How to make an Orange and Raspberry Poppy Seed Cake

The good news is that not only is this cake delicious, but it is easy to make. Just a few simple steps are all you need to enjoy this amazing dessert. There are no complicated steps involved with this recipe either. Just combine a bunch of ingredients together, bake, decorate, and eat. What could be better than that!

Raspberry Orange Cake
This recipe will produce one of the best tasting Cakes you have ever eaten!

To create this amazing moist batter, combine Flour, Sugar, Orange Zest, Orange Juice, Baking Soda, Baking Powder, Eggs, Salt, Yoghurt, and Poppy Seeds into a large bowl. Ok, there’s maybe a bit more order involved in combining the ingredients, which we’ve listed below

Once these delicious ingredients are combined, straight into a greased baking pan the Cake goes. The Cake is baked for about 40 – 45 minutes until done. You can tell when the cake is completely cooked by pricking it with a wooden skewer. If the skewer comes out clean, that means the Cake is cooked. If the skewer has some cake / batter clinging to it, give it a few more minutes back in the oven before testing again

Wait for the Cake to properly cool before applying the Raspberry Glaze

Perhaps the most difficult step involved in making this delicious Orange and Raspberry Poppy Seed Cake is the 20 to 30-minute wait between taking the cake out of the oven and applying the Glaze. The temptation to dive straight into devouring a slice (or three) of this delicious cake is so great. Those amazing smells are filling the room and you’re no doubt starving at this point! Unfortunately, we must stress that you definitely need to wait for the cake to cool before applying the Glaze

If you add the glaze to the cake while it is still warm, the glaze will literally absorb / sink into the cake. This will result in a very weird texture of the cake, and the presentation will be ruined. A big selling point for this cake is how beautiful it looks on the plate. A big part of that is that bright pink Raspberry glaze. So, we want to be sure the glaze sticks to the top of the cake when applying

If you don’t eat the entire cake in one sitting (which is probably more than likely) the cake will keep for a few days and will stay super moist. What will happen, however, is that glaze will start to seep into the cake a little bit. It’s quite bizarre, and by about the third day you’ll have a cake with 50% of the glaze disappeared as it’s absorbed into the cake

So, our recommendation. Be patient when applying the glaze, and then be greedy once it’s on there! I can’t imagine the cake will stick around long in the house to be honest as it tastes so good!

The flavors in this Cake are amazing

There’s a lot going on with this Cake, and surprisingly all the big flavors compliment each other so well. The tartness of the Orange and Raspberries offset the sweetness of the Cake perfectly well, providing a depth of contrast in flavors

I think that is what separates this Cake from so many others. The inclusion of Orange and Raspberries are such a unique flavor combination yet work so well in a Cake. Both fruits are equal parts tart as they are sweet. They provide the Cake with a sweetness and unique flavor that you expect from a dessert, but their natural tartness helps to balance the whole dish out

Sometimes after eating a few bites of Cake, you’re done. Especially rich ones such as Chocolate Cake. That’s not the case with the Orange and Raspberry Poppy Seed Cake. It’s not a heavy Cake, and one slice goes down so easily you’ll probably be reaching for a 2nd or 3rd slice shortly after!

What keeps the Orange and Raspberry Poppy Seed Cake so light and moist in the inclusion of Yoghurt in the Cake Batter

It doesn’t necessarily come through all that much in the flavor of the cake, but Yoghurt plays a critical role in this recipe. The Yoghurt helps to keep this cake light and moist, and allows the Cake to be just as light and fluffy 2 – 3 days after it was first baked

The inclusion of Yoghurt in Cakes has become more and more popular in recent years. This Cake is a fantastic representation of why this is the case. You can use regular Plain Yoghurt or Greek Yoghurt, which is what we used in this recipe. Just avoid using any flavored Yoghurt as it will make the Cake too sweet and possibly wash out the flavors of the Orange and Raspberries

Orange and Raspberry Poppy Seed Cake Recipe

Ingredients

  • 1 ¼ cups All-Purpose Flour
  • 2 tsp. Baking Powder
  • ¼ tsp. Baking Soda
  • ½ cup White Sugar
  • 2 tbsp. Poppy Seeds
  • 2 Eggs
  • 1 cup of Greek Yoghurt
  • Zest of 2 Oranges (reserve 1 tsp. for topping)
  • Juice of 1 Orange
  • ½ cup of Canola or Vegetable Oil
  • 1 tsp. Salt

Raspberry Glaze Ingredients

  • ½ cup of Fresh Raspberries
  • 1 cup of Confectioners Sugar
  • Confectioners Sugar
  • A pinch of Salt

Instructions

  1. Combine the Orange Zest, ¼ cup Orange Juice, Sugar, and Eggs into a large bowl and whisk well for 1 minute
  2. Add the Yoghurt and another ¼ cup of Orange Juice, along with the Poppy Seeds and Salt. Whisk until smooth
  3. Add Flour, Baking Powder, and Baking Soda and whisk into the mixture until completely combined and a batter has formed
  4. Pour the batter into a baking pan that has been greased with the Oil. Gently tap the pan to release any air bubbles, then place in the center of the oven that has been pre-heated to 350F
  5. Bake the cake for 40 – 45 minutes and then remove from the oven and allow to cool before removing from the pan

Making the Glaze

  1. Combine ½ the Raspberries in a bowl along with the Confectioners Sugar and Salt. Crush the Raspberries then whisk the mixture until smooth
  2. Once the cake has cooled, pour the Glaze over it, ensuring full coverage. Decorate the cake with the reserved Orange Zest from earlier and remaining Raspberries. Leave it at room temperature for about 20 minutes to set

Recipe Notes

  • You can check when the cake is fully cooked by pricking it with a skewer. If it comes out clean, it is done. If batter is sticking to it, continue cooking
  • You can adjust the thickness of the Glaze by adding more Sugar (to make it thicker), or some Orange Juice (to make it thinner), until the desired consistency is reached
