Who doesn’t love Croquettes? They’re like more sophisticated versions of Tater Tots. Filled with all kinds of delicious goodies, Croquettes are an absolute go-to order for us whenever we’re eating Tapas. They’re just so delicious. Our favorite is the classic Fish Croquettes which is what we’re serving up today

Luckily for us, we’ve found a super fun way to utilize the leftovers from our beautiful Smoked Trout Pie (recipe link here) and that is, of course, turning it into Croquettes! All the ingredients of the classic Smoked Fish Croquettes are built into that delicious pie, so if you have leftovers this is a really fun and easy snack to make

For this recipe we will reference our Smoked Fish Pie recipe which can be found here, however you can just as easily prepare this dish from scratch. Just pick up some delicious smoked fish from the supermarket such as Trout, Cod or Salmon. Make some mashed potatoes with butter and a little bit of cream, then mix in a bunch of Sharp Cheddar cheese and you’ve got the filling!

The Trout Pie filling for these Fish Croquettes is immensely flavored, and quite rich. We love rich food here at Dinnertime Somewhere so we wouldn’t expect the filling to be any other way! The combination of Mashed Potatoes, Cheddar Cheese, and Cream, make the filling quite dense and robust

Therefore, these Croquettes end up being quite a meal in themselves. Honestly, one or two is probably more than enough for a hearty lunch. Add 1 one more and you’ve got a decent dinner. I wouldn’t suggest eating many more than them!

Try pairing these beautiful Fish Croquettes with a light Salad. The contrasting flavors will work well in providing a more balanced meal and the acidic nature of Salad will cut through the richness of the Fish Croquettes very well

Deep Frying is an easy and tasty way to utilize Leftovers

There are so many Leftover dishes that benefit from being packed up in a different way and then deep-fried. It’s a fantastic method to add a fresh new twist to a dish that you’ve previously made. Deep Frying can easily transform an old meal into a fun and tasty treat, great for Appetizers or lunch!

In case you can’t tell, we’re big fans of deep-frying leftovers to create fun and new recipes. We’ve done plenty of them and had a great time doing so! Here’s a few of our favorite recipes that we’ve created using the deep-frying cooking technique:

There is no need to be apprehensive about deep frying food. With proper technique and a respect for the hot Oil, it is a very safe and easy way to cook. Here’s a few helpful tips to ensure safe and tasty deep frying

Do not overfill your Pot with Oil

We’d recommend at most filling your pot halfway up with Oil. Remember, when you add ingredients to the Oil the level will rise. The last thing you ever want is for the Oil to spill over the top of the pot into the hot flame below it. This would be quite dangerous

Be wary of placing ingredients with high water content into the hot Oil

Water has a very violent reaction with hot Oil. The Oil will immediately begin to boil quite aggressively, and the hot Oil will start to spit up into the air. This is not to say you cannot add watery ingredients to Oil, you just need to be prepared for the reaction. Provided your Oil is not too high in the Pot it will be very unlikely the spitting Oil will cause any issues

Just give it about 1 minute or so and the hot oil will settle down as the water is cooked out of the Oil. The main issue here is people aren’t expecting the violent reaction from the Oil. Be calm, it’ll settle down soon!

Always be wary and respectful of Hot Oil in a Pot

This one is common sense, but also a very good point to be made. At all times be aware that you have a pot on the stove that is anywhere between 300F – 400F in temperature. The Oil gets ridiculously hot for deep frying, so be sure to always respect it’s presence, and tell everyone who is entering the kitchen to be wary too!

Fish Croquettes Recipe

Ingredients

  • 2 cups of Trout Pie Leftovers (recipe here)
  • ½ cup All-Purpose Flour
  • 2 Eggs, beaten
  • 1 cup Breadcrumbs
  • 4-5 cups of Frying Oil (eg: Canola or Vegetable Oil)
  • Salt

Instructions

  1. Begin by preparing your mixing stations, which you will need 3 medium sized bowl for. The first bowl is filled with All-Purpose Flour, seasoned with 1 tsp. of Salt. Add the beaten Eggs to the second Bowl to create an Egg Wash, and the Breadcrumb to the third Bowl
  2. Create your Croquettes by forming the Cheesy Potato and Fish mixture into golf ball sized balls
  3. Coat each ball with Flour, Egg Wash and then finally the Breadcrumbs. The best technique is to use one hand for the dry ingredients and the other hand for the wet ingredients. Do this for each ball then set them aside
  4. Heat your frying oil in a medium sized pot to a frying temperature of between 350 – 375 degrees. Once at that temperature, carefully place the balls into the Oil. Do not overload the Oil as the temperature will drop too greatly and your Croquettes will become greasy
  5. Fry for about 5-6 minutes until the Croquettes are a beautiful golden-brown color. Once cooked, remove, and place on a wire rack and immediately season well with Salt. You’re now ready to serve!

These Fish Croquettes are delicious by themselves but even better with some tasty dipping sauce. Check out our Sauces page here for some great sauces, or you can simply serve with some Mayonnaise and they’ll taste delicious
