We’ve been busy in the kitchen this week and I hope you all have been too! We’ve got an awesome Weekly Meal Plan for February 25 coming your way, with a great mix of healthy, hearty, comforting, and all-around fun recipes to make. So, lets jump in and get cooking!

Kicking off the Weekly Meal Plan with some awesome Cod Fish Cakes

Making your very own homemade Fish Cakes is one of those dishes that perhaps isn’t as common as say, a Stir Fry, or Taco Tuesdays, but perhaps they should be? Add this awesome Fish Cakes recipe into your meal planning rotation as we promise you they’re amazing

A beautiful mixture of creamy Mashed Potatoes and Scallions, paired with flaky, delicious Cod are what these cakes are all about. Breaded and lightly fried, they’re a great meal for dinner to pair alongside a simple salad

We’ve been going a little crazy lately with Homemade Dough

We stumbled across this amazing Homemade Dough recipe recently and have been going crazy with Bread recipes. One of our favorite dishes we’ve created is this simply delicious BBQ Chicken Pizza. The Pizza is cooked in a Cast Iron Pan to achieve a beautiful, crispy crust. We flavor the Chicken with loads of delicious spices and top off the Pizza with our favorite BBQ Sauce

It’s the perfect meal for a cold night, or any night really. Don’t bother with Dominoes anymore, this Pizza smashes theirs to pieces!

While you’re getting your Cod for the Fish Cakes, pick up some Tuna for a beautiful Tuna Tartare recipe

If you can get your hands on some good quality Tuna, this Homemade Tuna Tartare recipe is a great way to make use of the amazing produce. Prepared raw, this dish is a classic Japanese recipe served with an amazing sauce. You can eat this with Rice and some vegetables for a full-blown dinner, or just have the Tuna for a light lunch. Either way, it’s a great dish and easy to make yourself

Rounding out the meal plan is a Vegetarian Southern Classic

People in the South of the USA just love Grits, and we can understand why. We made this amazing Mushroom Grits recipe, and it tastes phenomenal! First of all, Cheesy and Buttery Grits form the foundation of this recipe. On their own they taste amazing. Add to that some Creamy Mushrooms then finish it off with roasted Bell Peppers and you’ve got one hell of a great tasting dinner!

  • 2 large Cod Fillets
  • 1 lb. Sashimi Grade Tuna / Ahi Tuna
  • 2 Large Chicken Breasts
  • 2 cups All-Purpose Flour
  • 1 cup of Fine Breadcrumbs
  • 1 cup Stone Ground Grits (Yellow or White)
  • 1 tsp. Yeast
  • 4 Cups of Vegetable Broth (recipe here)
  • 400g / 14 oz. Canned Whole Tomatoes
  • 2 tbsp. Tomato Paste
  • 2 Eggs
  • 2 100g Mozzarella Balls
  • 1 cup Sharp Cheddar Cheese
  • ¼ cup Parmesan Cheese
  • 200g / 7 oz. Heavy Cream
  • 3 Large Yukon Gold Potatoes
  • 1 Red Onion
  • 2 Bell Peppers
  • 1 cup of Cremini or Button Mushrooms
  • ½ cup Fresh Basil Leaves
  • 1 Garlic Bulb
  • 1 Red Chili
  • 1 ½ cups of Scallions
  • 1 tsp. Chives
  • 2 Lemons
  • 1 tsp. Smoked Paprika
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • ½ tsp. Cayenne Pepper
  • ¼ tsp. Chili Crisp
  • 1 tbsp. Ponzu Sauce
  • 1 tsp. Soy Sauce
  • 2 cups Vegetable or Canola Oil
  • 34tbsp. Olive Oil
  • ½ tsp. Sesame Oil
  • 1 ½ cups of Unsalted Butter
  • ½ tsp. Sugar
  • Salt and Pepper
