Now, it’s a lot of Lamb so you’ll have leftovers. Not worry though as we’ve got you covered there too! Our Lunching on Leftovers takes that beautiful Lamb and makes some delicious Lamb Empanadas. We’ve created a lovely Sherry Caramel Sauce which is a beautiful and unique addition to the traditional Empanadas
Keeping with the Classic theme, two more beautiful classic dishes for you. First, our Healthy Meal of Duck and Orange Fennel Salad. A fresh, bright salad topped with a beautiful crispy skinned Duck Breast. Finally, what could be more classic than French Onion Soup?

Epic Cook Up – 10 Hour Slow Cooked Lamb Shoulder
Beautifully tender and delicious Lamb Shoulder, cooked slowly in the oven for 10 hours. This recipe is so simple. Just season, set in the oven, do something else for 10 hours then eat! You’ll be rewarded with a delicious Lamb Shoulder with plenty of yummy leftovers
Healthy Meal – Duck and Orange Fennel Salad
Orange and Fennel make for such a delicious salad. Bright, vibrant, and bursting with flavor. What’s more, we’ve added Pomegranates to give this salad even more zing. Finishing it off? Well, nothing less than a beautiful, crispy skinned pan-fried Duck Breast
Classic Dish – Classic French Onion Soup
Nothing beats the classics, and this is up there with one of the best. A traditional French Onion Soup cooked the way they do in those famous Parisian Bistros. Slow cooked Onions, soaked in delicious Beef Stock and served with crispy, cheesy bread. Delicious
Lunching on Leftovers – Lamb Empanadas with Sweet Sherry Sauce
Instead of just putting that leftover Lamb in a sandwich, we’ve come up with a fun recipe for you all. Wrap that delicious Lamb in Puff Pastry with some Cheddar Cheese and dip them into our tasty Sherry Caramel Sauce. Yum!

- 1 Whole Lamb Shoulder (5-6lbs)
- 2 Duck Breasts, skin on
- 1 cup of Lamb Stock (see recipe) Beef Stock can be used as an alternative
- 4 cups of Beef Stock (see recipe here)
- 1 French Baguette
- 2 sheets of Puff Pastry
- 1 Egg
- 1 cup Cheddar Cheese
- 1 cup Gruyere Cheese
- 3 Lemons
- 4 Sprigs Rosemary
- 6 Garlic Cloves
- 2 cups Frozen Peas
- 6 Strips of Streaky Bacon
- 6 Large Red Onions
- 4 large Yellow Onions
- 1 Shallot
- 1 large Fennel
- 1 Green Apple
- 1 Orange
- Seeds of 1 Pomegranate
- ½ cup Pedro Ximenez Sherry
- ½ cup Madeira wine
- 1 tbsp. Red Wine Vinegar or Sherry Vinegar
- 8 tbsp. Olive Oil
- 3 tbsp. Unsalted Butter
- 1 heaped tsp. Dijon Mustard
- 1 tsp. Sugar
- Salt and Pepper
