We’ve got a fantastic Weekly Meal Plan for January 28 for you all. Comfort food is the name of the game this week, with some familiar dishes we all know and love. One of our all-time favorite dishes to make, and a classic Epic Sunday meal for millions of people around the world. We’re talking about Lasagna of course. Beautiful layers of rich meat slow cooked in a Tomato based gravy, smothered with a cheesy bechamel sauce and layers of comforting pasta. No dish symbolizes comfort food more than this classic

We’re sharing with you our absolute favorite Lasagna recipe, our Epic Short Rib Lasagna. Short Rib is the king of all braising meats, and when cooked slowly in this delicious Tomato Sauce produces such an unbelievable depth of flavor. You’ll love it, we guarantee!

The best Homemade Smash Burgers going around

Our second comfort food recipe is a perfect Friday night meal. Homemade Smash Burgers which taste just as good, no, better, than the fast-food stuff! This is a great meal to have after a long week. They’re super easy to make and taste phenomenal

Get yourself some lovely ground beef with a high fat content. Some great buns (Martin’s Potato Rolls are the gold standard by the way!), and everyone’s favorite – American Cheese and you’ve got a phenomenal Smash Burger!

Fruit and Duck, such an amazing combination of flavors

Ok it’s not all rich, decadent food this week. We’ve got you covered with a fantastic Healthy Salad with an interesting pairing of Duck and Nectarine. Duck pairs so well with fruit and Nectarines are a brilliant choice. Depending on what’s available at your grocery store you can substitute the Nectarines for lots of beautiful fruit such as Peaches, Plums, and even Mango. It’s a healthy, yet very hearty meal. One for the Sweet Tooth

Rounding out the week are some brilliant Homemade Lofthouse Cookies that we made care of a fabulous recipe we used from our friends at Mealtime Joy. These buttery, sweet cookies are so fun to make and taste amazing. Why not get the kids involved and get them decorating these beauties however they like!

Full List of Ingredients

  • 3 lbs. Beef Short Rib
  • 2 Duck Breasts
  • ½ lbs. of Ground Beef with high fat percentage (75/25 or 80/20 fat ratio recommended)
  • Martins Sandwich Potato Rolls
  • 4 cups of All-Purpose Flour
  • 2 Carrots
  • 2 Brown Onion
  • 2 sticks of Celery
  • ½ lb. Nectarines
  • ½ lb. Tomatoes
  • 3 tbsp. Tomato paste
  • 28 oz / 800g Crushed Canned Tomatoes – (San Marzano if possible)
  • 4 cloves Garlic
  • 3 sprigs of Rosemary
  • 3 sprigs of Thyme
  • 3 sprigs of Basil
  • ½ tsp. ground Nutmeg
  • 1 cup Beef Stock
  • 8 Sliced Pickles in Brine
  • 2 tbsp. Japanese Kewpie Mayonnaise
  • 2 tbsp. Ketchup
  • 1 tsp. Honey
  • 2 tbsp. Dijon Mustard
  • 5 cups of Whole Milk
  • 1 Egg
  • ¼ cup Greek Yoghurt
  • 1 tbsp. Corn Starch
  • 1 tbsp. Baking Powder
  • 1 tsp. Vanilla Extract
  • 1 cup grated Parmesan cheese
  • 1 cup grated Gruyere cheese
  • 8 slices of American Cheese
  • 3 cups Powdered Sugar
  • 1 bottle of medium to full bodied Red Wine
  • 2 tbsp. Balsamic Vinegar
  • 3 tbsp. Olive Oil
  • 1 tbsp. cooking Oil (eg: Vegetable or Canola Oil)
  • 500g. Unsalted Butter
  • Salt and Pepper
  • Leftover Parmesan Cheese Rind (optional)
