It’s perfect for lunch or even a light dinner. You won’t be feeling heavy or bloated afterwards. In fact, you’ll be feeling great because not only is this Celery Soup Recipe light and healthy, it tastes amazing!

The perfect Recipe to deal with all that leftover Celery

If you are anything like us, you’re constantly throwing away Celery. This is not by choice mind you! We always have nothing but good intentions when buying Celery. Usually, we cook it as part of a flavor base for stews and sauces alongside it’s best friends, Carrots and Onions. The issue is, Celery comes in such massive bunches that we only really need about 20% of the Celery bunch at most for a meal

So that poor remaining celery will sit in the vegetables crisper for a week. Maybe two weeks. We might break off a stork or two for some more dishes in that time. However, inevitably one day you’re opening the vegetable crisper in the fridge and that Celery is looking nasty, and it gets thrown out. It’s such a waste

Therefore, why not make a tasty Celery Soup with that leftover Celery to put it to good use? This recipe uses quite a substantial amount of Celery. About 3 cups in fact, which is around 4-5 storks. It only requires very few additional ingredients, likely ingredients you also have available in the house. It’s such a delicious Soup too. Not only are you feeling good because you’re eating something healthy. But you’re not wasting food too!

There are four main ingredients that make up this Easy Celery Soup Recipe

This Celery Soup recipe is all about utilizing ingredients you likely already have in the house. The idea is to make this delicious soup using ingredients that potentially may get wasted otherwise

The primary ingredient is, of course, Celery! One of the most common ingredients used in cooking all over the world and readily available at every grocery store. Celery is not an overly flavorful vegetable and is primarily made up of water. Which makes it perfect for Soup. By giving the Celery a blitz after it’s been cooked will turn it into a lovely liquid. Perfect for Juice and, in this case, Soup!

Adding one Potato to the soup gives this recipe much needed body

As the Celery is quite watery, body is added to the soup by adding a Potato. We only add 1, so the predominant flavor will still be of Celery in this soup. What the addition of Potato does, however, is gives the soup much needed body

The Starch content in the Potato thickens up the soup slightly, making it feel a bit heartier and soup-like. Without the Potato you may as well be making hot Celery Juice! While only 1 Potato is needed, it is a critical ingredient to add to the Celery Soup

Cream is used in the Celery Soup, however, only sparingly as to not overwhelm the dish

This recipe does use Heavy Cream, however only a little bit (approximately 120 ml / 4 fl. oz.). So it can also be classified as a Cream of Celery Soup, albeit a light version. The Cream adds some more body to the soup as well as a velvety texture. We prefer to keep the prominent flavor in the soup to Celery and Potatoes. So, by adding just a little bit of Cream we can maintain that fresh Celery flavor, yet still benefit from the texture that Cream brings to the soup

Flavored Stock or Broth is the final key ingredient. Which one you chose is up to you

Whichever Stock you choose to use in this dish will change its final flavor, but the choice is yours to make! If you want to keep this recipe completely Vegan then obviously use Vegetable stock (and omit the Cream and Butter from the recipe below). We’ve got an awesome Vegetable Stock recipe which tastes amazing in this soup

Chicken Stock is the other Stock most used in Celery Soup. The Chicken Stock brings more body to the soup through the addition of the gelatin that is extracted from the Chicken bones when the stock is made. You’ll get a subtle Chicken flavor in the soup which is delicious. Celery and Chicken are a very good paring anyway, so that naturally comes through in the Soup

Beef and Lamb Broth are other good options to use. Really it depends on what flavor you are going for. You’ll get a slightly richer tasting broth if you use Beef or Lamb Broth. Similar to Chicken, both will yield a soup with more body than if you are using Vegetable Stock

Save those Celery Leaves for a Garnish

We told you we’re not wasting anything on this dish! Soup by itself can look a little bland in a bowl, so why not give your Celery Soup some much needed vibrancy by dropping a few Celery Leaves on the top right before serving

The leaves don’t really add a lot of flavor to the dish; however, they do look nice. They are also totally edible, so instead of throwing them away they make a great garnish

Additional Toppings

Alongside the Celery Leaves we like to add some roughly chopped Croutons to the Soup just before serving. For any soup it is a good idea to add something crunchy to the finish. Giving Soup contrasting textures helps to keep the eating experience a little more interesting with every bite

You can make your own Croutons if you like by shallow frying some Bread in a little Oil until golden brown. We just went for the store-bought stuff, which is pretty good quality. Especially if you can find some seasoned Croutons. The ones we used were Sea Salt flavored, which added a lovely surprise of saltiness to spoonful’s containing the Croutons

Finally, and this is an optional topping, you can add a spoonful of Sour Cream on top the Celery Soup right before serving. The Sour Cream adds a lovely creaminess to the soup. It also adds a little bit more of that creamy texture. So, if you want your soup to be edging more towards a traditional Cream of Celery Soup then adding Sour Cream on top is a great way to do so

Celery Soup Recipe

Ingredients

  • 5 Celery Sticks, diced
  • 1 Potato, peeled and cubed
  • ½ Onion, Diced
  • 4 Garlic Cloves, finely chopped
  • 3 cups Chicken, Beef, or Vegetable Stock (recipes here)
  • 120ml / 4 fl. oz. Heavy Cream
  • ½ cup Croutons, roughly chopped
  • 2 tbsp. Unsalted Butter
  • Salt and Pepper
  • Optional: 1 tsp. Sour Cream

Equipment needed: Blender

Instructions

  1. Melt the Butter in a Large Pot over medium heat, then add the Onions and Celery. Cook for 5 minutes, stirring occasionally
  2. Add the Garlic and cook for a further minute, then add the Stock and Potatoes. Bring liquid to a boil then drop the heat to low. Cover and simmer for 20 minutes
  3. Remove the lid and add Heavy Cream to the stock, along with 2 tsp. of Salt and 1 tsp. of Pepper
  4. Carefully pour the mixture into a blender and blend on medium for 2 minutes until smooth
  5. Pour the Celery Soup into serving bowls and finish with a sprinkling of Croutons and (optional) a dollop of Sour Cream. Serve hot

Note: After blending, the soup may still have some Celery Fibers. They’re totally edible and not too bothersome to eat. If you do want a super smooth texture you can strain the soup through a fine strainer and Cheesecloth before serving
