Mustard Pickle Sauce
This simple yet amazing Mustard Pickle Sauce is so versatile. It’s just as comfortable being drizzled over your favorite Potato Salad as it is served as a Sauce to pair with some beautiful fried Pork Chops. The Sauce uses two types of Mustard, Dijon and Seeded so it’s not crazy hot, making it a versatile choice for every palate. The pairing of Pickles (both chopped and using Pickle Juice) gives the Sauce a beautiful sharpness and brininess that makes it a wonderful pairing for rich foods. We love good Sauce dishes here at Dinnertime Somewhere. In fact, we’ve got a whole dedicated section of the website here dedicated to the craft of sauce making. Many Sauces can be quite complex to make, involving preparing Stocks and Broths, or cooking down flavors in a pan before adding liquids
In this Mustard Pickle Sauce, however, there’s none of that. Simply combine a bunch of tasty, everyday ingredients together and it’s done. Ok, there’s a slight bit of prep work involving cutting up some Shallots and Pickles and yep, a bit of measuring too, but all in all the dish is going to be ready in under 10 minutes

The quality of the ingredients is key to a great Mustard Pickle Sauce
With no cooking involved in this recipe, the flavor of the Sauce is going to heavily rely on the quality of the ingredients you use. Primarily, the key ingredient is Mustard. So, I highly recommend not skimping on quality when it comes to Mustard
In general, this is a good idea, as I find the range in flavors of Mustards does vary greatly, and quality makes a huge difference. Our recommendation is to use either Maille Mustard or Grey Poupon Mustard. Both French Mustards that may cost a little extra, but they’re well worth it. Good news is these Mustard brands are very popular and easy to find in most grocery stores
If you can’t find these brands, then we recommend trying what you like. As with any dish, it only tastes good if you think it does so whatever your favorite Mustard is will work great in this Mustard Pickle Sauce

We used Bread and Butter Pickles in Juice
It’s always a good idea to have a big jar of Pickles in the refrigerator ready to go. We mainly use these delicious Pickles for Burgers, but it turns out they’ll taste amazing in a Mustard Sauce too! We used Bread and Butter Pickles that are already sliced, and 6 of them was enough for the recipe
The Pickles themselves are stored in that beautiful, briny Pickle Juice, which is another key ingredient to the dish. The addition of Pickle Juice as well as Pickles gives the Sauce a vibrant, sharpness that perfectly offsets the richness of the Mustard
The Pickle Juice is the last ingredient to be added to the Sauce, which helps you to perfectly balance out the flavors to your preference. Start by adding a little bit of Pickle Juice then tasting it, adding more until you’re happy with the final flavor
How to make Mustard Pickle Sauce
This dish couldn’t be simpler to make. There’s no cooking involved, and all you need to do is mix a bunch of ingredients together to make this wonderful Sauce. Begin by preparing the Shallots and Pickles, which will need to be finely diced. The addition of Shallots and Pickles gives the Sauce some nice texture and body, which works great

Next step, combine the Dijon Mustard, Seeded Mustard, Red Wine Vinegar, and Olive Oil into a bowl and whisk well to emulsify. If you can, I recommend getting some sealable glass jars. They’re perfect for making Sauces such as this one. Simply seal the Jar and shake well and your Sauce will be perfectly combined
The final step is to simply add the Shallots, Pickles, Salt, and Pickle Juice to the Sauce. As mentioned above, I recommend adding a little bit of Pickle Juice at the start and tasting as you add more until the perfect balance of richness and sharpness is achieved
How to enjoy your Mustard Pickle Sauce
The perfect pairing for this sauce is in a classic Potato Salad. Try boiling the Potatoes until tender and then allow them to cool. Mix in a few generous spoonful’s of the Mustard Pickle Sauce and season with some more Salt and you’ve got a perfect German-style No Egg Potato Salad
I also love enjoying this Mustard Pickle Sauce with fried proteins. Try pairing the Sauce with some beautiful, pan-fried Pork or Chicken for a beautiful pairing of flavors. It’s also great with shallow or deep-fried foods, particularly Schnitzels!

I have also found that this Sauce works great as a Salad Dressing. Try using it sparingly with your favorite leafy green salad as a dressing and see how it turns out. Mustard is a very common ingredient used in salad dressings so this sauce will be no exception
If you prefer you can make the Sauce in advance and store it in the refrigerator. It’ll likely keep for a few days in there, but to be safe I recommend using it within 24 hours of preparing it for the best result

Mustard Pickle Sauce Recipe
Ingredients
- 1 tbsp. Dijon Mustard
- 1 tbsp. Seeded Mustard
- 2 tbsp. Olive Oil
- 1 tbsp. Red Wine Vinegar
- ½ Shallot, finely diced
- 6 Pickle Slices / ¼ cup of Pickles, finely diced
- 1 tbsp. Pickle Juice
- ¼ tsp. Salt
Instructions
- Whisk the Dijon Mustard, Seeded Mustard, Olive Oil, and Red Wine Vinegar in a bowl to combine
- Add the remaining ingredients and stir well to incorporate. Allow to sit for 5 minutes. Taste for seasoning and adjust if required then serve
Recipe Notes
- The Sauce can be prepared in advance and refrigerated before use. Recommend that you use the Sauce within 24 hours of preparing it
- You can add some fresh Herbs to the Sauce for some vibrancy. Finely chopped Dill, Tarragon, or Parsley work great
This delicious Mustard Pickle Sauce is the perfect accompaniment to a beautiful piece of pan-fried protein. It pairs great with crumbed and fried dishes such as Schnitzels, and it’s also just as home being poured over a Salad or topping a Potato Salad
