First step is to source your Pork Belly. Now, Pork Belly can be found in abundance at pretty much every grocery store these days. If you cannot find any for some reason, then your specialty butcher will definitely have some

The key to making Bacon from Pork Belly is that you want a cut that isn’t going to be too large. We slice the Bacon right off the Pork Belly, so consider the size of the Bacon pieces you want to make when you’re buying the Pork Belly

The size of the Strips of Bacon that you cut from the Pork Belly shouldn’t really impact the cooking time, it’s more the thickness of the cuts that you make that will determine this. So, just source the appropriately sized piece of Pork Belly that’s going to suit your needs (and fit into your oven!)

Preparing the Pork Belly

Good news is there isn’t a lot of preparation you need to make Glazed Pork Belly Bacon. Unlike some of our other crispy Pork recipes, there’s no drying out of the skin required before cooking. In fact, for this recipe we don’t need the skin!

You can cut off the skin from the Pork before you begin slicing, or after you have cut the individual pieces of Bacon. I prefer the latter, because you will be able to slice away the skin without losing any of that precious fatty flavor a lot easier

The thickness of the Bacon slices you make is totally up to you. For our Glazed Pork Belly Bacon recipe, we’re cutting them thick, about ¼ inch thick pieces for that matter. When slicing the Pork, make sure you use a very sharp, large knife

Cut the Pork with the skin side facing down so you begin cutting into the flesh side. This will be a lot safer and prevent any potential accidental slips of the knife when cutting through the tougher skin section. Once you have cut your Pork slices it’s time to prepare them for roasting!

You can glaze the Bacon either with Honey or Brown Sugar, we tried both!

To get that beautifully caramelized, sugary glaze on the Honey you can either use Honey or Sugar. For this recipe we tried both to see which worked the best, and the results were quite surprising. Ultimately, the best result is using Brown Sugar, and we’ll tell you why

The Brown Sugar took double the time to caramelize over the Bacon compared to the Honey, which was a good thing, as it allowed the thick-cut Bacon to completely cook through, becoming wonderful and tender just as the Sugar had completely caramelized the outside

The Honey cooked a lot quicker, which was great if you’re in a hurry for Bacon (lets face it, who isn’t?) but it left the thick-cut Bacon a little tougher to eat. The flavor of both was almost identical, you really couldn’t taste the difference between Honey and Sugar when used as a glaze for Bacon

So, our final recommendation is to use Brown Sugar as your glaze when making glazed Bacon at home if you are using thick-cut pieces of Bacon (¼ inch thick). If you are using regular Bacon, I would recommend glazing with Honey, as the cooking time for the Honey to completely caramelize will be less

How to glaze and cook the Bacon

This is going to get a little messy, so you will need to place your Bacon pieces on a wire rack that sits over a sheet pan. I’d recommend lining the sheet pan with foil to avoid any of the glaze burning your pan if / when it drips off the Bacon

Elevating the Bacon on a wire rack not only helps to cook the Bacon evenly, but it’ll stop melted Sugar from getting all over your oven!

Season the Bacon then generously cover the exposed side with Brown Sugar. I recommend using quite a lot, more than you think you should to ensure a full and even coverage of the Bacon. Then place the tray in the oven and Roast for 20 – 25 minutes at 375F until the Bacon is wonderfully caramelized with a dark-brown color

You don’t need to flip the Bacon halfway through and glaze the other side. This will just create so much mess, and I find that glazing one side is more than enough. You’ll achieve a delicious flavor and wonderful texture this way, and it makes for a lot easier cooking

How to enjoy Glazed Pork Belly Bacon

We made this Bacon in our attempt to re-create the famous Au Cheval Burger. I’m not sure if they use Sugar or Honey for their glaze but based on our results I’m pretty sure it’s Sugar. The Bacon is finished with some freshly cracked Pepper right before serving

Glazed Pork Belly Bacon Recipe

Ingredients

  • ½ lb. Pork Belly
  • 3 tbsp. Brown Sugar
  • Salt and Pepper

Instructions

  1. Place the Pork skin-side down on a flat cutting surface and then cut it into even strips about ¼ inch thick. Remove and discard the skin / rind from each piece
  2. Place the Bacon pieces on a wire rack that’s elevated over a sheet pan covered in foil. Season with Salt and Pepper then generously add Brown Sugar to the exposed side. Ensure even coverage over the entire Bacon
  3. Place the Bacon in the Oven at 375F and roast for 20 – 25 minutes until the Bacon has cooked and caramelized into a wonderful dark-brown color
  4. Remove Bacon from oven and serve

Recipe Notes

  • You can enjoy the Bacon hot or cold
  • Try this recipe using regular sized Bacon and glaze it with Honey instead of Sugar. The Honey doesn’t take as long to cook, so it works perfectly for regular sized Bacon slices
