall flavor of the Greek Salad, and will enhance the flavor of your Chicken too
You can just buy the Lemon Pepper seasoning from the spices section of your local grocery store. That stuff is quite good, and works great on Chicken
Scorch the Chicken with a very hot frying pan to get a lovely, charred flavor
There’s nothing quite like recreating that flame grilled, charred flavor with Chicken. If you’ve got a grill or BBQ, then we highly recommend that you cook the chicken on a high heat over the open flame. Achieving that beautiful, flame grilled flavor will add so much flavor to the Chicken
If you don’t have a grill, or perhaps it’s the middle of winter and it’s snowing outside as you’re reading this recipe then that’s ok! You can still achieve a lovely, char-grilled flavor to the Chicken by cooking it on the stove top. Crank your stovetop to high and have that frying pan smoking hot when you add the Chicken
Give it a beautiful sear on each side, then drop the heat down a bit to cook it through evenly. This is a great technique to get a lovely char on the Chicken, and it tastes amazing!

Greek Salad with Chicken Recipe
Ingredients
- ½ lb. Chicken Breast
- ½ Red Onion, finely sliced
- 4 large Truss Tomatoes, deseeded and sliced
- 1 Cucumber, diced
- 1 Green Bell Pepper, diced
- ½ cup fresh Mint
- 1 tbsp. Lemon Pepper Seasoning
- 3 tbsp. good quality Olive Oil
- Juice of 1 Lemon
- 1 tsp. Balsamic Vinegar
- 1 tsp. Vegetable Oil
- Salt
Instructions
- Rub the Lemon Pepper seasoning over your Chicken and set aside while you prepare the Salad and Vinaigrette
- Add the Olive Oil, Lemon Juice, and Balsamic Vinegar in a large salad bowl along with 1 tsp. of Salt. Whisk well to combine to make the Vinaigrette. Check for seasoning and adjust if necessary
- Add the Red Onion, Tomatoes, Cucumber, and Bell Pepper into the Salad bowl. Mix well to coat the Salad with the Vinaigrette
- Add the Vegetable Oil to a large frying pan and heat over a high heat. Once smoking, carefully place the Chicken in the middle of the pan and cook for 2 minutes, until the Chicken has slightly charred. Turn and cook the other side for 2 minutes. Drop the heat and cook for a further 3-4 minutes on each side until the internal temperature is 160F. Set aside to rest
- Roughly chop the Mint and mix into the Salad right before serving. Place Salad onto individual plates or bowls
- Once the Chicken has rested, cut into slices on a 45-degree angle. Place the Chicken Pieces on top of the Salad and sprinkle with a little finishing Salt. Serve immediately
Recipe Notes
- Simply double the quantity of ingredients if you are cooking for 4 people
- If you can, we recommend cooking the Steak on the grill or open flame to get the best char and flavor
