Easy Breakfast Tostadas
A Tostada is a classic Mexican dish where a variety of sweet or savory toppings are served over a crunchy Corn Tortilla. In this recipe we’ll show you how to make our amazing and Easy Breakfast Tostadas. The dish consists of some classic breakfast ingredients of Bacon, Tomato, Avocado that are all topped off with a perfectly cooked Egg (Fried or Poached). We add some delicious additional elements to the dish including Cotija Cheese, Cilantro, and fresh Lime Juice that adds wonderful Mexican flavors to this simple dish
Making your Tostadas wonderful and crispy
The first step when making our Easy Breakfast Tostadas is to get the crispy Corn Tortilla cooked. Now, there’s a few ways you can do this such as baking or air frying the Tortilla. However, for the best result there is no substitute for frying up the Tortillas in hot Oil
Simply fill a saucepan with enough Neutral Frying Oil so that the Tortilla can be submerged and then crank the heat until the Oil is around 320 – 350F. For the Oil, any Neutral Frying Oil with a high burn point is good. We usually use Vegetable Oil, but there are loads you can use. Just avoid Olive Oil
Fry the Tortilla until crispy and brown slightly, then flip over using tongs and fry on the other side until crispy and browned. The whole process should take under 2 minutes, but it may vary depending on the temperature of your Oil

Once cooked, remove from the Oil and place the Tortillas on a wire rack over some paper towels. Season the Tortillas immediately with Salt while they are still hot. This will ensure the Salt sticks to the Tortillas, allowing them to taste their best. Let them cool as you prepare the rest of the ingredients
Prepare the toppings for your Breakfast Tostadas
You can really add any kind of toppings you like when making our Easy Breakfast Tostadas. Any breakfast ingredient is going to work well. Just think of the Tostada as a vessel for transporting breakfast food to you!
For our recipe we’ve opted for a classic list of ingredients that are commonly served in Mexican breakfast cuisine. The combination of Bacon, Eggs, Tomatoes, Avocado, Lime, Cilantro, and Cheese. We also finish the whole dish off with Hot Sauce because who doesn’t want a bit of spice for their breakfast!
I like to have all the ingredients prepared before I move onto the Bacon and Eggs, as you want both ingredients to be hot when serving. So, simply slice up the Tomato and Avocado and have them ready to go. For the Tomatoes, I recommend removing the seeds. For the Avocado, you can either cut it up into small chunks, or cut it into thin slices which makes for a beautiful presentation on the Tostada
Cook the Bacon either in the Oven or on the stovetop
Bacon’s a very easy ingredient to cook. Many opt for oven baking the Bacon, which can be done by placing the Bacon strips on a sheet pan lined with Foil. Bake it for about 10 minutes at 350F, turning every so often
Personally, I prefer to cook the Bacon on the stovetop. You can keep a lot more control over the cooking of it as it’s sitting there right in front of you. It’s also a little quicker than oven roasting, which is great for Breakfast where you want to be eating as soon as possible
Just fry up the Bacon in the pan with a touch of Oil to prevent it from sticking. Allow the Bacon to crisp up as you turn it a few times. Once cooked and crispy, set it aside on some paper towels to drain off any excess fat. For our Breakfast Tostadas, I recommend cutting the Bacon into small pieces to help it sit nicely on the Tortilla

I like to cook the Eggs last, ensuring they’re piping hot when serving
The final step is preparing the Eggs. You can either cook them sunny side up in the frying pan, or cook a perfectly Poached Egg. We made both for this recipe, but as you can see, nothing beats a beautiful Poached Egg sitting on top of your Breakfast Tortilla when it comes to presentation
To Poach the Egg, fill a saucepan about ¾ full with water and bring it to the Boil. Add a splash of White Vinegar and then crack an egg into a small bowl. Using a spoon, create a whirlpool in the water by rotating it quickly in circles
Drop the Egg into the center of the whirlpool, and you’ll notice the Egg Whites will start to wrap around the Yolk, creating that famous Poached Egg look. Drop the heat to stop the Water from boiling and cook it for about 3 – 4 minutes. Remove the Egg and set aside on a paper towel to remove any excess moisture

Plating Breakfast Tostadas
You don’t need to worry about a fancy presentation unless you really want to. It’s breakfast after all; the purpose is simply to enjoy those tasty flavors. I like to start building the Tostada with a base of Avocado. Sprinkle over the Bacon and Tomatoes and then add your Poached Egg
Finish the dish by crumbling over some Cotija Cheese (you can also use Feta), along with Cilantro, Lime Juice, and some Hot Sauce. Sprinkle the top of the Egg with some Smoked Paprika and add a bit of finishing Salt and you’re all done!

Easy Breakfast Tostadas Recipe
Ingredients
- 4 Corn Tortillas
- ½ cup Neutral Oil
- 8 Bacon Rashers
- 4 Eggs
- 1 tsp. White Vinegar
- 2 Tomatoes, deseeded and diced
- 1 Avocado, finely slices or cut into cubes
- 2 tbsp. Cotija Cheese / Feta Cheese
- 1 tbsp. Cilantro, roughly chopped
- ¼ tsp. Smoked Paprika
- 1 Lime, cut into wedges
- Salt
Instructions
- Fill a Saucepan or small frying pan with Oil and set over medium high heat. Once hot, (320 – 350F) add a Tortilla and fry until crispy and golden-brown (about 1 – 2 minutes on each side)
- Set the cooked Tortilla on a wire rack and immediately season with Salt. Repeat for remaining Tortillas
- Add about 1 tsp. of Neutral Oil to a frying pan over medium high heat. Once hot, add the Bacon and cook, turning every few minutes until crispy (about 6 – 8 minutes should do it). Once cooked, set aside on paper towels then cut into small pieces
- Place an Egg in a small bowl and then fill a Saucepan ¾ full of water and 1 tsp. of Vinegar then bring to a boil. Create a whirlpool in the water by swiftly rotating a spoon in circles around the pot
- Drop the Egg into the center of the whirlpool then reduce the heat of the pot to medium. Cook for 3 – 4 minutes then remove the Egg and set aside on a paper towel. Repeat for remaining Eggs
- Build your Tostadas by layering Avocado, Bacon, and Tomatoes. Add a Poached Egg to each Tostada then top with Cilantro, Cheese, and Lime Juice. Season with Salt and Smoked Paprika and serve
Recipe Notes
- I recommend enjoying these Tostadas along with your favorite Hot Sauce
- You can simply pan fry the Eggs sunny side up if you prefer
- This recipe produces 4 Tostadas, enough for 2 – 4 people
