Once you’ve created the Cookie dough it can be refrigerated for up to 3 days before shaping and cooking. So find yourself a spare 10 mins or so throughout the week leading up to the big day and whip up a batch then throw it in the refrigerator

Once it’s time to cook this is a great recipe to get the kids involved. You can pick up a wide assortment of cookie cutter shapes from the supermarket. So, the kids can choose what kind of cookies they want! We went for star shaped cookies in this recipe. Another fun option is to buy some cake decorating mix and have the kids create their own unique cookies once they’ve been cooked!

The beautiful combination of flavors in our cookies comes from the inclusion of Ginger (naturally), All-Spice, Cinnamon, Cloves, Vanilla, Molasses, and Brown Sugar. This combination of big flavors brings so much spice and sweetness to the dish. No matter what time of year your making cookies, a bite of these will instantly transport you to the holiday season!

A Stand Mixer is preferred to make this dish, but it’s not necessary

We’re pretty lazy bakers here at Dinnertime Somewhere. Not that we don’t love baking delicious food and treat. We just can’t be bothered spending all that time and energy kneading dough properly by hand. So, we made the investment in a Stand Mixer, and we haven’t looked back since

You can complete the dough for these Easy Gingerbread cookies in around 3 minutes using a Stand Mixer. Just throw the ingredients into the bowl and let the mixer do all the hard work

If you don’t have a Stand Mixer do not worry at all. You can still make this recipe! You’ll just need to roll those sleeves up and knead by hand. It will probably take about twice as long, which isn’t too much time when you think about it

Regardless of how you knead the dough, it is important that you get the right texture and consistency before it is wrapped up and refrigerated. You want to produce a thick, sticky dough consistency. The dough is then wrapped up tightly with cling film and refrigerated for at least 3 hours before baking

Easy Gingerbread Cookies Recipe

Ingredients

  • 450g All-Purpose Flour
  • 1 tsp. Baking Soda
  • 1 tbsp. Ginger, ground
  • 1 tbsp. Cinnamon, ground
  • ½ tsp. All-Spice, ground
  • ½ tsp. Cloves, ground
  • 1 Egg
  • 1 tsp. Vanilla Extract
  • 200g Molasses
  • 150g Brown Sugar
  • 150g Unsalted Butter (room temperature)
  • Optional: Cake Decorations
  • ½ tsp. Salt

Equipment needed: Stand Mixer with paddle attachment

Instructions

  1. Add the Butter to the Stand Mixer bowl and beat on medium for 1 – 2 minutes until creamy, then add the Brown Sugar and Molasses. Beat on medium until combine (another minute or so)
  2. Add the Egg and Vanilla and beat on high for 2 minutes, scraping the mixture from the sides of the bowl when needed
  3. Add all remaining ingredients to the bowl and beat on low speed until combined until the dough is sticky and thick, about 2 – 3 minutes
  4. Remove the dough from the mixer, divide it in half and wrap both into cling wrap and refrigerate for at least 3 hours. This step is essentially, because if your dough is not chilled prior to cooking it won’t hold its shape in the oven

When it’s time to bake

  1. Pre-heat the oven to 350 degrees and line a baking sheet with baking paper
  2. Roll the dough out until it is approximately ¼ inch in thickness. Then using your cookie cutters, cut the cookies into shapes. Re-roll your dough scraps to cut out more cookies until you’re out of dough
  3. Place on the baking tray approximately 1 inch apart then bake for 9 – 10 minutes until cooked (for soft gingerbread). Cook for an additional 2 minutes if you want hard Gingerbread Cookies
  4. Allow to cool for 5 minutes then, if you are making multiple batches, move the cooked Cookies to an Oven Rack
  5. Once cooled you can decorate your Cookies however you like using Cake Decorations. Otherwise, just dive into them as is!
