Everyone needs a great Burrito recipe in their back pocket. There’s nothing more fulfilling to eat after a long day than a hearty Burrito, so it’s critical you’ve got a great recipe ready to go. Well, we’re glad you’re here, because our Easy Chicken Burritos is all you need from this day forward!
We have a couple of secrets (not so secret really) to perfecting amazing Chicken Burritos every time. This will guarantee a flavor packed, authentic tasting Burrito that can be prepared with minimal effort or hassle. Perfect for a cheap, mid-week dinner for the whole family

1. Our Easy Chicken Burritos love Chipotle in Adobo Sauce
This is the number one key ingredient in making a beautiful, Mexican marinade. The Chipotle in Adobo sauce adds a beautiful spicy, smoky flavor that will instantly transport you to Mexico City. It is such a powerful ingredient, so you do not need much, 1 tbsp. is more than ample to completely transform the flavor profile for our Easy Chicken Burritos
Add the classic Mexican spice combination of Cumin, Paprika, and Coriander Powder to the marinade along with some acid via Lemons (or Limes) and you’ve got a simple, yet powerful marinade that packs a might wallop!
2. For the deepest flavor, marinade your Chicken overnight
It goes without saying that the longer you allow the Chicken to bathe in that delicious marinade, the better the overall taste will be. Longer marinating time allows the flavor to seep deep into the Chicken, resulting in a much more concentrated flavor at the end
If you do not have time, it is perfectly fine to marinade the Chicken for 20 or so minutes before cooking. However, the purpose of our website is to inspire meal planning for the week so we would encourage you to put the Easy Chicken Burritos on the menu, then plan ahead to cook it. That way you can prepare the marinade the night before and enjoy the best flavor when it’s time to eat!
Another great hack we’ve got for marinating is to use Ziplock bags. Add your meat and marinade into the Ziplock bag, zip it up, smoosh it around then set it in the fridge overnight. There’s nowhere for the marinade to hide using this technique, so results in a much better end result
Furthermore, there’s no cleaning up required! Just throw out the bag once your done. Easy!
3. Chicken Thighs are the superior cut of Chicken
Controversial statement? Perhaps. True? Absolutely. Chicken Thighs, or ‘dark meat’ as it is sometimes referred to is a much more flavorful cut of meat. Being so close to the bone means there is more flavor. Chicken Thighs are also a much more forgiving piece of Chicken when it comes to cooking
Chicken Thighs are a lot easier to cook without becoming dry compared to a Chicken Breast. They are a little bit fattier, however if you are concerned about that you can trim off all the fat before marinating. For us, we like to keep some of it on there. Fat equals flavor you know!
4. Have some fun finding the best Salsa and Pico de Gallo for you
This is where your personality can really come through on the plate. Everyone has their own favorites when it comes to toppings, so we don’t want to be too prescriptive. When it comes to Pico de Gallo we’ve got two recipes that we would recommend you trying:
- Simple Pico de Gallo: The classic combination of fresh Tomatoes, Red Onion, Cilantro, and Lime Juice makes for a delicious Pico. There’s a reason this combination has been around for centuries, and it works perfectly in our Easy Chicken Burritos
- Mango Pico de Gallo: If you’re looking for something a little different we’d highly recommend trying our Mango Pico de Gallo recipe. The sweetness of the Mangos pairs great with the Chicken and adds a real tropical vibe to the Burritos. Delicious!

When it comes to Salsas we can only recommend heading to your local Latin supermarket and trying a few out. We love the Green Salsas and have been able to find some delicious ones at our local. Another plan could be to head out to your local Mexican restaurant and ask them for their recommendations. They may even have a few jars of their own recipe they’re selling!
Finally, to add body to the Easy Chicken Burritos we are making a simple Mexican spiced rice. We prefer rice over beans in a Burrito. Just a personal preference so if you’re a beans household, then replace the Rice with Beans. Easy!

Easy Chicken Burritos Recipe
Ingredients
- 2 lbs. Boneless, Skinless Chicken Thighs
- 6 – 8 Large Flour Tortillas
- 1 tbsp. Chipotle in Adobo Sauce
- 1 tsp. Cumin
- 1 tsp. Smoked Paprika
- 1 tsp. Coriander Powder
- Juice of 1 Lemon
- Juice of 3 Limes
- 1 tbsp. Olive Oil
- 1 cup Cherry Tomatoes, quartered
- ¼ Red Onion, finely diced
- ¼ cup Cilantro, roughly chopped
- 1 cup Jasmine Rice
- ½ cup of your favorite Salsa
- 2 tbsp. Sour Cream
- Salt
For the Mexican Spiced Rice
- 1 cup Jasmine Rice
- 1 tsp. Cumin
- 1 tsp. Smoked Paprika
- 1 tsp. Salt
Suggested accompaniments to the Easy Chicken Burritos
- Pickled Onions
- Mango Pico de Gallo
- 1 cup Romaine Lettuce, shredded
- 1 cup Shredded Cheddar Cheese
Instructions
- To make the marinade combine Cumin, Coriander Powder, Smoked Paprika, Chipotles in Adobo Sauce, Lemon Juice, Olive Oil, and 1 tsp. of Salt in a small bowl. Stir to combine well then add to a Ziplock bag with the Chicken
- Close the bag then massage the marinade well into the Chicken so all pieces are covered. Refrigerate for 2 hours, overnight preferably. Note: if you are preparing the marinade just as you are ready to cook – leave it for 20 minutes at a minimum to get flavor into the Chicken
- To create a simple Pico de Gallo, combine the Tomatoes, Lime Juice, Red Onion, 1 tsp. of Salt, and Cilantro into a bowl. Mix to combine well then set aside until you are ready to assemble your burritos
- To prepare the rice, add the Cumin, Smoked Paprika, and Jasmine Rice into a saucepan over medium heat. Toast for 2-3 minutes then add 1 ½ cups of Boiling Water. Reduce the heat to low, cover and simmer for 10 minutes. Turn off the heat and leave covered for a further 10 minutes. Add Salt and mix through with a wooden spoon just before serving
- To cook the Chicken, heat a large frying pan or Cast-Iron Skillet over medium heat. Add the Vegetable Oil then, once hot add the Chicken. Cook for 5 minutes, turn, and cook for a further 5 minutes until the internal temperature of the Chicken is 160 degrees. Set aside to rest then cut into bite sized pieces to serve
To prepare the Burritos
- I like to lightly char the Tortilla on the open stovetop. Hold the tortilla with metal tongs over the stovetop and char for 15 – 20 seconds on either side. This works on both gas and electric stoves
- Add your toppings, starting with the Sour Cream which you spread over the Tortilla. In no particular order, add your remaining toppings. Be careful not to overload the Burrito or folding it will be very difficult!

- Once rolled, an optional step is to place the burrito back onto the frypan for 30 seconds on either side before serving
