After living in California for a few years, like most people I adopted an insatiable love for the almighty Breakfast Burrito. What an amazing dish that has been purely perfected by the Californian people and can be found everywhere from food trucks, the local Mexican place through to the high-end restaurants across the state. Our Breakfast Burrito is made using Mexican Short Rib leftovers

Our take on the mighty Breakfast Burrito goes a little bit fancier with the addition of Braised Short Rib, which you can utilize some of that beautiful left-over meat from our Mexican Short Rib recipe here. The richness of the Braised Short Rib adds so much depth to the Burrito and is great application for the scores of leftovers you’ll definitely have when you cook this dish.

To us, this is the critical component of making the best California Breakfast Burrito. The amount of flavor that these Braised Short Ribs hold is simply astonishing. The only way to prepare Eggs in a Breakfast Burrito is to perfectly Scramble them

There really is no other option when it comes to how Eggs should be prepared for a Breakfast Burrito. Scrambled Eggs are the only way to go. We love Scrambled Eggs. In fact, we’ve got a whole recipe written here about how to make the perfect Scrambled Eggs. We’ve got you covered in the recipe below on how to prepare them too so don’t worry

We are purists when it comes to Scrambled Eggs. There is absolutely no need to overcomplicate them. We’ve seen Scrambled Egg recipes with all kinds of crazy ingredients added to them. The reality is, however, the best Scrambled Eggs only require three ingredients. Eggs, Butter, and Salt. That’s it!

Whisk your Eggs well so they are lovely and aerated then add them into a pot that is set on a medium / low temperature with a little butter. Mix them constantly until cooked. Not only will this ensure that the Eggs don’t overcook or burn it places, but it also continues to add more air into the Eggs

When they’re cooked, finish off with some Salt and you’re done. What you are left with are the fluffiest, lightest Scrambled Eggs imaginable. Perfect for filling up your delicious California Breakfast Burrito

Note: Please allow 5-6 additional hours to make the Mexican Short Ribs. Preferably, prepare the Short Ribs the day prior and refrigerate so you can prepare the California Breakfast Burrito easily


California Breakfast Burrito Recipe

Ingredients

  • 2 Cups Braised Short Ribs (recipe here)
  • 8 Eggs
  • 1 tsp. Unsalted Butter
  • ½ cup Cilantro, chopped
  • 1 bag of Large Corn Tortillas
  • 1 cup Queso Asadero, grated
  • Your favorite Hot Sauce
  • 1 tsp. Salt

Instructions

  1. Make some Tortilla chips to add that much needed crunchy texture to the Burrito. Simply place a tortilla in a large frypan over medium / high heat with a little oil and fry for 2-3 minutes on each side until crispy. Break up the chips with your hand into small bite sized pieces
  2. Whisk the eggs thoroughly then place in a saucepan with a little bit of butter over low heat. Stir continuously until the eggs are a lovely fluffy consistency, still slightly runny. Remove from the heat but keep in the pan as we prepare the tortillas. The residual heat of the pan will continue to cook the eggs to a perfect consistency. Season eggs with Salt just before preparing the Burrito
  3. Assemble the Burrito by placing a handful of Queso Asadero on the Tortilla, then add the Short Ribs, Eggs, Tortilla Chips, and a sprinkling of Cilantro. Roll your burrito by first folding in the two sides, then rolling the Burrito away from yourself to form a tight seal.

  5. Place Burrito back on a hotplate / frying pan to lightly char the Burrito on both sides. Cut in half, top with Hot Sauce, and enjoy!

We’ve kept the fillings minimal on this recipe however you can add additional fillings such as Sliced Avocado, Crispy Bacon or Refried Beans. You can also serve it with Sour Cream or Salsa Verde. However you like it!
