Spring is finally here, as many of you are surely breathing a sigh of relief! The weather is starting to warm up, and the recipes are still flowing out of the Dinnertime Somewhere kitchen! The Meal Plan for March 17 is a celebration of Springtime, with some lighter dishes that are great to eat on these warmer days coming up

A Greek Classic Dish kicks off the weekly meal plan

Greek cuisine is so amazing, and one of our all-time favorite Greek Dishes is the almighty Lamb Souvlaki. It’s got many names, Lamb Wrap, Gyros, or Souvlaki. Whatever you want to call it, it tastes amazing. Beautifully marinated pieces of tender Lamb sliced and served with an array of delicious vegetables in a Pita Bread Wrap

For a true authentic Greek Lamb Wrap experience, you absolutely need to include French Fries in the wrap! They add a lovely crunchy texture and taste to the wrap. If it was up to us we’d follow the Greeks approach to food and put French Fries in everything!

Asian Pork Lettuce Wraps are our Healthy dish of the week

Another dish that has a unique name depending on where you’re eating it in the world. Beautiful ground Pork that has been cooked in Asian sauced and spices then placed into a hearty lettuce leaf. It’s an awesome, lighter meal that is perfect for these warmer days coming up ahead

One thing we can assure you about these Lettuce Wraps is the sauce that this recipe creates is unbelievable. Make a large batch of it and store it in the fridge for a couple of weeks. It’ll last a while, and the sauce is great to use in other classic Asian dishes such as stir fries

A Fun and Interesting Dish that pays respect to a famous fast-food chain from NZ

Outside of the typical fast-food joints, New Zealand has an amazing Burger chain called Burger Fuel. They have plenty of delicious burgers but one of their signature dishes, and our personal favorite is their Bacon Backfire Burger. Their delicious Chicken based burger / sandwich has some unique ingredients that may seem weird, but taste so good

The Burger is filled with a beautiful Tomato Relish, an Aioli, and the usual suspects you’d expect to find in a Burger such as Lettuce, Tomato, and Onion. What is unique about the Bacon Backfire, however, is the inclusion of Brie Cheese! The Brie adds a delicious, creaminess to the Burger that pairs perfectly with the Chicken and Bacon

Rounding out the week – the perfect use for that one ingredient we always seem to have in the fridge

What is it about Celery? You buy it in those massive bunches from the grocery store but never ever get through it all. Most dishes require 1-2 storks at most, so what do you do with all that leftover Celery that’s just sitting in the refrigerator? This amazing Celery soup is what!

This is a light soup that is perfect for warmer weather. Not only that, but it has so few ingredients that you’ll be able to whip this up whenever you want with ingredients you’ll very likely have readily available in the fridge or pantry

No longer will you see half a celery bunch being thrown in the garbage when there’s Celery Soup to be made from it!

Full List of Ingredients

  • 3 lb. Lamb Shoulder
  • 1.5 lbs. Chicken Breast
  • 2 lbs. Ground Pork
  • 12 Bacon Rashers
  • 4 large Hamburger Buns
  • 1 cup of French Fries
  • ½ cup Croutons
  • 3 cups Chicken, Beef, or Vegetable Stock (recipes here)
  • 1 cup of Pickled Onions (recipe here)
  • 2 thin slices of fresh Ginger
  • 1 Garlic Bulb
  • 1 ½ Red Onions
  • 8 large Romaine Lettuce leaves
  • 1 cup Button / White Mushrooms
  • ½ cup Scallions
  • ½ cup Cilantro
  • 1 cup Romaine Lettuce
  • 8 large Romaine / Cos Lettuce Leaves
  • 4 large Tomatoes
  • 5 Celery Sticks
  • 1 Potato
  • Juice of 3 Lemons
  • Zest of 1 Lemon
  • 1 handful of Mint
  • ¼ cup Peanuts
  • 3 ½ tbsp. Soy Sauce
  • 2 tbsp. Chinese Black Vinegar
  • 1 tsp. Oyster Sauce
  • 1 tsp. Mirin
  • ½ tsp. Szechuan Peppercorns
  • ½ tsp. White Sugar
  • ½ tsp. Fennel Seeds
  • 1 tsp. Chili Crisp in Oil
  • ½ cup Tomato Relish
  • 1 cup Greek Yoghurt
  • ½ cup Kewpie Mayonnaise (you can substitute for regular Mayonnaise)
  • 150g / 5 oz. Brie Cheese
  • 120ml / 4 fl. oz. Heavy Cream
  • 1 tsp. Sour Cream
  • 2 tbsp. Unsalted Butter
  • Salt and Pepper
