Just combine all the ingredients into a saucepan, bring to a simmer, cover, and let sit for 15 minutes. This process of letting the sauce sit without heat is called \u2018steeping\u2019 and allows the sauce to absorb all the flavors and aromatics that are included in the dish. After 15 minutes strain all the aromatics from the pan and you are left with a beautiful, concentrated flavor<br><br><\/p>\n\n\n\n<p style=\"font-size:15px\">Like a lot of Asian sauces there are quite a few ingredients that go into the sauce. Don\u2019t let some of the less common ingredients in the recipe intimidate you, however. Preparing the Garlic and Ginger is really easy too. Simply slice the Ginger and peel the Garlic and throw it into the sauce<br><br><\/p>\n\n\n\n<p style=\"font-size:15px\">&nbsp;The steeping process will see these beautiful flavors and aromas infuse into the sauce. Once you strain the sauce the Ginger and Garlic are discarded, however their flavor and aromas remain in the beautiful sauce<br><br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Prepare the Noodles beforehand so they are ready to go as you\u2019re making the stir fry<\/h2>\n\n\n\n<p style=\"font-size:15px\">You can make this stir fry with Noodles or Rice, totally up to you and your preferences. For both, it is recommended to prepare them in advance of starting to cook the stir fry. Stir Fries are a high heat \/ quick cook dish. So, you want to ensure that any Noodles that require pre-cooking are done so in advance<br><br><\/p>\n\n\n\n<p style=\"font-size:15px\">For this recipe we used Singapore Noodles which are already cooked, however require a couple of minutes in boiling water to help re-hydrate them and bring back their optimal texture. To save on stovetop space we recommend making the Noodles in advance and setting them aside, as you\u2019ll need two pots on the stovetop to make the dish. One for the Stir Fry, the other for the sauce<br><br><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Try our caramelization trick for the Ground Pork for great flavor and texture<\/h2>\n\n\n\n<p style=\"font-size:15px\">Ground meat can sometimes be a little dull can\u2019t it? We\u2019ve developed a little trick to make your Ground Pork Noodle Stir Fry develop some unbelievable texture and flavor while cooking. The key is to let the Ground Pork caramelize, almost burn, on the hot pan before stirring it<br><br><\/p>\n\n\n\n<p style=\"font-size:15px\">It\u2019s a trick that the Spanish folk do when preparing Paella. By placing the Ground Pork directly exposed to the Pan will immediately start to cook that exposed section quicker. Leaving it for about 5 minutes will turn it a beautiful golden-brown color. The remainder of the pork not directly exposed will need to be stirred through to cook. However, that exposed section will be done<br><br><\/p>\n\n\n\n<p style=\"font-size:15px\">By using this technique, you are left with a richer flavored Pork as it has caramelized in the pan. Some bits will be almost crunchy in texture too, which adds a great variety of texture to the dish. It adds a lovely texture to the dish as well as a slightly bitter flavor. We haven\u2019t included Cabbage in the below recipe, however if you want to add it by all means do so!<br><br><\/p>\n\n\n\n<p style=\"font-size:15px\">If you are using Cabbage in the stir fry, we recommend slicing it into thin strips and adding it the same time as the Celery. The trick with Cabbage is to not overcook it because overcooked Cabbage becomes overwhelmingly bitter. It can really overpower the entire dish. Cook it for a few minutes at most on a high temperature to get the best flavor. The Cabbage will remain crunchy as it is only just barely cooked. Ground Pork<\/li>\n\n\n\n<li style=\"font-size:15px\">200g \/ 7 oz. Freshly cooked Noodles (eg: Singapore Noodles \/ Udon Noodles)<\/li>\n\n\n\n<li style=\"font-size:15px\">3 \u00bd tbsp. Soy Sauce<\/li>\n\n\n\n<li style=\"font-size:15px\">2 tbsp. Chinese Black Vinegar<\/li>\n\n\n\n<li style=\"font-size:15px\">1 tsp. Mirin<\/li>\n\n\n\n<li style=\"font-size:15px\">1 tsp. Oyster Sauce<\/li>\n\n\n\n<li style=\"font-size:15px\">2 tsp. Water<\/li>\n\n\n\n<li style=\"font-size:15px\">\u00bd tsp. Szechuan Peppercorns<\/li>\n\n\n\n<li style=\"font-size:15px\">\u00bd tsp. White Sugar<\/li>\n\n\n\n<li style=\"font-size:15px\">\u00bd tsp. Fennel Seeds<\/li>\n\n\n\n<li style=\"font-size:15px\">2 slices of fresh Ginger<\/li>\n\n\n\n<li style=\"font-size:15px\">2 Garlic Cloves, peeled and smashed<\/li>\n\n\n\n<li style=\"font-size:15px\">\u00bd Red Onion, finely diced<\/li>\n\n\n\n<li style=\"font-size:15px\">2 Celery Storks, finely diced<\/li>\n\n\n\n<li style=\"font-size:15px\">1 cup White Mushrooms, sliced<\/li>\n\n\n\n<li style=\"font-size:15px\">\u00bd cup Scallions, finely chopped<\/li>\n\n\n\n<li style=\"font-size:15px\">\u00bc cup Peanuts, chopped<\/li>\n\n\n\n<li style=\"font-size:15px\">\u00bd cup Cilantro, roughly chopped<\/li>\n\n\n\n<li style=\"font-size:15px\">1 tsp. neutral frying Oil<\/li>\n\n\n\n<li style=\"font-size:15px\">1 tsp. Chili Crisp in Oil<br><br><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Instructions<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li style=\"font-size:15px\">Combine the Soy Sauce, Chinese Black Vinegar, Mirin, Oyster Sauce, Szechuan Peppercorns, Water, White Sugar, Fennel Seeds, Garlic, and Ginger in a medium saucepan. Bring the mixture to a simmer, then cover and turn off the heat. Let steep for 15 minutes<\/li>\n\n\n\n<li style=\"font-size:15px\">After 15 minutes, strain the liquid to remove the aromatics and retain only the liquid<\/li>\n\n\n\n<li style=\"font-size:15px\">While the sauce is steeping, heat a large frying pan or wok over medium high heat. Add the Neutral Frying Oil then once hot, add Onions and Mushrooms. Saut\u00e9 for 5 minutes until tender and the Mushroom liquid has evaporated<\/li>\n\n\n\n<li style=\"font-size:15px\">Push the vegetables to the side of the frying pan and place the Ground Pork in the middle. Leave it exposed to the frying pan for 5 minutes without stirring or breaking the pork apart to caramelize and form a crust<\/li>\n\n\n\n<li style=\"font-size:15px\">After 5 minutes add Celery then mix everything together. Cook for a further 3-4 minutes until the Pork is fully cooked through and no longer pink<\/li>\n\n\n\n<li style=\"font-size:15px\">Add about \u00bd the Sauce to the pan and stir well to incorporate. Check for taste and if desired, add more sauce. The sauce is strong, so we recommend adding little by little until you\u2019re happy with the flavor<\/li>\n\n\n\n<li style=\"font-size:15px\">Add the Cooked Noodles and Scallions. Mix through to incorporate evenly into the stir fry then remove from heat.
