Heirloom Tomato Salad with Feta
When Heirloom Tomatoes are in season, they are one of the most flavorsome and wonderful ingredients. They taste so delicious on their own and require such little prep work, making them a great ingredient to cook with in the Summer. In this recipe we show you how to utilize this wonderful Tomato in a tasty Heirloom Tomato Salad with Feta. The dish is served with some finely sliced Red Onions and fresh Mint, then finished in a simple Sumac dressing. The result is a tasty Salad that’s a delicious side dish for any meal
We recommend Heirloom Tomatoes, but you can make this recipe with any type
It’s a very versatile Salad and you’ll enjoy it by using any type of Tomatoes. There isn’t going to be an adjustment to the recipe either, so you can simply choose your favorite Tomatoes and use them. What we recommend is to chop the Tomatoes into large chunks or wedges, so I’d steer clear of Cherry Tomatoes or anything like that
The dish is best enjoyed when Tomatoes are in season, which is typically late Spring and into Summer. During this time of the year Tomatoes are beautifully ripe and carry the most delicious flavor. You can, of course, make this Heirloom Tomato Salad with Feta all year round as Tomatoes are so plentifully available

How to make Heirloom Tomato and Feta Salad
With your ingredients sourced it’s time to make this wonderful Salad. The first step is to prepare the Tomatoes. Give them a good wash under cold water and then remove the core by cutting around the green stem at the top of the Tomato
Cut deep enough on a slightly diagonal cut all around so that you can simply scoop out the core in somewhat of a triangle shape. This technique is best done using a pairing knife. With the Tomato core now removed, cut it straight in half, and then quarters. If needed, you can cut again into 8th, just cut straight through the center every time so that you end up with wedge-shaped pieces
I like to keep the pieces quite large for this Salad, as they will balance better with the flavors of the dressing and Mint. We use 5 large Heirloom Tomatoes for this recipe, which is more than enough for 2 people, up to 4 people as a side dish to a larger dinner
Finely slice some Red Onions and then place them into a large bowl with the Tomatoes. Just leave them there as we prepare the dressing. Tomatoes are best served at room temperature, as they will have the best flavor this way

Make a simple Sumac-based dressing for the Salad
Sumac is a very commonly found spice from the Middle East. It has bright, citrussy flavors that make it a wonderful flavor to pair with Salads. We want to use about 2 tsp. of Sumac, which is placed into a small bowl or jar along with some Olive Oil, Lemon Juice, and Red Wine Vinegar. You can use White Wine Vinegar if you prefer
Add about ½ tsp. of Salt to the dressing and then give it a good whisk / mix to combine the ingredients well. I like to use a sealable jar in the kitchen when making dressings as you can simply place the lid on and give it a good shape
With the dressing prepared, pour it straight over the Tomatoes and mix through. Let the Tomatoes sit in the dressing for about 30 minutes to really soak up those flavors. You can give it another mix through to recoat the Tomatoes after 30 minutes
This step not only helps to get as much flavor into the Tomatoes as possible, but it also helps to take some of the sharpness off the raw Onions. So, make sure those Onions get a nice coating in the dressing as well

Finishing the dish and serving
The Salad is ready to go now, so it’s time to add the final touches. First, roughly chop about 1 cups worth of fresh Mint. We add the Mint at the very end so it’s nice and vibrant. Simply sprinkle the chopped Mint over the Salad and give it another stir to lightly coat the Mint in the dressing
The final step is to add the Feta Cheese. Now, we recommend using a crumbly dry Feta Cheese for this dish, so it keeps its structure when added to the Salad and doesn’t turn to mush. Greek Feta Cheese is typically a good choice here and it also tastes great
The Salad is now ready to enjoy. It’s a deliciously simple Salad that will pair wonderfully with any kind of protein or can be enjoyed on its own. The light dressing compliments the dish perfectly, allowing the beautiful flavors of those wonderful Heirloom Tomatoes to shine through
