If you’ve made a proper Curry at home the chances are pretty high there will be leftovers. Definitely if you’ve made our Cauliflower and Eggplant Curry recipe then there will be leftovers. If so, this Vegetable Curry Naan wrap recipe is a perfect lunch or snack the next day. Good news is the Curry can keep for several days in the fridge, so buy yourself a big batch of lovely Naan bread from the store and you’ll be eating well for days!

Now you can keep this lunch ridiculously simple and just eat the curry with Naan Bread. It will be delicious. However, to kick up the flavor for this lunch we recommend adding a few additional condiments to make for the perfect meal. These Pickled Onions (recipe here) add a brilliant acidic kick and some lovely texture to the wrap. This Tamarind Chili Jam (recipe here) adds a sweet flavor punch that pairs extremely well with this basic Yoghurt sauce recipe we’ll share in the below recipe

I don’t know where to begin to describe the flavor in this dish. Every element packs a punch of different flavor profiles. What is amazing however is, while each flavor is so pronounced, they all seem to balance in perfect harmony in this delicious wrap

We have sweetness in the dish that’s brought in by the simply wonderful Tamarind Chili Jam. This Jam is rich in sugars, yet has a beautiful acidic bite brought on by the Tamarind – which is a popular acidic ingredient commonly used in Africa and Asian cuisine

Richness is brought to the dish care of the wonderful Vegetarian Curry which is made more luxurious by the addition of Heavy Cream right before serving. Of course it’s an authentic Curry, so you better believe there’s some heat in there too!

Finally, a big acid hit brings the whole dish into balance with the inclusion of our famous Pickled Onions. These simple Onions sit in Lemon Juice and are divine. They add a lovely acid to the dish as well as a beautiful crunch, which brings the whole wrap to life

Naan Bread has such an amazing texture and flavor to it. Well cooked Naan Bread has a delicious, charred flavor to it as it is cooked by an oven fire at an extremely high temperature. The texture is pliable, yet still thick, which makes it perfect as a vessel for holding a large quantity of filling for this dish

Most grocery stores should sell Naan Bread these days. If you can’t find any you can always head to specialty Indian grocery stores which will definitely stock some

While we recommend Naan Bread as the best choice, there are other bread choices you can use. There’s nothing wrong with the good old Tortilla for this dish. Just make sure you get the large Burrito Tortillas to hold all this wonderful filling! Another good bread option is Pita Bread. So, we know that whatever bread you can get your hands on, this dish will taste great

Vegetable Curry Naan Wrap Recipe

Ingredients

  • Leftover Cauliflower and Eggplant Curry (recipe here)
  • 2 large Naan Breads
  • ½ cup Greek Yoghurt
  • Juice of ½ a Lemon
  • Zest of ½ a Lemon
  • ½ tsp. Salt
  • ½ cup Cilantro, chopped
  • Optional – Pickled Onions (recipe here)
  • Optional – Tamarind Chili Jam (recipe here)

Instructions

  1. Begin by preparing your Yoghurt sauce by combining the Greek Yoghurt, Lemon Juice, Lemon Zest and Salt into a small bowl. Mix well and set aside
  2. Heat up your leftover Curry. Either nuke it in the Microwave or cook slowly in a saucepan. Either works, just be careful not to overcook it while re-heating!
  3. Lightly Toast the Naan bread either in a toaster or on the stovetop. 1 minute each side on medium heat will suffice
  4. Assemble your ingredients onto the Naan bread. Curry first, then Yoghurt sauce, Tamarind Jam, Pickled Onions, then finish with Cilantro
  5. Wrap it all up and, if you’re like us you’ve likely overfilled it so eat over a plate with some paper towels handy and enjoy!
