So, it’s just as perfect a dish for dinner by itself as much as it is for a party with friends. It’s also brilliant as leftovers for lunch. Honestly, you can even have it for breakfast, and it’ll go down a treat. Just add a couple of eggs on there and you’re all set! The two golden rules of good Nachos
Rule number 1: The Nachos should be layered as they are built. I don’t just want to have a massive pile of corn chips on the plate with the beautiful cheese and meat simply placed on top. Layer the Nachos as you are building them similarly to how you’d make a lasagna. Layers of Cheese and meat wedged in between corn chips ensures every bite until the end is delicious
Rule number 2: Quantity control is everything with Nachos. Make sure there is an ample portion of meat and cheese in your Nachos. The worst plates of Nachos are the ones where it’s 80% corn chips and 20% everything else. You can always add more more chips, that’s easy. Load those Nachos up with all the good stuff! At most, 50% of the plate should be Corn Chips

It’s all about slowly braising the Short Ribs to maximize tenderness and flavor
By far and away the best method for preparing Beef Short Ribs is to slowly braise them. The slow braise will gradually break down the fibers in the Beef until it is pull-apart tender. Therefore, to make this wonderful dish start by sourcing ingredients for a wonderful braising Liquid. For our dish we use a combination of Carrots, Onions, Celery and Garlic, along with some Thyme and Rosemary
To the Vegetables we include a delicious and classic Mexican spice mix of Coriander Powder, Cumin, and Smoked Paprika. Add a little bit of Tomato Paste in the Braise as well to thicken things up slightly
For the liquids, a combination of good quality Beef Broth (we always recommend making your own homemade Broth), and Red Wine. You can go truly authentic and try and source Mexican Red Wine (yes, it does exist!), or simply go with some decent quality Red Wine that you would typically drink yourself
Once the Beef Short Ribs are browned, you build the braising liquid in the classic method. Slowly sweating off the vegetables then adding the liquids and aromatics. The Short Ribs go back into the pub, submerged by the liquid. Lid goes on, then all you need to do is wait around for about 6 hours until ready!

Ingredients for the Nachos Toppings
For the Nachos themselves, we’re not going to be super fussy about what ingredients we recommend you can and can’t use. You’re the expert of your own palate and when it comes to Nachos, personalization is always best
We like the classic combination of Pico de Gallo, and Homemade Guacamole, and some good quality melting cheese in our Nachos. The role of the toppings is to compliment flavors and textures, but ultimately the star of the dish is those Short Ribs
So, you can stick with the classic approach to Nachos, or go crazy and add your own toppings. So long as you’ve prepared these wonderful Braised Beef Short Ribs, it’s going to be one of the best Nacho bites you’ve ever eaten. Guaranteed!

Beef Short Rib Nachos Recipe
Ingredients
- 1 lb. prepared Mexican Short Ribs – click here for recipe
- ½ a bag of Plain Corn Chips (if using pre prepared)
- 8 Corn Tortillas (If making the chips yourself)
- ½ a Jalapeño, sliced
- 1 Avocado, halved and seeded
- 2 cups of Cherry Tomatoes, diced
- ½ a Red Onion, finely diced
- ½ cup Cilantro, chopped
- 2 Limes
- 2 Cups Melting Cheese (eg: Queso Asadero), grated
- ½ cup Sour Cream
- Salt
Instructions
- The first step is to create a simple Pico De Gallo, otherwise known simply as a fresh tomato salsa. Combine the Tomatoes, Red Onion, and Cilantro into a small bowl along with the Juice of 1 lime and a tsp of Salt. Mix thoroughly and set aside
- Set your Oven to 375 degrees and line a large baking tray with non-stick aluminum foil. Place half of the Corn Chips in the middle of the tray, forming a tight circle
- Place half the Grated Cheese on top of the Chips, then cover with half of the Short Ribs. If you like you can also add some of the Pico De Gallo and Jalapeños on top
- Add the remaining layer of Chips on top, then add your final layer of Cheese, Beef, Pico de Gallo, and Jalapeños then cook in the oven for 10 minutes, or until the Cheese has melted and started to turn slightly darker
- While the Nachos are cooking prepare a basic batch of Guacamole by combining the meat of 1 Avocado with the Juice of 1 lime and a tsp of Salt. Mash thoroughly either with a Potato Masher or with the back of a fork until a smooth consistency
- Remove the Nachos from the oven and carefully transfer to a large serving plate. Best to do this with a large spatula. Doesn’t matter if some bits come off, just add them back to the Nachos on the serving plate! The melted cheese should hopefully keep the structure together
- Serve along with a bowl of Guacamole and a bowl of Sour Cream. You could either serve these separately or simply spoon on top of the Nachos depending on your preference

Optional Step
If you are making your own Chips from scratch follow this simple guide. Cut your Tortillas into 8 pieces each so they form triangle wedges. Heat a shallow amount of frying oil (eg: Canola or Vegetable Oil) in a large frypan. Once the Oil is around 370 degrees, carefully fry the Tortilla.
Be careful to not overload the pan otherwise the Oil temperature will drop. Best to cook in batches. Once complete, drain the chips and immediately season with Salt
