What is the inspiration for this Pineapple Chicken Stir Fry recipe?
We’ve been loving the recipes over at Omnivore’s Cookbook lately and this one is no exception. The striking visuals of the plating of this dish is what immediately drew us to the recipe. Being huge fans of Pineapple here at Dinnertime Somewhere, the pairing of Pineapple and Chicken was an immediate draw for us. Hey, we even like Pineapple on Pizza, so naturally a Chicken and Pineapple Stir Fry is going to work well for us!
For this recipe we didn’t really make many modifications to the original. Being a Stir Fry, we took some liberties to add some additional Vegetables to the dish, but other than that we kept the recipe pretty true to the original
What’s great about Stir Fries is you can add pretty much any Vegetable you like and they’re going to taste great. We simply included some roughly chopped Celery to the dish and added them to the pan the same time as the Bell Peppers. The results were great, with a nice additional crunchy element added to the meal

How to make Pineapple Chicken Stir Fry
This dish is prepared very much like a classic Asian Stir Fry. There’s a meat component, a Sauce component, and the Stir Fry component. Each are very simple to prepare and cook. Just follow the steps in the right order and you’ll be enjoying this wonderful dish in no time at all
Beginning with the Marinade. You will need to cut up about 1 ½ lbs. of Chicken Thighs into bite-sized pieces. I recommend opting for Chicken Thighs over Breast as they have more flavor and are a lot more forgiving when it comes to cooking. Slightly overcook them and they’ll still be nice and tender
Season the Chicken well with Salt and Pepper and then let them sit in a simple marinade consisting of Chinese Cooking Wine. You don’t need to add anything else, just let the Chicken soak in the Wine for at least 30 minutes
Preparing the Sauce
The fun element of this Pineapple Chicken Stir Fry is one of the key components in the sauce is Pineapple Juice that you can use straight from Canned Pineapple. No need for freshly squeezed (and expensive) Pineapple Juice, just get a big can of Pineapple Chunks in Juice and use that Juice for the Sauce
Along with the Juice goes some classic Asian Stir Fry Sauce ingredients of Soy Sauce, Rice Wine Vinegar, Brown Sugar, and Corn Starch. Mix it all together and set it aside until you are ready to cook. I would also recommend giving the sauce one final stir right before you add it to the Stir Fry to get the Corn Starch nicely mixed through

Chop up your Vegetables and have them ready to go before you start cooking
The final step is preparing the Veggies. We’ve opted for a combination of Celery and Red Bell Peppers. Along with some freshly grated Ginger and of course, Pineapple Chunks. Get these all prepared before you begin cooking to make things a lot easier for you
You can add more / different Vegetables to the ones we’ve listed in the recipe. Sliced Brown Onion would be a nice addition, as would Snap Peas and Carrots. Try not to add too many different types of Vegetables, however, as the true star of the show is the Pineapple, which gives the dish its beautiful, sweet flavor
It’s time to cook!
With the ingredients ready and the Chicken having been marinated for (at least) 30 minutes it’s time to cook. Fire up a large frying pan or wok over high heat on your stovetop with some Peanut Oil. While the pan is heating, drench your Chicken in Corn Starch and then pat dry
Once hot, add the Chicken and cook for about 2 minutes while stirring. This will almost completely cook it through, but not entirely. Remove the Chicken from the pan at this point and replace it with the Vegetables

Fry them up for a few minutes until charred and then in goes the Sauce. Stir through the Sauce and again cook it for a minute or so until it begins to thicken and then return that Chicken to the pan. Stir everything through and cook until the Chicken is cooked through completely (internal temperature of 160F) and the dish is complete!
We recommend serving this dish with fresh Steamed Rice or Noodles
You can’t have stir fry without a nice starch to help absorb that delicious Sauce. For this Pineapple Chicken Stir Fry, we recommend enjoying it with a big bowl of Steamed Rice. Pineapple Chicken Stir Fry Recipe
Ingredients
Chicken Marinade Ingredients
- 1 ½ lbs. Chicken Thighs, cut into bite-sized pieces
- 1 tbsp. Chinese Cooking Wine
- Salt and Pepper
- ⅓ cup of Corn Starch
Sauce Ingredients
- ¾ cup of Pineapple Juice (from Canned Pineapple)
- 2 tbsp. Rice Wine Vinegar
- 2 tbsp. Soy Sauce
- 1 tbsp. Brown Sugar
- 1 tbsp. Corn Starch
Stir Fry Ingredients
- 2 tbsp. Peanut Oil
- 1 cup of Pineapple slices, cut into small pieces
- 2 Celery Stalks, roughly chopped
- 1 Bell Pepper, diced
- 1 tbsp. grated Ginger
Instructions
- Season the Chicken well with Salt and Pepper and then combine in a bowl with the Cooking Wine. Allow to marinade for at least 30 minutes
- Combine all the Sauce ingredients in a separate bowl and mix well, set aside. When it’s time to cook, add the Corn Starch to the Chicken marinade and coat well
- Heat Peanut Oil in a large frying pan or Wok over high heat. Once hot, add the Chicken pieces and cook while stirring until browned (a few minutes) then remove Chicken from the pan
- Add the Pineapple, Celery, Bell Peppers, and Ginger to the pan and cook for 2 – 3 minutes, stirring continuously
- Stir the Sauce into the pan and add the Chicken. Cook for a further 2 minutes until the Sauce has thickened and the Chicken is completely cooked through. Serve immediately with Steamed Rice
Recipe Notes
- You can replace the Peanut Oil with any other kind of Neutral Frying Oil (eg Vegetable Oil / Canola Oil)
- Try adding other popular Stir Fry Vegetables to the dish like Snow Peas, Onions, and Carrots
