Roasted Spanish Potatoes
These delicious Roasted Spanish Potatoes are a fantastic way to jazz up a simple Potato side dish. They have some similar style to a Potatoes Gratin, but that’s about as much similarity as the two have. There is no ‘layer’ of the Potatoes like a Gratin, you simply combine the Potatoes with a wonderful mixture of Onion, Olive Oil, Garlic, Salt, and Pepper in the pan before roasting them in the oven. They’re a fantastic Potato Side Dish that requires minimal effort, yet taste amazing
How to make these tasty Roasted Spanish Potatoes
This dish is so simply and requires everyday ingredients that you’ll be able to find at any local grocery store. The dish starts by preparing the Potatoes and Onion. Now, for a dish like this you may think you need a Mandoline to finely cut the Potatoes. Good news is this isn’t required!
In fact, I’ve found that using a Mandoline can often cut the Potatoes so finely that they end up becoming so packed tightly in the pan that they take forever to cook. No, for this dish we simply use a heavy, sharp knife to cut the Potatoes and Onions finely

Just take your time prepare the Vegetables, as this is probably the only real ‘challenging’ step in the dish. I say that with quotation marks as it’s not really all that challenging anyway! In fact, if you stuff up a few slices of Potatoes or think you’ve cut them too thick it won’t matter at all. Just cook them until they’re tender and the dish will still taste amazing
Once your Potatoes and Onions are prepared it’s time to mix in the remaining ingredients
The remaining ingredients is a simple combination of finely diced Garlic (about 4 Cloves is the sweet spot), some Olive Oil, then finishing it off is a generous amount of Salt and Pepper. That’s it! The simplicity of these ingredients is what makes this rustic dish so good. Nothing fancy, just a classic pairing of flavors that work perfectly together
Combine all the ingredients in your baking pan, ensuring an even coating and distribution of the ingredients throughout. For the baking pan, we recommend using one with some high sides so that you can stack the Potatoes and Onions without them overflowing
You don’t want the dish to be flat, so a medium-sized baking pan is what will work best. It doesn’t really matter how high you stack the Potatoes; it will just impact the cooking time. Speaking of which, the Potatoes are baked in the oven set at 325F for 45 minutes
The lower initial roasting temperature will help the Potatoes and Onions to evenly cook and allow them to get wonderful and tender without the outside becoming too crispy and ultimately burning. After 45 minutes you can check the doneness of the Potatoes by cutting into the dish with a knife. If there is little to no resistance, they’re ready for the next step

Remove the Potatoes from the Oven and add Wine!
Yep, that’s right! We’re adding White Wine to the dish at this stage. It wouldn’t be a Spanish dish if we didn’t add some Wine anyway right? Unlike a lot of dishes, the Wine is added at this stage of the cooking process and not at the beginning
This is to ensure the Wine will better absorb into the Potatoes as they are cooked, and helps give the Roasted Spanish Potatoes a richer, more indulgent flavor
You can use any type of White Wine you like; it doesn’t need to be Spanish or anything too fancy. Just use a bottle of Wine that you yourself will enjoy drinking. The dish calls for ½ cup of White Wine to be used, so there will be plenty left in the bottle to enjoy alongside the Potatoes
Once the Wine is added to the Potatoes we return them to the Oven. However, at this time we crank the temperature of the oven to 400F. This step will help the Wine to burn off the alcohol faster and to crisp up and caramelize the outsides of the Potatoes
The Potatoes will take about 20 – 25 more minutes in the oven for this step. We recommend keeping a close eye on them as different ovens tend to cook at varying times. What you’re looking for is a beautiful golden-brown, caramelized outside

Plating the dish
Now that the Potatoes are cooked it’s time to eat! Unlike the creamy Potatoes Gratin, these Roasted Spanish Potatoes will hold together immediately after cooking so there’s no need to let them sit for 10 minutes. Which is great, because the smell will be so irresistible it’ll be impossible to wait!
This is truly a classic Potato Side Dish, so we would recommend pairing it alongside a beautifully cooked meal. There’s loads of options to choose from, but for simplicity’s sake (keeping on the theme of the dish), we recommend some grilled Fish, Steak, or Chicken
The combination of flavors pairs perfectly, and the slow roasting of the Potatoes will give you more than enough time to prepare the appropriate protein. You can also make these Potatoes in advance and simply reheat them in the Oven before serving if you like

Roasted Spanish Potatoes Recipe
Ingredients
- 6 Potatoes, peeled and finely sliced
- 1 Spanish or Yellow Onion, finely sliced
- 5 tbsp. Olive Oil
- ½ cup Fresh Parsley, roughly chopped
- 2 tsp. Salt
- 4 Garlic Cloves, finely chopped
- ¼ tsp. of Black Pepper
- ½ cup of White Wine
Instructions
- Combine the Potatoes, Onion, Olive Oil, Salt, Garlic, and pepper into a high sided baking pan. Try to get the ingredients as evenly distributed as possible
- Place the pan in the oven at 325F and roast for 45 minutes
- Remove from the oven and slowly pour the White Wine over the Potatoes. Increase the oven temperature to 400F and return the Potatoes to the oven
- Roast for a further 20 – 25 minutes until the Potatoes char around the edges. Remove from oven and finish with Parsley before serving
Recipe Notes
- There is no need to use a Mandoline to slice the Onion and Potatoes. Just use a sharp knife and carefully cut into even sized slices
- You can finish the dish with a final drizzle of Olive Oil and finishing Salt for even more flavor
