Grilled Chicken with Mango Salsa

One of the best things about the Summertime is the wonderful ingredients that are readily available to cook with. One of our all-time favorite ingredients are Mangoes. These sweet fruits are simply outstanding to cook with, and pair perfectly with Chicken. In this recipe we’ll show how you can make a simple yet delicious Grilled Chicken with Mango Salsa meal. It’s a hearty, yet refreshing meal suitable for a family dinner that is perfect for the warm weather

What I love about our Grilled Chicken with Mango Salsa is how easy it is to make. Yet, for such a simple dish, the flavors are so big, and work so harmoniously together on the plate. The combination of Mango and Chicken is a classic, and this dish is a shining example of how good this pairing is

The sweetness of the Mango brightens up the entire plate with Summer flavors. Adding some spice to the dish in the form of some Chili Powder (in the marinade) and fresh Jalapenos adds wonderful depth to the dish

Chicken and Mango on Rice
This is a simple dish to make, yet tastes so amazing, making it the perfect meal to enjoy during the hot Summer months

It’s the perfect meal to enjoy during Summer, when those Mangoes are plentiful and at their ripest. The Mango truly is the star of the dish, and in many ways the Chicken is there as a complimentary protein to highlight the sweetness of the Mango

You can either use Chicken Breast or Thighs for this recipe

One of the great things about this recipe is it works with both cuts of Chicken. Our approach to cooking the Chicken is to generously season it with a classic spice blend including Paprika, Turmeric, Onion Powder, Garlic Powder, Cumin, Salt, and a little bit of Chili. An (optional) addition is a little bit of Greek Yoghurt, which is a great way to keep the Chicken tender as it cooks

Now, instead of throwing the Chicken straight onto the grill, we recommend baking it in the oven until its almost completely cooked (around 150F). Then, finish it off on the grill. The reason we do this is you will be able to retain all those spices on the Chicken by baking it

If you throw the Chicken straight onto the grill, those wonderful spices that are coating the Chicken will simply char and then, ultimately they’ll burn. We want that wonderful, charred flavor on the Chicken, so throwing it on the grill for a few minutes at the end of the cook will ensure you achieve a char while retaining those amazing spices

Summer Chicken Thigh or Breast Dish
The Chicken is cooked by first oven roasting it before we finish it off on the Grill. This is a great method to keep the Chicken tender, and you can use either Breast or Thighs for this method

For the best result we always recommend grilling Chicken on the open flame. If you’ve got a grill / outdoor BBQ then definitely use that to finish off the Chicken. If not, it’s all good! Just add a little bit of Oil to a frying pan over high heat to finish it off

Try as best you can to cut the Fruit and Veg into evenly sized pieces

While we’re not aiming for Michelin star refinement with this dish, I do recommend you try to cut the Fruit and Vegetables into similar sized pieces. This is not just from an aesthetics perspective (although they do look amazing on the plate!), but more from an ease of eating perspective

Having evenly cut pieces of stuff on the plate will just make the eating experience a lot more pleasant. You want to dice the ingredients relatively finely, so that a forkful of food will carry a generous amount of each ingredient. This dish is best enjoyed when you get a mouthful of all ingredients. So, cutting the Fruit and Veg too thick will potentially make this a challenge

It’s a very simple thing to do, it will just take a little bit more time. Maybe an extra five minutes of prep time. So, not a lot, but well worth it for the result. I’d suggest dicing the Mango first and then follow suit with the other ingredients to ensure you’re at a similar dice to them. As Mango is the star of the show, it makes sense for it to lead the way!

The versatility of this dish means you can enjoy it either on its own, or with your favorite side dish. We are the dish with some simple Rice which came out great. For a lighter meal you can pair it with a simple Salad or just enjoy it as it is

The Salsa works as both a dressing / seasoning for the Chicken as well as a side dish. So, for a lighter meal just put more of that wonderful Mango Salsa on the plate and enjoy. We were pretty hungry when we made this meal, so a side of perfectly cooked Jasmine Rice was exactly what was in order to fill us up!

Grilled Chicken with Mango Salsa Recipe

Ingredients

  • 2 lbs. Chicken (Thighs or Breasts)
  • 2 tbsp. Greek Yoghurt (optional)
  • 1 tsp. Cumin Powder
  • 1 tsp. Smoked Paprika
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • ½ tsp. Turmeric Powder
  • ½ tsp. Chili Powder
  • 1 tsp. Salt

Mango Salsa Ingredients

  • 1 Mango, diced
  • 2 Jalapenos, diced (seeds removed)
  • 1 Avocado, diced
  • 1 Red Bell Pepper, diced
  • ½ cup Cilantro, roughly chopped
  • Juice of 3 Limes
  • ½ tsp. Salt

Ingredients

  1. Combine the Spices in a small bowl with (optional) the Greek Yoghurt and then generously rub all over the Chicken. Refrigerate for a few hours to marinade
  2. Place the Chicken on a large sheet pan and roast in the oven at 375F for 20 minutes, until the internal temperature of the Chicken is 150F. Remove and allow to rest
  3. Prepare the Fruit and Vegetables by dicing into similar sized pieces and mix together in a bowl along with the Lime Juice, Salt, and Cilantro
  4. Finish the Chicken by searing in a hot pan with a little Oil. Cook for 2 minutes on each side until charred
  5. Slice the Chicken and then plate with a generous portion of Mango Salsa. Serve with a side Salad or Rice

Recipe Notes

  • Adding Greek Yoghurt to the Chicken marinade is optional. If doing so, we recommend at least a 2 hour marinade. If using the dry rub, you can cook the Chicken after 30 minutes or so
  • The cooking time for the Chicken will be dependent on the portion sizes. We recommend checking the internal temperature with a meat thermometer
