We’ve got a fun Weekly Meal Plan for January 21 for you all. This week we’re featuring a delicious Mexican Inspired Epic Cook Up, with enough food left for an amazing Lunching on Leftovers dish. We’re showcasing one of our all-time favorite Classic Dishes and featuring a bunch of amazing recipes that you can serve up as sides or ramp up the volume and eat them as their own meals. Time to dive in!
Heading to Mexico for an Epic Cook Up
The Epic Cook Up for this week is our spicy Pulled Mexican Chicken dish. This is an awesome way to cook Chicken, slow cooked in a delicious Tomato based sauce spiced with some beautiful Mexican spices. The secret ingredient – Chipotle Chilis in Adobo Sauce. A magical ingredient that transforms this beautiful dish into an authentic Mexican Fiesta!
The Pulled Mexican Chicken recipe produces quite a lot of food, so if you have leftovers why not make our fun Pulled Chicken Sliders. It’s a great interpretation of Sliders, which is everyone’s favorite! We serve these bad boys with some delicious Coleslaw. Some lovely freshness to pair with the rich, spicy sauce
Our Classic recipe for the week is an all-time favorite of ours. The quintessential French Bistro dish of Steak Frites. Our version uses one of our favorite cuts of Beef – Hanger Steak. This often-overlooked piece of meat has so much flavor and, what’s more, it’s so much cheaper to buy than those expensive Filet or Ribeye’s. This dish will transport you straight to Paris, so pour a lovely glass of Red and enjoy
Loads of delicious Side Dishes to round out the Week
We’re doing something a little different for this weeks meal plan, serving up 3 phenomenal side dishes. These Sides can either be served alongside some of the above-mentioned dishes. Or, just dial up the quantities when cooking and they can serve as their very own stand-alone meals!
Everyone Loves a great Pico de Gallo. The stalwart of Mexican Food adds such a burst of acidity and flavor to any meal. Try our tropical version featuring amazing Mangoes! This Mango Pico de Gallo adds a beautiful hit of sweetness to the dish which is phenomenal
Everyone loves a good Potato Side. Especially when you’re eating Steak. So, why not try our Sheet Pan Potatoes and Beans along with that delicious Steak Frites recipe. This is such an easy dish to cook. Just load up the Pan with the ingredients, throw it in the Oven and that’s it!
Rounding out the week is a super fun dish we created using Enoki Mushrooms. Who would have thought that poaching them in Butter flavored with White Wine would taste delicious!

Lunching on Leftovers – Pulled Chicken Sliders
Save some leftovers from that Pulled Mexican Chicken dish and turn them into Sliders! Paired with a vibrant Coleslaw and some Japanese Kewpie Mayonnaise, these Sliders are amazing

- 1 ½ lbs. Hanger Steak
- 1 lb. Frozen Fries
- 3 Cups of Chicken Stock
- 2 tbsp. Chipotle in Adobo Sauce
- 1 Large Enoki Mushroom (approx. 2 cups)
- 4 Potatoes
- ½ lb. Green Beans
- 1 Apple
- ¼ Red Cabbage
- 1 Carrot
- 1 Brown Onion
- 2 Bell Peppers
- 2 cups of Cherry Tomatoes
- 1 Mango
- Juice of 3 Limes
- 1 Garlic Bulb
- 2 tbsp. Chili Powder
- 3 tsp. Ground Cumin
- 1 tsp. Onion Powder
- 1 tsp. Garlic Powder
- 1 tsp. Ground Coriander
- ½ cup Cilantro
- 6 oz. Can of Tomato Paste
- 16 oz. (400g) Canned Tomatoes
- 3 tbsp. White Vinegar
- 1 tsp. White Sugar
- 1 tbsp. Dijon Mustard
- 1 tbsp. Wholegrain Mustard
- 1 tsp. Worcestershire Sauce
- 1 tbsp. Japanese Kewpie Mayonnaise
- 1 tsp. Honey
- 1 tsp. Soy Sauce
- 1 tsp. Apple Cider Vinegar
- 1 cup White Wine
- 5 tbsp. Olive Oil
- 1 tsp. Vegetable Oil
- 6 tbsp. Unsalted Butter
