The pairing of Apple, Arugula and Goats Cheese in this salad are a brilliant match with the tanginess of the Green Apple contrasted with the peppery Arugula. Adding Goats Cheese brings a lovely richness and sweetness to the meal.
This salad is extremely versatile and can quite easily be adapted to your liking and preferences. You can add different ingredients to it such as mandarins and pistachio nuts. Alternatively, substitute out the goats cheese for feta for a different flavor profile. Basically, it’s a tasty salad however you want to slice and dice it!

This is such an easy salad to make, which we often say makes for the best dishes. You just need good quality ingredients and you’re guaranteed an amazing tasting salad. The key to extracting as much flavor out of this salad is possible is in the vinaigrette
The Vinaigrette packs such a punch of flavor, with the inclusion of Balsamic Vinegar and Dijon Mustard, along with the more common suspects of Lemon Juice and Olive Oil. Dijon Mustard adds such a beautiful depth of flavor to a vinaigrette, with it’s zingy flavor and creamy texture. Combined with the sophistication that a good quality Balsamic Vinegar brings, and you’ve got one hell of a tasty Vinaigrette that’s ready to soak into those beautiful Arugula leaves
Arugula is a great ingredient, adding a unique Peppery flavor to this salad
We love Arugula in salads. It has an amazing peppery flavor which is so unique to this particularly leafy green. It’s a great alternative for more traditional leafy ingredients such as Lettuce or Kale if you’re looking for a slightly different flavor profile

If you’ve never had Goats Cheese in a salad before we can assure you that you’re in for a treat. Goats Cheese has a beautiful, pronounced flavor which is quite tangy to the palate. Not only does it have a delicious flavor, but it is also one of the creamier cheeses that you can add into a salad, which creates a beautiful texture when paired with the crispiness of the fresh Green Apple
Goats Cheese is quite a powerful tasting Cheese, so we recommend using it sparingly with this dish. If you’re a Goats Cheese fiend however, then by all means add more than what we’ve listed in the recipe. We absolutely love Goats Cheese so it’s not uncommon to see us double, or sometimes even triple the quantities in our cooking!

Apple and Arugula Salad with Goats Cheese Recipe
Ingredients
- 1 bag of Arugula
- 1 Green Apple, diced
- 1/2 Red Onion, Sliced
- Juice from 1/2 a Lemon
- 1 oz (30 grams) Goats Cheese
- 1 tbsp. Balsamic Vinegar
- 1 heaped tsp. Dijon Mustard
- 4-6 tbsp. good quality Olive Oil
- Salt and Pepper
Instructions
- To make the vinaigrette begin by combining the lemon juice, Balsamic Vinegar and Dijon Mustard into a small mixing bowl. Whisk the ingredients together. Slowly combine the Olive Oil and continue to whisk to emulsify the liquid (fancy talk for combining the ingredients together).
- Add Salt & Pepper and check the taste. If it’s a little too acidic for your liking, add more Olive Oil until you hit your preferred flavor profile. Alternatively if it is too rich, add more Lemon Juice to balance it out
- Combine the Arugula, Green Apple and Red Onion into a large salad bowl, then pour the vinaigrette mixture over the top. Mix thoroughly together to ensure the salad has an even coating
- Finally, cut up the Goats Cheese into small pieces and crumble over the top of the salad and you’re ready to eat!
