However, when it comes to this dish, we’ve kept the recipe completely as the Bon Appetit folks have published it. The simplicity of this dish, requiring just 3 ingredients, and the ability for it to completely transform a very traditional dish like Steamed Rice is what drew us to trying out the dish
I can categorically say that it’s an amazing dish that you should try at home for yourself. If you’re like us, you very well may have a bunch of Scallions sitting in your refrigerator that may run the risk of being thrown out if not used. This dish is a great way to preserve those wonderful Scallions while making something that is so tasty
This dish uses every part of the Scallion
Avoiding wasting any food is always a big plus for us. With the cost of groceries these days we should be trying to use every part of every ingredient we can. This Steamed Scallion Rice recipe does exactly that, utilizing every part of the Scallion from the green leafy ends to the white tips
Many times, when using Scallions in recipes, at least half of the actual Scallion is discarded, which is just throwing our flavor and textures! The White and light green parts of the Scallion are best when cooked, and the leafy parts can be used as a garnish, which is how they are utilized in this dish
Consider dividing the Scallions into thirds. The top third being the green leafy parts are finely sliced and set aside until the end. The remaining two thirds of the Scallion are also finely sliced, but are used immediately, being lightly fried in a saucepan with some Vegetable Oil until tender

Cooking Steamed Scallion Rice
Once the Scallions are cooked its time to add the Rice. You can use any kind of Rice you like, but we prefer Jasmine Rice. It’s a great ‘all-rounded’ with a wonderful texture and beautiful fragrance and flavor. You can wash the Rice before it goes into the saucepan, but this step is optional
Once the Rice is added, pour in the Water. Now, usually for Rice recipes we use a ratio of 1: 1.5. That means for everyone 1 cup of Rice you add 1 ½ cups of Water. For this dish, however, only 1 ¼ cups of Water is added
The additional moisture that resides in the Scallions will round up the overall Water quantity needed to perfectly cook the Rice. Add a little bit of Salt and mix everything together before bringing the saucepan to a boil
Drop the heat to a simmer and then cover with a lid and cook for 10 minutes until all the liquid has been absorbed into the Rice. At this point, take the Pot off the heat and add the green leafy Scallion parts that we prepared earlier. No need to stir anything at this point, just place the Scallions on top
Return the lid and leave the pot off the heat for a remaining 10 minutes. The residual heat that lies in the pan will continue to cook the Rice as well as the Green Scallions we just added. After 10 minutes the whole dish will be ready! Give is a taste and adjust for seasoning if necessary before serving

How to enjoy this Steamed Scallion Rice dish
At its heart this is a Rice side dish, perfect to pair with a hearty main course. The classic pairings any really any kind of Mexican, Chinese, or Korean food. The delicate sweetness of the Scallions paired with the robust Jasmine Rice makes for a great way to fill out a meal with these cuisines
Alternatively, you can simply enjoy this meal on its own. It’s hearty and flavorful enough to enjoy as it’s own main course for dinner. Try topping it with some added textural components like chopped Peanuts or Chili Crisps and it’ll make for the perfect meal to enjoy!

Steamed Scallion Rice Recipe
Ingredients
- 10 Scallion Stalks
- 1 cup of Jasmine Rice
- 1 ¼ cups of Water
- Salt
Instructions
- Remove the dark green tops of the Scallions (top third of each stalk) and chop finely then set aside. Finely chop the remaining part of the Scallions and then fry in a medium sized saucepan heated with Vegetable Oil over medium heat
- Cook Scallions while stirring until tender (about 6 minutes) then add the Rice along with ½ tsp. of Salt and 1 ¼ cups of Water. Cover and bring to a boil, then drop the heat to low and simmer for 10 minutes
- Remove pot from the heat then add the remaining dark green Scallion pieces. Cover again with the lid and set aside for 10 minutes, allowing the residual heat to cook the Scallions
- Remove lid and fluff with a wooden spoon. Taste for seasoning and if needed add a pinch of Salt. Serve immediately
Recipe Notes
- You can wash the Rice before adding it to the pot if you like. I’ve found this step doesn’t really impact the flavor, but will help the Rice grains to be less clumped together
- This dish is best enjoyed immediately but can be refrigerated and reheated the next day. I’d recommend adding a spritz of water to the Rice before reheating
