Perhaps an overlooked side when it comes to southern cooking is the humble Coleslaw, or Slaw. However, we would argue a good Slaw is an essential part of a good southern meal. Particularly when it comes to BBQ. The fresh acidic hit that a coleslaw brings to the table is such a welcome addition to the rich, sugary, sweetness that you’re typically eating when it comes to BBQ. One of our favorite versions of homemade Slaw is this beautiful Green Apple Slaw
Nailing a good slaw really isn’t difficult, however I’ve found so many slaws I’ve been served up in restaurants are just way too fatty. Too much mayonnaise really does dilute the acidic balance that a slaw needs to provide. If you simply overload the slaw with mayonnaise its essentially just more fat you’re adding to the overall meal
Our Green Apple Slaw recipe is light on the Mayonnaise and instead dials up the punch with Apple Cider Vinegar and, thinly sliced Green Apples which give that brilliant acidic hit
Green Apple Slaw is a key side dish when you’re eating BBQ
When you think about classic Southern side dishes, especially when it comes to BBQ there are a few that come to mind. Mac and Cheese is definitely one. Baked Beans, absolutely. Corn Bread, darn right! However perhaps the most slept on, yet most popular and critical side dish of them all when it comes to BBQ is the humble coleslaw
Coleslaw plays such a vital role on the table for any BBQ meal. BBQ is notoriously heavy to eat. Look, you try eating a whole rack of our Low and Slow Pork Ribs and see how you’re feeling afterwards! BBQ tastes phenomenal, but oh boy is it a heavy meal
A side of slaw helps to cut through all of that fattiness of a typical BBQ meal. The brightness and acidity in this Green Apple Slaw is the perfect contrast to the rich, sweet, fatty BBQ meats that you will be consuming. Without something green on the table all you’d be eating is heavy rich food. By sneaking a few mouthfuls here and there of fresh Slaw you’re cleansing your palate and introducing completely different flavors to the experience
Doing so helps you to enjoy the BBQ you’re eating without getting sick of it. So, for that reason alone, we proudly announce that the best ever southern side dish is the humble Green Apple Slaw!
Green Apple is naturally one of the most acidic Apples you can use
Acid is key for a great coleslaw, which is why Green Apple is such a great choice. Of the spectrum of Apples, the Green Apple is the most acidic. Again, as we mentioned above, acid is key for this dish so don’t shy away from it. Acid is our friend!
Therefore, in addition to the acid that the Green Apple brings, we also use 1 tsp. of Apple Cider Vinegar in this dish to really bring out the bright, acidic flavors of the dish. Apple Cider Vinegar has a wonderful flavor and elevates this slaw significantly. It’s also good for you too. If you love your coleslaw bright and acidic, then add a little more Apple Cider Vinegar to the Dish. We would just recommend adding it little by little and tasting as you go until you get the perfect level of flavor

Green Apple Slaw Recipe
Ingredients
- ¼ Green Cabbage, thinly sliced
- ½ Red Onion, sliced
- ½ a Large Carrot, grated
- 1 Green Apple, peeled, cored and sliced
- 1 tsp. Apple Cider Vinegar
- 2 tbsp. Japanese Kewpie Mayonnaise
- ½ tsp Salt
Instructions
- Begin by preparing your vegetables. Thinly sliced vegetables are the way to go when it comes to a good Slaw. If you have a Mandoline slicer then we’d recommend using that. If not, all good. Just prepare your vegetables and cut thin, long strips carefully
- In a large bowl combine the Apple Cider Vinegar, Mayonnaise, and Salt then whisk to combine. Check for seasoning and adjust when necessary. If too sweet, add more Vinegar. If too acidic, add more Mayonnaise
- Add the vegetables to the bowl and mix thoroughly so that everything is evenly coated with the dressing
