As with any baked dish, this recipe requires that you stick to the portions and quantities of ingredients for the best results

You don’t need a stand mixer to make these Cookies, it will just help a lot!

Stand Mixers are very popular, and they take so much of the hard work and effort out of cooking, especially baking. Any recipe that involved mixing or kneading dough (such as this one) is made a thousand times easier with the help of a stand mixer

We do understand however, that Stand Mixers aren’t cheap these days. The good news is that you can absolutely make this wonderful recipe without one. You’ll just need to roll the sleeves up and start mixing it all by hand in a large bowl. Got kids? Even better! Put them to work in the kitchen mixing all the ingredients together for you!

The dish is made by first mixing Butter and Sugar to create the luscious cream. The dry ingredients are then added (Flour, Baking Powder etc.) to form the batter. You can add some Chocolate Chips into the Batter while in the Stand Mixer, but there’s a chance they may break up too much. So, we’d recommend adding the Chocolate Chips as the last step and manually mix them through. This way you’ll get those amazing thick pieces of gooey Chocolate with every bite

To help set and shape the batter, it is rolled into a log with non-stick parchment paper and refrigerated for one hour. This helps to not only set the batter but to shape it. You can have some fun with how you shape the cookies. We went for a slightly less conventional rectangle shape. Of course, the classic circular Cookie shape is just as easy to do

When ready to bake, simply unroll the Cookie Dough (you want to ensure you’ve used non-stick parchment paper at this point, trust us!), and then cut the Cookie Dough into individual cookies. Lay them on a sheet pan and bake for 10 – 12 minutes until perfectly cooked

The Best Chocolate Chip Cookies Recipe

Ingredients

  • 150g room temperature Butter
  • 150g Brown Sugar
  • 1 Egg
  • 240g All Purpose Flour
  • 4 tbsp. Corn Starch
  • 1 tsp. Baking Powder
  • 1 tsp. Salt
  • 200g Dark Chocolate Chips

Equipment needed: Stand Mixer with Paddle Attachment

Instructions

  1. Cream the Butter and Sugar by mixing them together in the stand mixer for 5 minutes on low / medium setting. Scrape down the sides occasionally while mixing
  2. Add the Egg and continue to mix until fully incorporated, another 2 – 3 minutes (scraping down the sides if needed). Add the Flour, Corn Starch, Baking Powder, and Salt and whisk for another 2 minutes until fully incorporated
  3. Add the Chocolate Chips and mix for 1 minute then turn off the Stand Mixer. Continue to stir in additional Chocolate Chips if needed, just don’t continue to use the stand mixer as it may crush the chips
  4. Turn the dough out onto non-stick parchment paper. Form into a log and refrigerate for at least 1 hour
  5. Remove the dough from the refrigerator and slice it into individual Cookie-sized slices (about ½ inch thick). Place the individual cookies on a sheet pan lined with parchment paper and bake in the oven for 10 – 12 minutes at 320F. Once the Cookies are set but still chewy in the middle they are ready!
  6. Remove from the Oven and let them rest on the sheet pan for 10 minutes before serving

As always, the Cookies are best eaten straight away while they are still warm on the inside. This will yield that beautiful chewy, gooey texture we all know and love. You can keep the Cookies for about 1 week after you’ve baked them. Just store them in an airtight container or Ziploc bag
