The key to flavor in this Garlic Anchovy Mayonnaise is the Garlic

There is so much amazing, sweet flavor you can extract out or Garlic by simply roasting it. The Garlic turns from it’s bitter, spicy flavors when eaten raw to a rich, indulgent sweet flavor when roasted. It will also turn into a paste-like consistency, making it perfect for easily incorporating into a Mayonnaise

The preparation of the Garlic is the most important part of this dish. Roasting it in the oven will take about 1 hour. The good news is that roasting Garlic is so easy to do! Simply cut the very top of the Garlic Bulb off so that the inner flesh is slightly exposed. Wrap the whole bulb in foil (skin and all) with that exposed flesh facing upwards

Before you completely seal the Foil, pour in about ½ tsp. of Olive Oil and a pinch of Salt into the Garlic so that it can get absorbed by the flesh. Seal the whole thing tightly and then roast in the oven at 375 for 1 hour. There’s nothing else to do. Just let it do its thing and go about your business for the next hour!

Roast the Garlic for an hour in the oven to get it beautiful and tender. It will add a rich, sweetness to the sauce

Once the Garlic is cooked, remove it from the oven and allow it to cool. You can carefully remove it from the foil if you like, but I’d recommend leaving the Garlic for at least 30 minutes before attempting to peel the skin away. Behind that skin (which you discard) is that wonderfully cooked Garlic flesh. Rich, and sweet, it’s the perfect flavoring for our Sauce

Allow the Garlic to cool before adding it to the Mayonnaise with the remainder of the ingredients. You can prepare the Garlic in advance and refrigerate it until you’re ready to make the Garlic Anchovy Mayonnaise

Anchovies in Sauce? You better believe it!

Garlic Anchovy Mayonnaise with White Anchovy
For this recipe we recommend using Red Anchovies which come in a jar. We just added some White Anchovies for a fun visual effect, but it’s not really needed!

There are few ingredients that polarize a community more than Anchovies. Perhaps even more of a heated debate than Pineapple on Pizza is the opinion about Anchovies on any kind of food. Well, here at Dinnertime Somewhere we love them (we also love Pineapple on Pizza! Deal with it). Anchovies add a beautiful salty, briny flavor to dishes, and they are simply amazing when paired with the richness of Mayo and Garlic in this sauce

There are two types of Anchovies that you can use when making Garlic Anchovy Mayonnaise, and it really comes down to personal preference. The two types of Anchovies are White and Red. Even though we’ve used a White Anchovy in some of the photos for this recipe, we recommend using the Red Ones. They typically come in jars and are swimming in a brine or Olive Oil. They have a wonderfully salty flavor, and act more like a seasoning than an actual protein in a dish

To prepare the Anchovies, simply chop them up into very small pieces and add them into a bowl along with the Mayonnaise and Roast Garlic. Given the high Salt content of the Anchovies, you won’t need to add anymore Salt

Adding Anchovies to Sauce
We recommend adding the Anchovies a few at a time and tasting as you go. All Anchovies will have different strength levels, so it’s best to test before you possibly add too many!

How many Anchovies should you add to the Sauce?

Different Anchovy brands you buy will have varying Salt levels in them. This is due to the curing process when the Anchovies are caught and prepared for packaging. So, it’s kind of difficult to specifically tell you how many Anchovies to add, as they will also taste a little different

My recommendation is to chop up a couple and add them to the Sauce. Give them a good mix through and then taste. Add more as you go and continue to taste until you’ve got the right flavor for your palate. Remember, we’re pairing Anchovies with two very fatty, sweet ingredients in the Roast Garlic and Mayo, so you’ll likely need to add a fair bit

For our Garlic Anchovy Mayonnaise Sauce, we ended up using 5 Red Anchovies, to 1 Bulb of Garlic and about 1 ½ tbsp. of Mayonnaise. This isn’t a rule of thumb quantity; however, you can use it as a guideline for some rough estimates on how many Anchovies to add. Again, taste as you go until you have the right balance of sweetness and saltiness

What are some dishes to serve with Garlic Anchovy Mayonnaise

This sauce is extremely versatile and can be enjoyed with so many wonderful dishes. We whipped this Sauce up to enjoy as part of a fun Chicken Sandwich recipes we are working on. The dish takes classic elements of a Caesar Salad and turns them into a Burger. It honestly tasted amazing, with this Mayo being the ingredient that really tied the whole thing together. You can enjoy Garlic Anchovy Mayonnaise with loads of delicious dishes, such as using it as a sauce for Burgers and Sandwiches

Of course, you can use this sauce as a replacement for dressing in a more traditional Caesar Salad dish. Honestly, it tastes a whole lot better than Ranch Dressing too, so if you’re big Ranch fans then we highly recommend you give this a try

Garlic Anchovy Mayonnaise Recipe

Ingredients

  • 1 Garlic Bulb
  • ½ tsp. Olive Oil
  • 5 Red Anchovies, finely diced
  • 1 ½ tbsp. Mayonnaise
  • Pinch of Salt

Instructions

  1. Slice the top of the Garlic Bulb off to slightly reveal the flesh inside. Wrap the Bulb in foil, leaving the top part exposed. Pour in Olive Oil and Salt, then seal up with foil
  2. Roast Garlic in the Oven at 375F for 1 hour. Remove and allow to cool before peeling and discarding the skin. Place flesh in a small bowl
  3. Add 3 of the chopped Anchovies and Mayonnaise to the Bowl and mix well. Taste for seasoning, adding more Anchovies if needed until a nice balance of sweet and salty is achieved

Recipe Notes

  • For a nice alternative, try using Japanese Kewpie Mayo instead of regular Mayo. It is slightly sweeter, and has an amazing taste overall
  • The number of Anchovies required will differ, as each brand of Anchovies has different Salt levels to them. So, just add a few and taste as you go
