- 2.5 lbs. Beef Short Rib
- 8 Eggs
- ½ cup Chipotle Chilis
- 2 tbsp. Smoked Paprika
- 2 tbsp. Cumin
- 2 tbsp. Coriander Powder
- 1 tsp. Chili Powder
- 4 Garlic Cloves
- 2 Lemons
- 3 Lime
- 1 Avocado
- 2 Red Onions
- 2 Jalapeno Peppers or Serrano Peppers
- 1 Green Apple
- 1 Tomato
- 2 cups Cherry Tomatoes
- 1 bag of Arugula
- ½ cup Cilantro
- 1 can Crushed Tomatoes (14 oz)
- 2 tbsp. Tomato Paste
- 1 oz (30 grams) Goats Cheese
- 1 tbsp. Balsamic Vinegar
- 1 heaped tsp. Dijon Mustard
- Hot Sauce
- 1 cup Red Wine
- ½ cup Sour Cream
- 2 cups of Beef Stock
- 2 cups Queso de Oaxaca or Queso Asadero Cheese (melting cheese)
- 8 medium sized Tortillas
- ½ a bag of Plain Corn Chips (if using pre prepared)
- Olive Oil
- 1 tsp. Unsalted Butter
- Salt and Pepper
