Chocolate and Pistachio Brownies
These delicious Chocolate and Pistachio Brownies are the perfect treat to make at home. They’re so easy to make, and their gooey, chocolatey flavor paired with the sweetness of Pistachio nuts makes for a delicious bite. Brownies are one of the most versatile and simple desserts to make at home, which makes them a hit in our household. Only 10 mins of prep time and 20 minutes baking time and you’ll have a delicious batch of Brownies that will easily serve 4 – 8 people
Pairing Chocolate and Pistachios is a winning combination
The pairing of Chocolate and nuts is very common in sweet dishes and desserts. The most commonly paired nut is typically Peanuts. The classic combination of Peanuts and Chocolate is loved universally; however Pistachio nuts are an often slept-on alternative which pack a punch of flavor
I love Pistachio nuts, with their sweet, nutty flavor that makes them so easy to use in cooking. For this recipe we are using roasted Pistachio nuts, which are likely the most found Pistachio nuts you can get your hands on in the store
Preparing the Pistachio Nuts is what will take the most time with this dish, as each of them needs to be removed from their shells before being set aside, ready to be incorporated into the wonderful Chocolate Brownie batter. To remove the nuts, just use your nails to tear apart the shell and out will come the wonderful Pistachio. I recommend sneaking a handful or so as you’re preparing the Brownies too, for research purposes of course!

How to make Chocolate and Pistachio Brownies
Brownies are so easy to make, and there’s nowhere near the level of complexity in their preparation when compared to other desserts. Simply make a delicious batter of combining wet ingredients first (a combination of Butter, Sugar, and Eggs, along with some Vanilla Extract), then add the dry ingredients
The dry ingredients for these Brownies is a very classic combination of Flour (AP Flour is fine), Baking Powder, and Cocoa Powder. Once all the dry ingredients are incorporated well into the batter (we recommend using a whisk to avoid any lumps forming), then in goes the Chocolate and Pistachio Nuts
Always use Dark Chocolate when making Brownies. They will carry a much richer, more indulgent flavor, and is what gives Brownies their famous rich Chocolatey flavor. When adding the Chocolate to the batter, be careful not to whisk it too heavily. Just fold it in with a Spatula until the Chocolate is fully incorporated along with the Pistachio nuts and it’s time to bake
Baking the Brownies
The total cooking time for these Chocolate and Pistachio Brownies is about 18 – 20 minutes at 360F (180C). To prepare the Brownies for baking, line a baking tray (with relatively high sides) with parchment paper and then pour the Brownie Batter directly into the pan
Smooth the batter out to ensure an even surface layer forms. This is important, as it will ensure an even cooking of the Brownies. The quantities in this recipe is enough to produce about 12 ‘regular’ sized brownies, so we recommend using a medium sized baking tray

If you find that the Batter is too high, or on the flip side, doesn’t spread out far enough to reach the edges, then use a different sheet pan. You want the batter to easily reach the sides, but not be too high
Once your batter is in, place it in the middle rack of your oven which has been pre-heated to 360F and bake for 18 – 20 minutes. At the 18-minute mark we recommend checking the doneness by pricking the Brownies with a skewer
If the skewer has a small amount of Brownie batter sticking to it, then it’s done. If the skewer is almost completely covered with batter, leave it in for a few more minutes before testing again. The best Brownies are those that are just slightly gooey on the inside, so a little bit of batter sticking to the skewers is exactly what we want
Allow the Brownies to cool at room temperature before slicing and serving
Always the most difficult part of baking is this part. Waiting for it to cool before eating it! Unfortunately, you’ll need to wait about 20 minutes before you can dive into your Chocolate and Pistachio Brownies. Leave the Brownies to cool in the tray. The residual heat of the tray will continue to slowly cook the Brownies, ensuring they’re completely done by the time you remove them from the pan
The cooling process also ensures that the Brownies won’t simply fall apart when you remove them from the pan. They’ll be piping hot as soon as they come out of the oven, so allowing them to gradually cool will make removing them from the pan and slicing them a lot easier

You can’t beat pairing Chocolate Brownies with Vanilla Ice Cream
In my opinion there’s just no batter combination of flavors than Chocolate Brownies with Vanilla Ice Cream. This recipe is no exception. Cut off a couple of squares of the Chocolate and Pistachio Brownies and serve them with 2 generous scoops of Vanilla Ice Cream
If the Brownies are still piping hot out of the oven, the Ice Cream will begin to melt and form a delicious gooey mess in the bowl which is irresistible! Get your hands on some good quality Vanilla Ice Cream and this pairing of flavors will be amazing
We recommend chopping up a few extra Pistachio Nuts and using them as a garnish. The Brownies themselves will be loaded with whole Pistachio Nuts, but adding some nicely chopped Pistachios over the Ice Cream adds a nice flavor and texture to finish off this delicious dessert!

Chocolate and Pistachio Brownies Recipe
Ingredients
- 100g Unsalted Butter
- 1 cup of White Sugar
- 2 Eggs
- 1 tsp. Vanilla Extract
- ¾ cup of All Purpose Flour
- 1 tsp. Baking Powder
- ½ cup Cocoa Powder
- 100g Dark Chocolate, roughly chopped
- 70g Shelled Pistachio Nuts
Instructions
- Melt the Butter in a saucepan then turn off the heat and add Sugar and whisk to dissolve. Add the Eggs and Vanilla Extract and whisk well
- Add the Flour, Baking Powder, and Cocoa powder into the saucepan and whisk well to fully incorporate, removing any lumps as you go
- Fold in the Chocolate and Pistachio nuts using a spatula to incorporate, then pour into a sheet pan lined with baking paper
- Bake for 18 – 20 minutes at 360F. Remove when only a small amount of batter stick to a skewer when pressed into the Brownies
- Remove from oven and allow to cool in tray for 20 minutes before slicing and serving

- You can swap out the Pistachio nuts for other types of nuts including Walnuts, Almonds, or Peanuts
- Store the brownies in a sealable container or Ziploc bag along with a paper towel to help the Brownies retain their moisture
