This is a delightful dip that falls somewhere between a creamy Labneh and a classic Bruschetta. The Feta and Yoghurt Dip is a creamy, silky-smooth consistency that is blitzed along with Lemon and Garlic and packs a serious punch of flavor. Rustically chopped Tomatoes are topped over the Yoghurt and Feta and finished with a generous drizzle of Balsamic. Topping this wonderful dish is fresh Basil which ties the whole thing together perfectly

This is our take on a recipe published by Ambitious Kitchen. We made a few tweaks to their recipe and added our own twist to it. Typically, this means we load up the dish with a heap of Garlic and Lemon, and this recipe is no exception! The result is a wonderfully vibrant dish that pairs perfectly with a few pieces of thick-cut, crusty Sourdough Toast

How to make Feta and Yoghurt Dip with Tomatoes and Basil

For the best result when making this recipe we recommend using a food processor. While not mandatory, it will help achieve the smoothest texture for the Dip, and allow the flavors to evenly distribute

It’s a dish that does not require any cooking, which makes it perfect to enjoy as a light meal over those hot Summer months. The first step is to combine the Feta Cheese, Greek Yoghurt, Lemon Juice, Lemon Zest, Garlic, and Salt in the Food processor

Blitz it until smooth with a nice, thick consistency. If the sauce is too runny or thin you can simply add some more Feta Cheese in there. If it’s too thick, a bit more Yoghurt will help smooth it out. I’d recommend against using Lemon Juice as the ingredient to alter consistency, as too much will completely overpower the Dip. Aim for about a 2:1 ratio of Feta to Yoghurt for the best consistency

Once you’ve got the Dip the way you want it you can set it aside in the refrigerator until you’re ready to serve. It’ll stick around for a few days in the fridge too, so simply seal it up and you can use it later on. Or, just chip away at eating it whenever you get a little hungry!

Create a simple Tomato topping for the Dip

Adding Tomatoes to the Feta and Yoghurt is a classic pairing. It adds a beautiful flavor to the dish along with a robustness that helps transform this dish from a simple Dip to something that’s more along the lines of a complete meal in itself

You can use any Tomatoes you like but just make sure they’re ripe. Remove the seeds and then dice the Tomatoes. You can dice them finely, because the goal here is for the Tomatoes to sit nicely atop a beautiful piece of Bread without all falling off

Along with the Tomatoes, mix in some finely diced Red Onions (not too much), Lemon Juice, Salt, and finely diced Garlic for a little kick. I like to prepare the Tomatoes in advance and let it sit at room temperature for about 20 minutes before serving. This helps the flavors to develop further, and it really does make a difference to the flavor

Serving

There’s no right or wrong way to serve this delicious Feta and Yoghurt Dip. You can serve the Yoghurt Dip in one bowl and the Tomatoes in another, allowing people to grab what they want from each bowl. For a fancier presentation try adding a few spoonful’s of the Feta and Yoghurt Dip to the bottom of a bowl then top with the Tomato Mixture

However you serve the dish, you will want to ensure that the Tomato mixture is finished with the appropriate toppings. In a very classic Bruschetta style serving, we drizzle over some good quality Balsamic Vinegar and fresh Basil Leaves. I recommend using Balsamic Glaze if you have it. The richness of the Glaze adds a wonderful sense of indulgence to the dish

This dish is best enjoyed with some fresh, Crusty Bread

It should perhaps go without saying that the best way to enjoy a dip of this quality is with some equally good quality Bread. I love to use Sourdough Bread and lightly toast in straight in the frying pan. This will give the Bread a ridiculously crispy and crunchy texture, but still wonderful and fluffy in the middle

For the ultimate in flavor, try drizzling the sliced side of the Bread with a generous amount of Olive Oil. Then, toast it straight onto the frying pan to allow that Olive Oil to char and caramelize the Bread. The flavor is outstanding, and pairs so well with the Feta and Yoghurt Dip

Cut the Sourdough bread into large pieces for individual servings and then top with a generous amount of the Yoghurt and Feta Dip with Tomatoes and Basil. Top the whole thing off with some Flaky Salt and even a little bit more Olive Oil and enjoy!

Feta and Yoghurt Dip with Tomatoes and Basil Recipe

Ingredients

  • 6 tbsp. Feta Cheese
  • 3 tbsp. Greek Yoghurt
  • Juice of 1 Lemon
  • Zest of ½ a Lemon
  • 1 Garlic Clove, peeled
  • 1 Garlic Clove, finely diced
  • 4 Tomatoes, seeds remove and diced
  • ¼ Red Onion, finely diced
  • 1 tbsp. Balsamic Vinegar / Balsamic Glaze
  • Fresh Basil Leaves
  • Salt and Pepper

Instructions

  1. Combine the Tomatoes in a bowl with the Diced Onion, Diced Garlic, ½ of the Lemon Juice and a pinch of Salt. Mix well then set aside at room temperature
  2. Place the Feta Cheese, Greek Yoghurt, Lemon Zest, Whole Garlic Cloves, ½ tsp of Salt, ½ tsp. of Pepper and the remaining Lemon Juice in the food processor and blitz until smooth
  3. Plate a few spoonsful of the Feta and Yoghurt mixture into a bowl and top with the Tomato mixture
  4. Finish with a drizzle of Balsamic Vinegar or Balsamic Glaze, and some fresh Basil Leaves and serve with some Crusty Bread

Recipe Notes

  • You can adjust the consistency of the Dip by adding more Feta or Yoghurt
  • You can toast some bread with a bit of Olive Oil for a wonderful flavor and crispy texture which pairs perfectly with this dish

This wonderful Feta and Yoghurt Dip is so simple to make, yet the flavors that you’re able to develop are so complex and tasty. Topping the dip with a classic combination of Tomatoes and Basil (along with a generous amount of good quality Balsamic Vinegar) brings the whole dish together in a perfect harmony of flavor and texture
