There’s nothing better than utilizing amazing leftover Roast Meat in a stacked sandwich for lunch the next day. One of the most popular (and best) choices is a classic Roast Beef Sandwich, loaded with beautiful slices of Roast Beef and paired with your favorite assortment of sandwich goodies. In this recipe we’ll show you how to make The Best Roast Beef Sandwich, starting with a perfectly cooked Rare piece of Beef that’ll serve as an amazing Roast Dinner, and an even better Sandwich the next day
The first step in making The Best Roast Beef Sandwich is roasting the Beef of course
Naturally, this dish is all about the Beef, and you want to be perfecting this step. The cut of Beef is important when making Roast Beef. For this recipe we’re not going for anything super fancy or expensive like a whole side of Beef Tenderloin or Rib Roast (which will set you back hundreds of dollars!). Instead, we recommend using a classic cut of Roast Beef such as Top Round, Strip Loin, or Rump

These cuts are typically on the leaner side and are best cooked rare and finely sliced when it’s ready to serve. I find when cooked Rare these cuts of Beef aren’t tough, and simply melt in the mouth when served up in a delicious Sandwich
Seasoning and Roasting the Beef
For this recipe we use Top Round and it came out amazing. We begin by ensuring the Beef is at room temperature before cooking. This is important for such a big cut of Beef, as you want the whole thing to cook evenly so you achieve perfect slices of Rare Roast Beef that are cooked the same throughout
I recommend leaving the Beef at room temperature for at least 2 hours if you’re pulling it out of the refrigerator. Once you’re ready to cook, season the Beef generously with Salt and Pepper. You can really go aggressively with the seasoning, and we highly recommend doing so
Remember, we’re only seasoning the very outside of the Beef, so each slice will need to carry its weight in seasoning, so be generous! Once the Beef is well seasoned, lay a bed of Rosemary onto a large roasting tray and place the Beef on top. Pop the tray in the oven that’s set at 400F and cook for 30 minutes
The cooking time may vary depending on the size of the Beef you’re cooking with, so we recommend checking the internal temperature at 30 minutes with a good quality meat thermometer. We’re aiming for an internal temperature of 105F, which is rare
Remember, the Beef is also going to continue ‘cooking’ as it’s resting, so 105F is the number we’re going for. It’ll increase to around 115F – 120F while resting If the temperature is lower, pop it back in the oven for another 10 minutes before checking again

Assembling The Best Roast Beef Sandwich Ever
First step is to ensure the Beef is well rested. I’d recommend at least 30 minutes, which will also allow it to cool. If you’re serving up the Beef as a Roast Dinner, then you can simply refrigerate the Beef overnight and slice and serve it cold in the Sandwich the next day
For The Best Roast Beef Sandwich, we recommend some classic accompaniments. That is, tomato, Lettuce, Mustard, and Horseradish Cream. Each of these are perfect in the Sandwich and make for an amazing bite of food
When it comes to the bread, we’re not too fussy. Use whatever style of bread roll you prefer, as ultimately your favorite bread is going to taste the best! For us, we can’t go past some good quality Sourdough bread
Quantities are key in this Sandwich
It goes without saying that you want to stack your sandwich as high as you can with thin slices of that beautiful, rare Roast Beef. As you can see from the photos here, we’re easily stacked ¾ of the Sandwich with Beef, so I’d recommend not skimping on the quantities!

I’d suggest cutting your Tomatoes slightly thicker than usual and using them as a nice bed for the Sandwich along with some roughly chopped Lettuce. Use the Lettuce and Tomatoes as a base for the sandwich before you start stacking it with Beef
For the Sauces, you cannot go wrong with the classic combination of Dijon Mustard and Horseradish Cream. They’re going to add a wonderful flavor and a little bit of heat which goes so well with Roast Beef. I recommend using a generous amount (1 tbsp. of each condiment) for each Sandwich you make, and ensure you spread on the top and bottom of the Bread before cutting and serving

The Best Roast Beef Sandwich Recipe
Ingredients
- 3 lbs. Roasting Beef (eg: Top Side, Rump, or Strip Loin)
- Salt
- Pepper
- 8 Sprigs of Rosemary
- 8 Good quality Bread Rolls
- 1 tbsp. Dijon Mustard (per sandwich)
- 1 tbsp. Horseradish cream (per sandwich)
- 8 large Tomatoes, sliced
- A head of Lettuce, roughly chopped
Equipment needed: Meat Thermometer
Instructions
- Ensure the Beef is at room temperature before beginning. If straight out of the refrigerator, we recommend leaving it at room temperature for 2 hours before cooking
- Season the Beef aggressively with Salt and Pepper, ensuring a good even coverage over the entire outside of the Beef. Lay the Beef on a bed of Rosemary in a large roasting dish and then place in the oven set at 400F
- Roast for 400F until the internal temperature of the Beef reads 105F and then remove from oven and allow to rest
- As this dish is served cool / cold, leave it for at least 30 minutes before slicing into thin strips
- Assemble your sandwich by spreading a generous amount of Dijon Mustard and Horseradish Cream on both the top and bottom of the sliced bun
- Top with Lettuce, Tomato Slices, and a more-than-generous amount of Roast Beef Slices. Cut in the center and serve
Recipe Notes
- Cooking time is based on an approximate 3 lb. piece of Beef. Times may vary depending on the size of the Beef so check internal temperature regularly using a meat thermometer
- You can easily make over 8 Sandwiches with the amount of Roast Beef in this dish. Use what you need, and it’ll keep in the refrigerator for about 2 days afterwards for more Sandwiches
