Hanger Steak might be one of the best cuts of Beef you can get
The amount of flavor packed into a Hanger Steak is truly immense. It is rich with beefy flavor, yet unlike other cuts of Steak like Skirt Steak, it is wonderfully tender. It is truly a joy to work with, which is why it should come as no surprise that this cut of Beef has become increasingly popular over the last few years
Hanger Steak is also referred to as ‘The Butchers Cut’. Historically, Hanger Steak was not a desired cut of Beef, with patrons much preferring the more sought after Filet, Porterhouse, and Ribeye Cuts of Beef. The Butchers would therefore struggle to sell the Hanger Steak, so they never bothered. Instead, they kept it for themselves to enjoy
It was an ongoing secret for ages within the Butcher community that the Hanger Steak is one of the best cuts of Beef you can enjoy. So, they were happy to keep it all to themselves. Unfortunately, the secret is now out, and grocery stores trough to fine dining restaurants all over the world now serve this delicious cut of Beef
To make Honey Soy Hanger Steak, whip up a quick marinade
This dish requires a quick and easy marinade which we let the Steak soak in for a few hours. The marinade consists of a classic combination of Ingredients, including Soy Sauce, Honey, Garlic and Onion Powder, Salt, Red Wine Vinegar, and a little bit of Dijon Mustard
This combination of flavors infuses a deep and rich flavor into the Steak. It’s a very simple marinade to make, the only trick is getting the quantities right. The powerful ingredients in the marinade is the Honey and Dijon Mustard. So, only use about 1 tsp. of each
You can use freshly chopped Garlic if you like. However, I would recommend that you use Garlic Powder (and Onion Powder). These amazing ingredients give all that amazing Garlic and Onion flavor you are looking for in a dish, without any of the fuss of preparing the vegetables. They work great in marinades too, as the powder form will simply dissolve into the marinade, infusing it with wonderful flavors
As with any marinade, we recommend giving it a little taste before you add the Steak. You are looking for some sharp flavors that have a touch of sweetness and saltiness, but not too much of either. If you can’t taste any sweetness, then add a little Honey. Too Sweet? Add a little bit more Soy Sauce and Vinegar to balance it all out
Marinade the Steak for 2 hours, but preferably overnight if you can plan ahead

If you can plan this dish in advance, we highly recommend marinating the Steak overnight in the refrigerator. The flavors will only intensify in the Steak, resulting in the best possible tasting dish
You can also still enjoy this dish on the same day. However, we do recommend leaving the Steak in the Marinade for a minimum of 2 hours to ensure a great result. If you can, try using a sealable Ziploc Bag to marinade the Steak. It gets the best amount of flavor into the Steak and the best part: there’s no cleaning up needed! Just throw the bag out once you’re done
When ready to cook, allow the Steak to come to room temperature before cooking. Most Hanger Steaks are quite chunky, so they will take a little bit of cooking to get the center of the Steak perfectly cooked. Cooking them at room temperature helps to ensure a much more even cook throughout
A simple pan fry is all these Steaks need
No fancy cooking techniques are required to make the perfect Honey Soy Hanger Steak. Simply get a frying pan scorching hot with a little bit of Neutral Oil in there. Straight into the pan the Steaks go, where they will spend about 2 minutes on each of their 4 sides to cook through
Of course, all Steaks cook a little differently depending on their thickness. An average Hanger Steak will cook in about 8 minutes. If the Steak is a little larger, follow the 2 minutes on each side technique, then drop the heat to medium. Then repeat the process for about 1 minute on each side
Keep continuing this until the internal temperature of the Steak is 110F. Remove the Steak at this point and set it aside to rest. Resting the Steak will not only help the fibers to relax (helping to tenderize it), but the Steaks internal temperature will continue to increase as it rests. Removing the Steak at 110F will give you a final internal temperature of around 120F – 125F when slicing. A perfect medium-rare!
Always cut the Steak against the Grain when serving
This is a simple trick that optimizes the tenderness of the Steak. You will notice lines running across the Hanger Steak on a roughly diagonal format. This is essentially a visual representation of the many muscle fibers that run through the Steak
All cuts of Steak have these fibers, and they are the chewiest part of the Steak. For the most tender result, make cuts on the opposite diagonal line to the visual liners / fibers on the Steak. This way, the fibers have all been broken up, and all you’re left with is beautiful, tender slices of Honey Soy Hanger Steak ready to be devoured

The versatility of this Hanger Steak recipe is great, that it will pair well with almost any side dish or sauce you can imagine. In the photos for this recipe, we paired it with an amazing Spicy Chimichurri Sauce. You can’t go wrong with Steak and Chimichurri, and it’s a great combination
A few other classic pairings are anything starchy. So, Potato dishes, or a good quality Mac and Cheese is going to taste great. On the flip side, the Asian-inspired Honey Soy Hanger Steak is going to naturally pair well with Asian dishes. This delicious Yaki Udon Noodle dish is a great choice (you can just omit the Chicken). Honey Soy Hanger Steak Recipe
Ingredients
- 2 Hanger Steaks (1 – 1 ½ lbs. each)
- 1 tsp. Honey
- 1 tsp. Dijon Mustard
- 2 tbsp. Soy Sauce
- 1 tsp. Red Wine Vinegar
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
- 1 tsp. Salt
- ½ tbsp. Neutral Oil (Vegetable or Canola Oil)
Instructions
- Combine the Honey, Mustard, Soy Sauce, Red Wine Vinegar, Onion Powder, Garlic Powder, and Salt in a small bowl and mix well. Pour the Marinade into a large Ziploc Bag then add the Steak
- Massage the marinade into the Steak, ensuring a good, even coverage then refrigerate for 2 hours (preferably overnight)
- When ready to cook, remove the Steak and let sit at room temperature for 1 hour
- Heat the Oil large frying pan or Cast Iron Skillet over high heat until smoking hot. Add the Steak and fry for 2 minutes on each side. Once the internal temperature reaches 110F, remove from heat and allow to rest for 10 minutes
- Slice the Steak diagonally against the grain for optimal tenderness. Serve with a sprinkling of Finishing Salt
Recipe Notes
- Larger cuts of Steak may require a little longer in the pan. If so, once you’ve cooked each side for 2 minutes, drop the heat to medium and continue to cook each side until done
- Be sure to rest the Steak well before slicing
