How to make Poached Shrimp Baguette Rolls
This is a very easy recipe to make, which is perfect for a quick and easy dinner that will fill you up. It’s also pretty healthy. Sure, there’s a little bit of Mayo in there, but that’s ok! The key to making the best Shrimp Roll is to poach the Shrimp. This is a fantastic method to cook Shrimp when serving it raw. The Shrimp has a beautiful texture and tastes amazing
The key to perfectly Poaching Shrimp is to not have the water too hot. We’re not boiling the Shrimp, so you want the water to be slightly bubbling before you add the Shrimp. Once the Shrimp is added to the pot, cover it and turn off the heat completely
The residual heat that sits inside the pot will cook the Shrimp, but not in an aggressive way that could damage the flesh. Shrimp doesn’t take long to cook, so after about 5 – 7 minutes they should be done. The best way to check if the Shrimp is done is by looking at it. Once it turns a beautiful light pink color, they’re ready to go!

Once cooked, remove the Shrimp from the poaching liquid and set them aside on some paper towels to cool and lose any excess water. There’s no need for an ice bath or anything like that. Just let them cool while you prepare the sauce
Add some beautiful aromatics to the Poaching liquid to infuse more flavor into the Shrimp
Instead of simply adding the Shrimp to regular Water, try infusing that water with aromatics. There are loads of different aromatics you could add, from fresh Herbs to Garlic and Ginger. By adding aromatics to the poaching liquid, you will add more flavor to the Shrimp as it cooks
You can always just keep things super-simple and simply add Salt and whole Black Peppercorns to the liquid. This is what we’ve done in our recipe, and this is more than enough to get some lovely flavor into the Shrimp, without completely overpowering it

Making the Creamy Mayo dressing
Almost as popular as the Shrimp itself in this recipe is the Creamy Mayo Dressing that costs the Shrimp and gives the whole dish a luscious, indulgent flavor. It’s a very easy dressing to make, and you don’t really need too much. For 1 lb. of Shrimp we found that 2 tbsp. of Mayonnaise is more than enough. You want just enough Mayo to ensure the Shrimp is evenly coated, without completely drenching it
In addition to the Mayo, we add a classic combination of finely diced Celery (for crunch), some Hot Sauce (for that much needed spice!), and finally a squeeze of Lemon Juice to brighten the whole dish up. Seafood loves Lemon Juice, and this sauce is no exception
One thing I will caution, however, is to avoid adding too much Lemon Juice to the Mayo. This is mainly for consistency, as too much Lemon Juice will make the dressing runny. We want the dressing too be thick so it sticks to the Shrimp and doesn’t drip everywhere. I recommend adding 1 squeeze of Lemon Juice at a time. Mix it through and taste before adding more
Finally, add some fresh herbs to the dressing for some freshness. In our Poached Shrimp Baguette Rolls we use Dill, which is a fantastic Herb to pair with Seafood. Save a little bit more Dill to sprinkle over the Rolls once assembled for a nice presentation
Once you’re happy with the taste all that’s left to do is add the Shrimp to the Dressing. Simply cut the Shrimp up into bite-sized chunks (keep them pretty chunky) and mix through the Sauce and it’s ready!
Get your hands on a good quality, large French Baguette
It goes without saying that the quality of a sandwich is going to live or die by the type of Bread you use. What I love about this dish is the utilization of French Baguettes is so perfect! The thick, crusty outside of the Baguette is perfect for keeping the Mayo-based sandwich intact, and the fluffy inside makes every bite so enjoyable
I recommend getting your hands on the biggest French Baguette you can find. Aim for one that’s been baked that same day and make this dish on the same day you buy the bread. The Bread will be at its crustiest, tastiest, best and make the dish so much more enjoyable
You can find some decent Baguettes in Supermarkets, but for the best result aim to get it from a specialized Bakery. They’ll have loads more options and Bakeries will be baking that bread fresh every day

Assembling the Sandwich
Begin assembly by cutting the Baguette into individual portions. You want a decent sized sandwich, so just cut the ends of the Baguette off and portion out as many sandwiches as you can. I think one large Baguette should easily do 3 – 4 decent sized sandwiches
Then, cut down the middle of the individually proportioned roll, but leave the other side intact. This way you can fold open the bread on the plate and allow as much filling as possible to go into the Poached Shrimp Baguette Rolls
Lay one or two large pieces of Romaine Lettuce at the bottom of the Roll. This will help to protect the bread from getting too soaked in Mayo. Then, simply heap on as much of the Shrimp mixture as you can. Seriously go nuts here, overflow it as much as you can!
Finish the sandwich with a sprinkle of that reserved fresh Dill for a nice presentation and it’s ready to serve. I love to serve our Shrimp Baguette Rolls with a handful of Potato Chips. The salty, crispiness of the Chips offers a fantastic contrast to the sandwich, making for the perfect plate of food

Poached Shrimp Baguette Rolls Recipe
Ingredients
- 1 lb. Shrimp, Peeled and deveined
- 1 tsp. Salt
- 1 tsp. Black Peppercorns
- 2 heaped tbsp. Mayonnaise
- 2 Celery Stalks, finely diced
- 1 tbsp. Fresh Dill, finely chopped
- Juice of ½ a Lemon
- ½ tsp. Hot Sauce
- 1 Large French Baguette
- 8 Large Lettuce Leaves (eg: Romaine)
Instructions
- Ensure your Shrimp are fully peeled and deveined (video here). Heat a large pot of water over medium heat so small bubbles appear, but it isn’t fully boiling. Season the water with 1 tsp. of Salt and 1 tsp. of Black Peppercorns
- Add the Shrimp then turn off the heat. Allow the Shrimp to poach in the liquid until they turn light pink. This should take about 5 – 7 minutes, just keep your eyes on them until they are cooked
- Once cooked, remove the Shrimp and set aside on some paper towels to dry. Once dried, cut the Shrimp into bite-sized chunks
- Add the Shrimp to a bowl filled with Mayonnaise, Celery, Dill, Lemon Juice, and Hot Sauce and mix well. Taste for seasoning, adding a pinch of Salt if needed
- Slice the French Baguette into individual portions then cut down the middle to form an opening, leaving one side still intact
- Place your Lettuce on the bottom of the Rolls then heap in as much of the Shrimp mixture as you can fit and serve
Recipe Notes
- Try adding some aromatics to the poaching liquid like Ginger, Garlic, and fresh Herbs to infuse more flavor into the Shrimp
- You can use regular Bread Rolls as a replacement for the Baguettes, just try to get Bread that is lovely and crusty for the best texture
- We recommend adding one squeeze of Lemon Juice at a time to avoid the sauce becoming too runny. Add a squeeze the mix and taste before adding any more
