If there is ever a ‘Soup Season’, Fall definitely is it. Once the cooler weather starts to kick in there’s nothing better to warm you up than a big bowl of delicious Soup. There are so many wonderful Soup recipes to enjoy during Fall, but one of our favorites is a classic hearty Potato Soup. Those comforting flavors and rich texture make for a delicious meal for lunch or dinner. This is our recipe for an amazing Potato Soup with Garlic Scapes. It features all the hallmark flavors of a classic Potato Soup, with the addition of Garlic Scapes for even more beautiful flavors

How to make Potato Soup with Garlic Scapes

This is an easy dish to make at home. It only requires a few ingredients, yet the flavor that this Soup produces will make you think there’s a lot more going on. The core ingredients in the dish are the delicious Vegetable combination of Potatoes, Garlic Scapes, and Shallots, which are prepared slightly differently

We roast the Garlic Scapes and Shallots, which is always the best way to produce flavor from these vegetables. Oven Roasting the Scapes and Shallots will allow them to caramelize, which allows their natural sugars to come to the forefront of flavor

This is our simple recipe to make a delicious Potato Soup with Garlic Scapes

To Roast the Garlic Scapes and Shallots, simply prepare the veggies by peeling and slicing the Shallots and cutting the large Scapes into thirds (so they’ll fit nicely in a roasting pan). Then, give them a generous dousing of Olive Oil and Salt and roast for about 30 minutes until golden brown

The Scapes may take a little less time, so just check them periodically. Once the Scapes start to wilt and turn slightly dark in color they’re done

It wouldn’t be a Potato Soup without Potato!

While the big flavors in the dish come from those wonderfully caramelized Shallots and Garlic Scapes, the true hero of the dish is of course, the Potato. You can use any Potatoes you like – but Russet and Yukon Gold are preferred. They’ll break up well once cooked, making for a smoother consistency in your Soup

Prepare the Potatoes by peeling and dicing them. The dicing doesn’t need to be too fine, just cut them into chunks so they can boil easily, as that’s how we cook them. Boiling Potatoes works best for Soups as you get a beautiful texture and color

Add the chunks of Potatoes into cold water along with a generous amount of Salt (about 2 tsp. will do it), then bring to a Boil. They Potatoes will take about 10 minutes to cook. Once they’re tender and can be easily pierced with a knife with no resistance, strain them and add them into a Blender along with the Scapes and Shallots

The star of this dish is of course, the Potatoes. You can use any type you like, but we recommend Russet or Yukon Gold

Reserve about ¼ of 1 Potato for Garnish

AN optional step is to serve a little bit of Potato to use as a garnish. You can cut the cooked Potato up into small cubes and use them as a garnish to finish the Potato Soup. This is totally optional, but it does make for a lovely presentation

It’s a bit of a food photography trick that you should plate the dish with ingredients to make it obvious to the viewer what the dish is. A Potato Soup ‘technically’ could include anything in it based on its appearance. Adding a few chunks of Potato on top help the diner to know exactly what they’re eating. So, totally optional, but it does look nice as a final garnish!

Bringing the Soup together

Along with the Veggies, you want to begin introducing liquid to the dish. We do so right before the blending process by adding Broth / Stock to the Blender along with the Veggies. We always recommend using Broth instead of Water, and if you can, we highly recommend using homemade Broth

We’ve got a load of great homemade Broth recipes to choose from. They are a critical element of home cooking, and one of the ingredients that will easily transform recipes from home cooking into restaurant quality

For this dish you can use Chicken Broth or Vegetable Broth. Both will work well; however, we prefer Chicken Broth as it has a nice velvety texture. If you want to keep this dish purely Vegan then that’s easy too, just use Vegetable Broth!

Garlic Scapes in Potato Soup
Garlic Scapes make for a delicious alternative to regular Garlic. They are slightly sweeter, and with some Oniony elements

The Potato Soup calls for about 1 cup of Broth to be used. Add it to the Blender along with about 1 tsp of Salt and blend it all together until smooth (about 1 minute should do it). It is a good idea to prepare a little bit of extra Broth just in case the Soup is still a bit too thick

Broth is used to help smooth out the dish, so you can scale it up or down depending on the consistency you want in the Soup. Remember though, we will be adding some Heavy Cream to the dish too which adds more liquid

Final Step before it’s ready to serve

Once you’ve got a beautiful smooth consistency in your Potato Soup with Garlic Scapes, transfer it straight into a large saucepan. Bring to heat over a low heat and add in the Heavy Cream and stir well. We want to cook the Soup for about 10 minutes over a low heat to cook the Cream and get everything lovely and mixed

Be careful during this stage, as you don’t want to bring the Soup to a boil. Boiling the Soup at this stage is risky, as the Cream may curdle. So just use a low heat and stir constantly. Once it’s done, taste for seasoning and adjust if necessary. I like to add a bit more Salt at this point

Now that your Potato Soup with Garlic Scapes is done, it’s time to serve. What better way to serve a piping hot, warming Soup than with some delicious toppings. Toppings aren’t just there for looks either. They add some much needed textures to a Soup

The classic topping to a Potato Soup are some crunchy Croutons. We recommend making your very own Croutons using our recipe here. Homemade Croutons are so easy to make and are a great way to use old Bread before you throw it out

Crunchy Croutons add the best texture to Soup, so we recommend adding a generous amount of them to each bowl before serving! Along with the Croutons, if you’ve reserved some of that cooked Potato, now is the time to top the Soup with them!

Finally, we like to add some finely diced Garlic Scapes to the dish. They will add some beautiful color to the bowl as well as some sharp Garlic flavor. You don’t need to add too much, but we’ve found adding a little bit will create a beautiful flavor and finish to the dish

Potato Soup with Garlic Scapes Recipe

Ingredients

  • 3 Large Potatoes, Russet or Yukon Gold preferred
  • 4 Garlic Scapes
  • 2 Shallots, peeled and halved
  • 200ml / 7 oz. Heavy Cream
  • 1 cup of Chicken Broth or Vegetable Broth
  • 1 tbsp. Olive Oil
  • Salt

Equipment Needed: Blender

Instructions

  1. Peel and slice the Potatoes into chunks then add to a saucepan filled with cold water. Bring to a Boil and cook for 10 minutes until tender. Strain then place the Potatoes in the Blender
  2. Cut the Scapes into large pieces so they’ll fit easily on a sheet pan. Along with the Scapes, add the Shallots to the sheet pan. Drizzle with Olive Oil and ½ tsp. of Salt. Roast for 25 – 30 minutes until tender and slightly caramelized then add Vegetables to the Blender
  3. Add the Broth to the Blender along with 1 tsp. of Salt then blend on medium for 1 minute until smooth
  4. Transfer Soup to a large Saucepan. Add the Cream then cook over a low heat for 10 minutes, stirring often. Check for seasoning and adjust if necessary
  5. Serve the Soup into individual bowls and top with Croutons and some finely diced Garlic Scapes

Recipe Notes

  • For a nice presentation, reserve ¼ of the cooked Potatoes and cut into small pieces to use as a garnish
  • You may need to roast the Garlic Scape for a little less time. Just check them about halfway through and remove once they’ve started to caramelize, turning a light brown color
