Miso Butter Roast Mushrooms

The Mushrooms are coated in a rich and luxurious homemade Miso Butter before being roasted until caramelized and delicious. The Miso Butter is homemade and is so simple to make and it adds the most amazing flavor to the Mushrooms. The whole dish is super-simple to make, and is the perfect side dish to a hearty meal
How to make Miso Butter Roast Mushrooms
For this recipe we are using classic Cremini / Button style Mushrooms. They’re not too large, which means the roasting won’t take too long and they are able to take on a load of flavor from the Miso Butter. You can use any Mushrooms you like in this dish, but just be wary, the cooking times may vary, as will the flavor
Another good option for Mushrooms are Portobello Mushrooms. I’d recommend cutting them into thick slices so that more surface area is exposed to the Miso Butter, and they’ll roast at around about the same time

For some super-fancy Mushrooms, why not try Morel or Chanterelle Mushrooms. The flavors will be intense, but well worth the effort and investment if you are looking for a fancy steakhouse style Mushroom Side Dish you can make at home
Once you’ve got your Mushrooms it’s time to make the Miso Butter
Clean those Mushrooms by brushing them with a paper towel to remove any dirt. Keep the skins and stems intact, as these just add more flavor to the Mushrooms. Once prepared, set the Mushrooms aside on a lined sheet pan ready for roasting as we begin to prepare the Miso Butter
Making Miso Butter couldn’t be easier and only requires two ingredients: White Miso Paste and Butter! You can find Miso Paste in any specialty Asian grocery store, or even the international aisle at your local supermarket
It’s a great condiment to have as it lasts for months in the refrigerator and you can make loads of great dishes from it, including of course, Miso Butter Roast Mushrooms!
Partially melt some Butter that has been roughly cut up into cubes in a small bowl. Not too much that it’s liquid, just enough to turn it into a smooth creamy consistency. Then, simply add the Miso Paste and mix well to combine both ingredients
The ratio of Butter to Miso Paste is about 1 part Miso Paste to 1.5 parts Butter. We used 2 tbsp. of Miso Butter and 3 tbsp. of Butter for this recipe, which was more than enough for 1 lb. of Mushrooms with a little Miso Butter left over
Applying the Miso Butter to the Mushrooms
I recommend using a kitchen brush to apply the Miso Butter to the Mushrooms. It allows for an even application without making a load of mess. Before the Mushrooms go into the oven at 425F, coat them generously with about half of the Miso Butter. Try to coat them all over and as evenly as possible
We keep half of the Miso Butter for a second coat which is added about ¾ of the way through the cooking process. Miso Butter Roast Mushrooms benefit from a higher roasting temperature, as the goal is to allow the sugars in the Miso Butter to caramelize, turning the Mushrooms the most amazing color when cooked

Cooking the Mushrooms
Roast them for about 20 minutes before removing them from the oven. Turn the Mushrooms and then apply the remaining amount of Miso Butter to the Mushrooms. This coating will be easier, as the Mushrooms are hot, so the Butter will melt once it’s added
At this point I like to crank the oven even more. The Mushrooms will almost be completely cooked, so this step is really about ensuring you get the best caramelization on them. If you are game you can also try broiling them, but this step is a bit risky as you run the risk of the Mushrooms burning
Place them back in the oven for a further 5 minutes until the Mushrooms have turned a dark brown, and the Miso Butter has visibly absorbed into the Mushrooms and caramelized them. At this point the dish is done!

Serving
Our Miso Butter Roast Mushrooms are best served straight out of the oven while they’re super-hot. So, as soon as they’re cooked hit them with some Salt and place them straight onto a serving plate or bowl
You can enjoy the Mushrooms like this, or for some added color and flavor, try finishing them with some finely diced Scallions and Sesame Seeds. This adds a nice crunch to the dish as well as a beautiful pop of green color on the plate
Miso Butter Roast Mushrooms are great to enjoy on their own, but even better as a side dish to a beautiful piece of cooked Steak. Roast Mushrooms are a classic Steakhouse side dish, and the Miso Butter adds an additional layer of richness that’s just perfect with a nice Steak

Miso Butter Roast Mushrooms Recipe
Ingredients
- 1 lb. Cremini / Button Mushrooms
- 3 tbsp. Unsalted Butter
- 2 tbsp. White Miso Paste
- ½ tsp. Salt
- 3 Scallions, finely diced
- ½ tsp. Sesame Seeds
Instructions
- Clean the Mushrooms to remove any dirt using paper towels and then place them on a sheet pan lined with foil
- Slightly melt the Butter so it turns creamy (but not into a liquid) in a small bowl. Add the Miso Butter and mix well to completely incorporate
- Brush ½ the Miso Butter all over the Mushrooms, ensuring an even coating. Season with Salt and then place in the oven at 425F
- Roast the Mushrooms for 20 minutes until they’re almost completely cooked. Remove from the oven and then coat with the remaining Miso Butter before returning to the oven
- Increase the heat of the oven to 450F and roast for a further 5 minutes, or until the Mushrooms caramelize and turn a dark golden-brown color
- Remove Mushrooms from the Oven and season with a touch more Salt before plating on a serving plate or bowl. Finish with Scallions and Sesame Seeds then serve immediately
Recipe Notes
- I recommend mixing the Miso Butter using a chopstick to avoid it sticking to a fork or spoon
- Applying the Miso Butter to the Mushrooms is easiest with a kitchen brush, but you can also use a fork
- You can also try broiling the Mushrooms for the final 5 minutes to achieve a wonderful char and caramelization
