This is one of those recipes that you can really flex your creativity when it comes to plating. There are so many fun combinations to add to this simple, yet delicious Creamy Mushroom Toast to enhance the flavor and make it visually stunning

Creamy Mushroom Toast, otherwise known as Mushroom Crostini is a traditional snack / appetizer. It’s been around for centuries and loved by millions all over the world. You’ve got a super simple preparation of a quick pan-fry of your favorite Mushrooms, then throwing them onto a piece of bread. A classic breakfast if I’ve ever seen one

Then there’s the much fancier version of the Creamy Mushroom Toast Recipe requiring more ingredients – a lovely reduction of Cream and Mushroom Stock, then plated on some beautiful Crusty bread with an arrangement of toppings. This is what we’re preparing. The type of fancy Mushroom Toast you may expect at an event with wait staff bringing around beautiful trays of the stuff

Toppings for our Creamy Mushroom Toast Recipe

For our approach to the classic Creamy Mushroom Toast recipe, we’re preparing the dish three ways. The base of a beautiful Mushroom Sauce with a delicious range of wild Mushrooms is the foundation to these delicious toasts. The toppings, we’ve had a little bit of fun with some flavor profiles that we hope you will enjoy

Goats Cheese and Chives

The tartness of the Goats Cheese is a perfect contrast to the rich, creaminess of the Mushroom Sauce. Also, who doesn’t love putting a little bit of cheese on everything?

Pickled Red Onions

Our Pickled Onions recipe can’t be beaten. Delicious acidic Red Onions pair beautifully with the Mushrooms, and are visually stunning too

Wholegrain Mustard

Mustard adds such a beautiful sharpness to any dish, and this is no exception. The Mustard interacts very well with the Creamy Mushroom sauce, very likely because the sauce contains Dijon Mustard itself! The best Mustard – we highly recommend Maille Mustard from France. It’s amazing

Best Bread for the Creamy Mushroom Toast

The bread choice can be a personal preference. You can make the bread from scratch, however if you’re looking to save a bit of time buying some beautiful fresh bread from the bakery or supermarket is totally fine. The Toast do need to be quite flat however, so a flatbread or dense Pita Bread does work well for this recipe

Creamy Mushroom Toast Recipe

  • 1 Cup of Mushroom Stock (see recipe)
  • ½ Cup Rehydrated Mushrooms reserved from the Stock
  • 7 oz. (200 ml) Heavy Cream
  • 1 cup White / Button Mushrooms, sliced
  • 2 large Flatbreads
  • 4 Garlic Cloves, finely diced
  • 1 tbsp. Dijon Mustard
  • 2 tbsp. Unsalted Butter
  • Salt and Pepper

  1. Melt half the Butter into a saucepan or skillet over medium heat. Once Melted, add the White / Button Mushrooms, season with Salt, and cook for approximately 5 minutes until the juices have released and are beginning to evaporate
  2. Add the Garlic and Rehydrated Mushrooms and continue to cook for a further 2 – 3 minutes
  3. Add the Mushroom Stock, Heavy Cream and remaining Butter then bring to a simmer. Reduce the heat to medium / low so the sauce can reduce and thicken
  4. After about 10 – 15 minutes the Sauce should be of a consistency that can easily coat the back of a spoon. At this point, add the Dijon Mustard, stir then turn off the heat
  5. Let the Mushrooms sit for a few minutes and cool, which will thicken the sauce. The sauce needs to be quite thick so it won’t drip once applied to the toast. If it needs further reducing, just put it back onto low heat until it’s at your desired consistency
  6. Slice your Flatbread into even rectangles then toast until slightly crispy. You can either use a toaster, broiler or in a frying pan. For this recipe we used a frying pan
  7. Add a generous amount of Creamy Mushrooms evenly to your toasts, then finish with your desired toppings. We’ve used three variations which taste beautiful: Goats Cheese & Chives, Pickled Onions, and Wholegrain Mustard. Serve immediately
