This recipe is in honor of our time we lived in New Zealand, and some of the delicious food we ate there. Among all the great food there is one dish that we ate the most. That is the legendary Bacon Backfire Burger from the famous fast-food chain – Burger Fuel! Burger Fuels are all over the country and are incredibly popular, and with good reason. Their burgers and sandwiches are simply irresistible. So, in honor of this great establishment, we present to you our Homemade Bacon Backfire Burger recipe!
What ingredients make up a Homemade Bacon Backfire Burger
As its name suggests, the obvious ingredient in a Bacon Backfire is of course, Bacon. Beautiful strips of bacon cooked to that perfect consistency of slightly crispy. They are generously added to the Burger and sit atop 2 large pieces of grilled Chicken. Which to us is just the best combination of flavors anyway. Chicken and Bacon and just MADE to go together
Then there’s the classic filling combination of Tomatoes, Lettuce and Red Onions. The Red Onions are raw, so you get that beautiful crunch to them. We like to use them sparingly to not overpower the Burger, so a couple of slices works great. For the lettuce, Romaine / Cos Lettuce is a great choice. Big and leafy, perfect for a Burger
Now onto the cool stuff in this burger. Instead of using standard cheese you’d expect in a burger like American, they use Brie! The beautiful Creamy Cheese synonymous with French Cuisine makes its appearance in this burger and it tastes divine. Brie is a somewhat subtle cheese, but its flavor is still pronounced in the Burger. It adds such a luxurious texture to the meal too, pairing perfectly with the Chicken and Bacon
For the sauces – the classic combination of Garlic Aioli and Tomato Relish. This makes the burger to be honest. A tangy, creamy Aioli with a lovely hit of Garlic and a rich Tomato Relish. They’re beautiful together and complete this amazing Burger. The good news is all these ingredients are super easy to get yourself. So, there’s nothing stopping you from making the ultimate Homemade Bacon Backfire Burger tonight!
For those from the US – you may find it strange that this dish is called a Burger since it doesn’t contain ground meat
This caused a bit of confusion for us when we first moved to the USA. In Australia and NZ (and many other parts of the world) the word ‘Burger’ is based on the type of bun that is used and not on the type of meat. If you are using typical burger bun – that being a round shaped bun, it’ll be called a burger in AU and NZ
In the US it is quite different. Burgers are defined by how the meat is prepared. If the meat is ground, then it is generally referred to as a Burger. If the meat is whole, such as in the instance of the Bacon Backfire, which uses whole Chicken pieces, it would be called a Sandwich
To make things even more confusing, if you’re in AU or NZ and put a whole Steak in a burger, it’s called a Steak Sandwich – regardless of what type of bun you use! It’s all very confusing we understand. All we can tell you is whatever you want to call it, this Homemade Bacon Backfire Burger tastes amazing

The best way to prepare the Chicken is on the Open Grill
I know this may not be a luxury for everyone, however if you have an outdoor grill / BBQ then this is the absolute best way to prepare the Chicken. Nothing beats a flame grilled Chicken cooked on the open grill. That delicious smoky, BBQ flavor is perfect for the Bacon Backfire Burger
If you don’t have an outdoor grill, or if it’s in the middle of Winter and there’s no chance in hell you’re cooking outside then the frying pan is totally fine to use as well!

Homemade Bacon Backfire Burger Recipe
Ingredients
- 1.5 lbs. Chicken Breast
- 12 Bacon Rashers
- 4 large Hamburger Buns
- ½ Red Onion, sliced
- 2 large Tomatoes, sliced
- 8 large Romaine / Cos Lettuce Leaves
- ½ cup Kewpie Mayonnaise (you can substitute for regular Mayonnaise)
- Juice of ½ a Lemon
- 2 Garlic Cloves, finely chopped
- 150g / 5 oz. Brie Cheese
- ½ cup Tomato Relish
- Salt and Pepper
Instructions
- Slice the Chicken Breasts in half lengthwise, then season the well with Salt and Pepper (approx. 1 tbsp. of each)
- Place the Chicken on a hot Grill or in a frying pan over medium / high heat and cook for 10 minutes, flipping once. Remove from heat once the internal temperature of the Chicken reaches 160 F. Let Chicken rest for 5 minutes
- While the Chicken is cooking, place the Bacon in a large separate Frying Pan and cook for 5-6 minutes, flipping once, until slightly crispy. Set aside on paper towels to drain off some of the excess Bacon fat
- Make the Garlic Aioli by combining Mayonnaise, Lemon Juice, Garlic, and ½ tsp. of Salt in a small bowl. Mix well to combine all the ingredients
- To create the Homemade Bacon Backfire Burger, stack the Bun in this order from bottom to top: Tomato Relish, 2 pieces of Chicken, 3 slices of Brie Cheese, 3 Bacon Rashers, 2 Lettuce Leaves, 3 Tomato Slices, 4 pieces of Onion, and finish with the Garlic Aioli
Serve the dish with a lot of napkins as it has the tendency to get a little messy. The best way to eat a Burger of course!
