This Chocolate Weetabix Slice makes for a fantastic, sweet treat which is perfect to enjoy as a snack throughout the day, or as a sweet dessert after dinner. They’re so easy to make, take no time at all, and most importantly of all; taste amazing!

Inspiration for this Dish

This dish was inspired by a NZ based company (Chelsea Sugar) who use a hugely popular Wheat breakfast cereal known as Weetbix, it is otherwise known as Weetabix in other parts of the world. Regardless of what the big brands have decided to call it, we’re simply talking about dried Wheat based breakfast cereal. If you can get your hands on some of that good stuff, then you can make this tasty dish!

This dish requires 4 regular sized Weetabix slices, which equates to about 80g / 2 oz. of dried Wheat flakes. Typically, the Weetabix slices come in a bar-like form. If you are using Weetabix or Weetbix, we recommend using 4 bars for this recipe

How to make this delicious Chocolate Weetabix Slice dish

Great news! This is one of the easiest baked treats you can make. It uses very simple, easy to find ingredients and has very few steps involved. That’s the kind of baking I can always get behind!

To kick of proceedings, you’ll need to mix together ingredients into two separate bowls. The first, filled with the dry ingredients (Flour, Sugar, Cocoa Powder, etc.), the second, the wet ingredients (Melted Butter)

Mix them all together and then you’ve got your delicious Batter. The batter is then formed into a tightly packed sheet pan and baked for 10 minutes at around 360F. While the slice is cooking you can prepare the frosting, which is also super-easy to do!

Simply mix Sugar, Butter, Shredded Coconut, and then use Boiling Water to melt everything to form the frosting. You’ll want the frosting to be quite thick in consistency, so stick to the portions we’ve outlined in the recipe below and you’ll be set

Once that beautiful Slice is piping hot straight out of the oven; apply the frosting. No need to wait for it to cool, just layer that beautiful frosting on top. Allow the slice to cool a little bit and then remove it from the sheet pan, slice it up and enjoy!

Consistency in the Batter is key to a perfectly formed Chocolate Weetabix Slice

If you are using regular Wheat cereal, then simply weight out 80g / 2 oz. of dried Wheat flakes. The good news with this Chocolate Weetabix Slice recipe is you don’t need to be super-precise with your weight. So, unlike many other baking dishes there is a little bit of wiggle room. We recommend you may close attention to the consistency of the batter, as that really is the key

Once the batter ingredients have all been combined, you will want a very firm, but pliable batter. It should almost form the same consistency as a dough. Unlike other baking dishes, the optimal consistency for this slice is thick and dense. It needs to be formed and shaped into a baking tray and will not alter its appearance once during the baking process

The Weetabix is generally light anyway, so don’t be too concerned about the slice being too heavy. While the consistency when preparing the batter may be heavy, the lightness of the Wheat will make it an easy to enjoy treat

The yield in this recipe is pretty big. It will make at least 12 regular sized bars of Chocolate Slice. So, unless you are baking this recipe for a big group, or plan on gifting a lot of it to friends and neighbors (which is always recommended!) You’re going to have a lot of slice leftover. Look, that’s a good thing! But it is dangerous having a buttery, chocolaty treat that tastes this good just laying around the house

It’s so addictive that we just casually break off a bite or two whenever we pass through it in the kitchen. Before you know it, the day has gone, and you’ve eaten 2 slices worth! It’s such a delicious and easy to eat dish that it can be dangerous in the household! Oh, it also keeps for a good two weeks. So, unlike Cake that tends to go dry within 48 hours, this Chocolate Weetabix Slice is going to taste just as good a week later as it did the day you made it. Dangerous!

Chocolate Weetabix Slice with Coconut Recipe

Ingredients

  • 4 Weeatbix (or any Wheat Based Breakfast Cereal)
  • 1 cup of All Purpose Flour
  • ½ cup of White Sugar
  • 1 tsp. Baking Powder
  • 1 heaped tbsp. Cocoa Powder
  • 120g Butter
  • 30g Butter Spread (with Canola Oil)
  • ½ tsp. Vanilla Extract

Frosting Ingredients

  • 1 ½ cups of Confectionary Sugar
  • ½ cup Shredded / Desiccated Coconut
  • 4 tsp. Cocoa Powder
  • 25g Butter, cut into cubes
  • 2 tbsp. Boiling Water

Instructions

  1. Break up the Weetabix into small flakes and add it to a large bowl along with the AP Flour, White Sugar, Baking Powder, and Cocoa Powder. Mix well and then form a well in the center of the bowl
  2. Melt the Butter and Butter Spread in a separate bowl then slowly pour it into the well formed in the dry mixture bowl along with the Vanilla Extract. Once combined, mix well
  3. Grease a large sheet pan and then add the mixture, ensuring you press down to form a tight, compact texture. Bake in the oven pre-heated to 360F for 10 minutes
  4. While the slice is cooking, make the frosting by mixing the Confectionary Sugar, Coconut, and Cocoa Powder in a bowl. Add the cubes of Butter, then slowly add the Boiling Water. Mix well until a thick frosting forms
  5. Once the Slice is cooked, remove from oven and apply the frosting immediately, while the slice is hot. Sprinkle the top with more Coconut and once cooked, cut it into squares and enjoy

Recipe Notes

  • It will take some time to fully incorporate all the Butter into the mixture, so just keep mixing until fully combined. No extra liquid is needed even though it may feel like it
  • Make sure the frosting is thick and apply while it is still warm
