It’s back to basics this week with our Meal Plan for February 11. A few of our all-time favorite dishes which are simple to make and taste phenomenal. Around this time of the year that’s what you’re after when it comes to a good meal. Not too much fussing about to make. However, it’s got to taste amazing and be nice and hearty

The good news is we’ve got you covered on all those mandatories! Delicious Food. Easy to make. Super Hearty to eat. So, lets jump in!

An Epic Cook Up for one of our all-time favorites

That’s right, we’ve got the simply amazing Crispy Pork Belly Recipe up this week for our Epic Cook Up. It’s a super fun one to make and we’ve got the secret to guarantee you perfect Crispy Skin every single time. The trick is to leave it in the refrigerator, uncovered for at least 2 days before cooking. This process significantly dries out the skin, leaving it beautiful and crispy once you roast it in the Oven on a super high temperature

You can eat it with some delicious sides and Amazing Sauces (try our unbelievable Apple Sauce recipe if you want to truly blow minds with flavor. It also pairs exceptionally well with our delicious Heirloom Tomato Salad!

A Fresh Tomato Salad to pair with the Pork, or to eat as a stand-alone meal

The star of our Heirloom Tomatoes with Stracciatella dish is indeed those beautiful Heirloom Tomatoes. So big, juicy, and bursting with rich Tomato flavor. They are the Rolls Royce of Tomatoes, and we love cooking with them

 This recipe is completed with a delicious, but scarcely used ingredient known as Stracciatella. Stracciatella is basically Burrata Mozzarella Cheese, just the inside gooey part. Yeah, so the best part of the Cheese really! It pairs well with the Tomatoes in this acid-forward dish. You’re guaranteed to love it as much as we do

There’s only every one dish to make with leftover Roast Pork – A Cubano Sandwich of course!

Cubano Sandwiches are up there with one of our favorite Sandwiches of all time. The leftover Pork Belly meat makes for one hell of a tasty Cubano Sandwich. Get yourself some lovely fresh Bread and stuff it with the Pork Belly, some Ham, Pickles, Cheese, and Yellow Mustard and you’re in sandwich heaven!

Wrapping up the week is everyone’s favorite – Homemade Chicken Burritos

You simply need this recipe in your arsenal. Homemade Chicken Burritos should be the go-to recipe for everyone at least once a week when it’s dinnertime. This is our Easy Chicken Burrito recipe which can be whipped up in no time at all and tastes phenomenal

We’re not fussy about what fillings you put in your Burrito. Use whatever delicious food you’ve got in your pantry, and it’ll taste amazing. The key to this delicious Burrito is in the marinade, where we use the amazing Chipotles in Adobo Sauce. It’s a life changer, and so are these Burritos!

  • 2 lbs. Pork Belly
  • 2 lbs. Boneless, Skinless Chicken Thighs
  • 4 slices of Ham
  • 6 – 8 Large Flour Tortillas
  • 2 large Bread Rolls
  • 1 cup Jasmine Rice
  • 4 Large Heirloom Tomatoes
  • 1 cup Cherry Tomatoes
  • 1 large Nectarine
  • 1 Red Onion
  • 1 Lemon
  • 3 Limes
  • 2 Garlic Cloves
  • 4 Sprigs of Thyme
  • ½ cup Parsley
  • ¼ cup Cilantro
  • 8 large Pickle slices (in brine)
  • 1 tbsp. Szechuan Peppercorns, ground
  • 1 tsp. Fennel Seeds, ground
  • 2 tsp. Cumin Seeds, ground
  • 1 tsp. Smoked Paprika
  • 1 tsp. Coriander Powder
  • 1 tsp. Onion Powder
  • 1 tbsp. Chipotle in Adobo Sauce
  • 2 tbsp. Yellow Mustard
  • 2 tbsp. Sour Cream
  • 8 oz. / 220g Stracciatella Cheese
  • 4 slices of Swiss Cheese (eg: Gruyere or Comte)
  • 1 tsp. Red Wine Vinegar
  • 1 tbsp. good quality Olive Oil
  • 3tbsp. Unsalted Butter
  • Salt and Pepper
